Your body will thank you. Raised vegan, sometimes saw my parents “lapse” into vegetarianism, went to mostly vegetarian as an adult but rebelled by trying inconsequential quantities of meat. I had a myriad of mystery health problems that I couldn’t understand and neither could my doctors; I’m early 30’s. It was a horrible journey, but I feel like a new person on carnivore/zero carb and I’m only three months into it. Also everything is starting to make sense which is glorious.
I’ll be honest with you, changes in weight or muscles are not as visually dramatic for me initially. If your experience is like mine, your body will spend a lot of time nourishing deprived joints, bones and muscles in the beginning, but you’ll feel more energy and stronger. You are right. Agriculture based on grass fed ruminants is by far the most sustainable and environmentally benign. I’d highly recommend Defending Beef: The Case for Sustainable Meat Production by Nicolette Hahn Niman. It covers the subject thoroughly, is well written and enjoyable to read.
Sounds like burning mouth syndrome. Unfortunately it's not a very well understood syndrome and has been attributed to a huge variety of causes from B vitamin deficiency (unlikely on zc) to diabetes to anxiety to a fungal infection in the mouth. A trip to the doctor is probably in order so that they can help you narrow down what might be causing the issue and you can work on taking care of it.

I would recommend that you stop supplementing with vitamin D. Many supplements go way over the daily value you should be getting, anyway. If your levels of vitamin D get too high, then you can absorb too much calcium and end up with kidney stones. Ouchie!
I've had lots of digestive issues over the years. Switching to the keto diet really helped my diabetes and my digestive issues. I've been diagnosed with ulcerative colitis, leaky gut syndrome and some kind of enzyme deficiency. Anyway, changing to the ZC diet didn't improve or worsen my issues at all. I might get some criticism for this, but perhaps supplemental vitamin c would help.
I understand that it is not necessary to supplement vitamin c on a carnivorous diet, but, as vitamin c exhibits anti-histamine effects it could have a beneficial impact on your symptoms.
As your glucose load will be considerably low on a carnivore diet, it could have an even greater anti-histamine impact as the vitamin c will be highly bioavailable.
I would recommend a 100% Sodium Ascorbate powder, and not a capsule (unless the capsule was just gelatine and magnesium stearate). Don't go for any "time release" acerola cherry vitamin c - that isn't appropriate for a carnivore diet. Nutribiotic is a good brand (UK Amazon Link).

Take a stick of salted grass fed butter and roll it in some sea salt and have that for a snack.
You can also buy animal trimming (be sure it's body cavity fat so there's no gristle) and deep fry it in some other fat and have a nice plate of greaves -- I like to crack an egg on top of it.
I also like to take pork cracklings (pork rinds with the fat still attached) and pour melted butter and salt on them to create a carnivore popcorn.
Also, a lot of cuts of meat can be fatty, but they are trimmed before being sold. If you find a real butcher, they can often give you the meat with all the fat attached.

You simply marinade your meat for 2 days and let your strips dehydrate on this think for serveral hours. Back inthe day jerky was made dehydrating meat with some spices and the sun. The dehydrater is a fan with a heating element which will only heat up to specific temperatures.

I admire your minimalism, I might try cooking with only a cast iron skillet myself. Originally I bought the sous vide immersion circulator because as a vegan most of my food wasn't as temperature-critical safety-wise and I was worried about messing up cooking meat, so sous vide allows removing the apprehension by precision computer control.
Do you find it easy to learn how to detect doneness when cooking steaks etc in your skillet? Or roasts on the skillet in an oven? Speaking for myself I've cooked bacon and hamburgers no trouble, albeit the hamburgers perhaps too well-done. Roasts seem more finicky though steaks I am more confident about.

I agree and, although I read the entire book nine years ago when I first did ZC for seven months, at that time I was not tracking my macros and it was frowned upon to do so in the ZC community I was in.
I now believe that that was a big mistake.
Let's say you are a "ribeye and water only" ZC fundamentalist. The USDA database shows fat as 49.7% of total energy consumed (choice, grilled). The NCCDB database, which tends to be more detailed, shows 54.4% of calories for fat.
Stefansson preferred about 80% of energy from fat. PaleoMedicina in Hungary prefers about a 2:1 fat:protein ratio in grams. Using a crude 9 kilocalories/gram for fat and 4 for protein that yields 81.8% of energy from fat.
Let me state explicitly that we all know that there is massive variation among individual people. But, in general, it is possible that eating only fatty meat and water might be a suboptimal ZC protocol that would require adding additional fat.
When I did ZC nine years ago, this was frowned upon. Maybe this was because most participants had weight loss as their primary goal. Perhaps in the weight loss stage a higher protein ratio is fine as we metabolize the body's fat store. But once a healthier weight is approached, dietary fat should be increased relative to dietary protein.
When I started ZC just over two weeks ago at first I did just meat and water. I immediately got watery diarrhea. I knew that this was unsustainable so I added fat to get back to the 80% ratio that I was accustomed to from keto. The diarrhea has lessened but I still have it and I am getting real tired of it. But I definitely felt a noticeable improvement once I increased my fat consumption.
Of course many will get diarrhea from too much fat, so, of course, one has to titrate to find the correct balance.

4lbs of beef would be 4600 calories plus anything you might cook it in, butter or lard or whatever, say 5000 calories at an estimate. Bodybuilders rarely eat that many calories when they're trying to gain weight. Eating 5000 calories a day and gaining weight hardly seem coincidental to me, that's what happens on every diet when you eat double your daily caloric requirements. Everyone has looked for the magic bullet diet where they don't gain weight no matter how much they ate but reality is rarely so kind.
I find they usually fill me up way too much. I'm not very overweight, but I still have some body fat to spare so I don't eat as much.

If you want to make sure, log your food into something like cronometer.com to see your intake.

I'm upset that the word holistic got coopted to mean woo-woo non-scientific nonsense. The idea that you should address the person's health as an overall thing rather than treating disparate symptoms should be obvious. Yet, here we are and holistic medicine practitioner is a shorthand for "person with a questionable degree."
While I haven't read this book yet, there are a lot of people in the holistic / naturopath / whatever world who really could serve to hear the message of carnivore over veganism or whatever, and I bet those people wouldn't think to pick up a book with large angry letters and the author as a lion on the cover.

I just got mine tonight, the Yedi brand larger one off Amazon. I know nothing about it other than my mom recommended that model. Got it out of the box, washed the trays, put in six chicken legs for 30 minutes at 360 degrees (that temp is in the book with a time for less chicken than I was cooking so I gave it more time) and had the best fried chicken I’ve had in years. I did nothing to the chicken, no salt or anything, turned it over at 20 minutes, and it was crispy, juicy, heavenly.

I used to put lemon or lime in along with it but I just got used to the taste and I don't need anything other than the powder. It significantly improved my sleep and my restless leg and night leg cramps. We just don't get enough of those electrolytes from our food due to all the soil damage from our horrible farming practices.
I also salt my food very liberally and sometimes put salt in drinks during the day.
Why not whole cod livers?
I get the cod liver in own oil, it's great. Have a tin a week. Really good with some egg yolks and salt. Tabasco if you're feeling frisky.
What time are you going to sleep? You say you avoid screens for an hour before bed, but how about other sources of light/blue light? I put on a pair of blu blockers at sunset and have also set my iPhone to naturally turn into the warm/bedtime mode according to sunset and sunrise.
Your room should be cool (<70 degrees) and PITCH BLACK. Cover little lights from a TV or computer and get blackout curtains.
I recently read this book and it blew my mind. You can just skip to the last chapter if you want his prescription. But the whole book is well worth a read.

Are you drinking a lot when you take the magnesium? I’ve had good luck with this one from amazon I take it before bedtime with at least 8 oz of water and generally within 12 hours it works.

Look into sinus rinse salts, such as those sold by Neilmed. Use this bottle not the weird "teapot one."
When you're going to use it, make sure it is approximately body temperature first (immerse the fully prepared bottle in a larger glass that has hot water in it). You can use distilled water or just bottled water works fine for me. Really spray it in both nostrils with good force and tilt your head around afterward to drain everything. It's a really cheap natural way to keep your sinuses clear and feeling good. It's literally just salts so you can barely call it "medicine" and it's definitely not a drug. Good luck.
Buy some electrolyte salt pills on amazon and begin your day by pounding a glass of water with one.
Also, you might try Morton's Lite Salt which has a ton of potassium as well as sodium.
My theory is that you were getting sodium but less potassium from the non-pink salt, so you caused an electrolyte imbalance.

I have Hydrolite that I take on occasion. Last night was the first time since starting this that I had restless legs, which I know comes from a lack of salt and/or electrolytes. (that day I had drank more water and put less salt on my food, so I think I flushed my system by accident) I took a shot of this and I was good to go.
I have used products by Roebic that digest fats, paper or soap with some success. They have products for septic systems. It took 15 years in my house before I discovered I should pay attention to the plumbing.

Grab a copy of Raw Meaty Bones Promote Health. You can get one cheap by looking at the available used copies at amazon--just bought one for friends of mine who are considering getting a dog. The book was authored by a veterinarian who changed his approach to pet care based upon years of clinical observations of common dog/cat health problems. Some people make their own liver pills by cutting liver into small pieces, freezing them, then putting the frozen pieces into gel caps. Sounds legit to me, but I am curious about the sugar/carb content of the gel caps themselves. However, I am sure making them yourself more than likely will yield much better nutrients than a commercial bottle of the stuff.

I second this while adding buy a set of calipers and teach a spouse or loved one how to do 5 or 9 point test, very easy. Don’t need to do every day, but it measures your actual body fat. More points are more reliable.

For $80 it’s a great starter kit, and I have been happy with it. Check eBay for the ketone and blood sugar strips as I found some that were cheaper. Ketone strips are generally more expensive than blood sugar strips. I test both.
As long as you have no discomfort you should be fine. I also used this for the first 3 months when I started to help improve my stomach acid. This worked wonders and I had no issues with loose stool or constipation.
I pretty much exclusively grill these days. I bought a cheap little Coleman RoadTrip LXE grill and it gets super duper hot. I make thin, small patties, about 3" across and 1/4" thick, and cook on high for about 3 minutes a side.
If I have to cook inside, yep, just blast on high in a cast iron skillet. I will cook one side until the top is starting to weep and turn grey, then flip and hopefully the first side is well browned and fried looking. The second side doesn't take as long usually, but if either side isn't dark brown I'll just keep going, flipping until they are well shrunken and have a crispy outer.
