I'm not sure what the OP used but some phones have this feature built in. On Android phones that do not have it built in I've had good luck with this app in the past.
The stock emui camera time-lapse is pretty sub-par, I get much better results using https://play.google.com/store/apps/details?id=com.neximolabs.droidtimelapsepro - def worth the few bucks imho.
You can lock the white balance & exposure, which will prevent the bumps in brightness seen in your example. Also able to adjust resolution, fps, capture interval etc.

Very nice app. Plug your phone in to the charger, load the app, set it up, test it, then let it go and you are good to go. Watch the clouds moving. Watch your fidgeting while sleeping, watch a boiling pot of water... what ever it is your plans are it will do great.
