Sins of a Solar Empire: Rebellion does contain the previous games (Sins, Entrenchment, Diplomacy).
From the FAQ: >"Sins of a Solar Empire: Rebellion is the upcoming standalone expansion to the franchise. It will contain all of the previous content and much more."
From a Stardock employee on the forums: > "Just to be clear, all of the content of the prior releases is there, but Rebellion does not offer the separate executables for each that allow for play with others who only have those versions. You'll only be able to play with others who have Rebellion. If you want to be able to play with people who don't have Rebellion, you'd still need to own Trinity (from anywhere, though, not only from Steam)."
I'm playing Sins of a Solar Empire with the Star Trek Mod. I don't know if that is exactly what you are looking for, but I think that it's enjoyable.
There's also a special discount on the main website where if you own Trinity, you get $10 off Rebellion. If you were looking into picking that up as well, you essentially get Trinity for free with this discount.
Besides HW2 (which has/had a number of good mods, like point defense systems), your best bet might be Sins of a Solar Empire. It's larger in scope with more emphasis on economy/trading/empire-building, but a worthy successor as far as large quantities of spaceships pew-pewing each other.
Looks like the items from the collector's edition are still available, but with a caveat:

It was sold off their website when they had a collector's edition. You could pick and choose what you wanted. I just bought the Kol by itself.
Edit: This collectors edition was late in the game, perhaps along with the final expansion.
Fret not! If you go to the main website and order there, you can get a $10 discount for owning Trinity. Since Trinity is $10 today, you essentially get it for free.
If I recall correctly, these games, while having the ability to cater to high-end PCs, they also scaled fairly well.
I have been playing Sins of a Solar Empire with my buddies lately. It's a blast! It you like Sci-Fi RTS games you can't go wrong. It might not be the most Drunk-Friendly game out there as games tend to last forever!

I've gotten it to run perfectly in bootcamp and Wine on my '08 Macbook, so you don't have to have a great laptop to run this and it still has gorgeous graphics. Immensely epic.

I'd also recommend that if you are going to buy/pirate it... to at least get the first expansion, Entrenchment, as it adds a lot of new ships/upgrades/etc. The second expansion, Diplomacy, only really adds that... diplomacy stuff... since I've always been a fighter and not a lover, it doesn't add anything for me.
EDIT: Some gameplay... link around to other videos, you'll be amazing at how immense the game really is... and yet the UI is so good that you can control everything
I was about to recommend Sins of a Solar Empire, but unfortunately, it seems it's not possible to run it on OSX.
If you're willing to run it on Windows/Linux through Wine, however, I'd highly recommend it.
Rebellion. Its the newest version of the game and includes everything that trinity does and more. Trinity was just a package of the original game with the first 2 expansion.
Just as a reminder those who already own Sins of a Solar Empire can get a $10 discount by logging in and purchasing from the official site with whatever email used for registration. I'm assuming that a key will be given to redeem the game on Steam since Steam is required for gameplay.
If you're still interested in this game, I would highly suggest pre-ordering Rebellion instead of getting Trinity, as it will have all of the features of Trinity, and some awesome new stuff on top of that. If you do get/have Trinity (or Diplomacy) you'll get a $10 discount on Rebellion.

This all sounds awesome. Though, pre-order price is $30. I'm pretty hesitant on that price for an expansion, when we don't have any actual details yet. :\
