Apple and Android use different wiring standards and iPhone headphones can't adjust the volume on Android phones.
The V-Moda BoomPro is pretty neat if you just want a microphone. Headset Button Controller may also be useful.
This was happening to me driving me nuts!!! I tried disabling VoiceMate, and a lot of other crap. The only thing that has worked is installing Headset Button Controller and setting everything to "disabled"
This is fine for me because I don't use any headphone controls. If you do this won't be a good solution. You can download the trial version first to see if it fixes the pause/skip tracks issue.
I picked up an unbranded wired pair at a local mall. I personally like sound isolating earbuds, even though they could be more dangerous in traffic. They have a button for play/pause/next track, and an in-line volume slider. It's an analogue slider which means it doesn't need to interface with the android os. Many wired headphones with volume buttons won't work because they're designed for iPhone.

I use Xiaomi Piston earphones. However I use it along with Headset Button Controller (https://play.google.com/store/apps/details?id=com.kober.headsetbutton&hl=en).
I use mid button to single tap play/pause, double tap for next track and tripe click for previous track. Also up and down buttons I use for volume control. But the beauty of the app is that it will allow you to reconfigure what you each button to do
I just got a G3 and had this exact issue with it. It's apparently a common hardware manufacturing problem where the headphone jack's contacts can be so tight against the edge of a headphone plug that your phone receives false signals from what it thinks are headset control buttons/microphone that are sometimes included with a pair of headphones.
The fix that worked for me was turning off access to the headset controls. If you run a custom ROM like Cyanogen there are built in settings to disable headset controls in the buttons/audio settings. If you're stuck on the stock ROM, you can purchase Headset Button Controller on the play store and use that to disable them. Doesn't hurt to try freezing the LG voiceover crapware with an app like Titanium Backup as well, but you need root for that one.

I installed Headset Button Controller, which has a setting for "long press." By default, it's set to "disabled" (which didn't suppress the message). I changed it to several other settings, none of which worked either.
Ah, okay. Basically, they use the iPhone protocol for three button remotes, which switches the ground and mic channels.

I'm sure you could do with tasker. There's also an xposed mod that works very well. I used to use this app I don't know if its been updated recently or not
I'm pretty knowledgeable Tasker wise but for me this is a very difficult to fix issue.
If your Android system is hard-wired to open Google Now when it receives a certain input from the remote, then Tasker can't do much about that. You could do an awfully disgusting task that would press the back button or something to "cancel" the Google Now prompt but I wouldn't recommend it.

I use my Nexus 4 as an MP3 player at the gym. It's mostly on airplane mode, except for when I'm downloading offline playlists from Spotify. The only apps I've got installed are Spotify and Headset Button Controller. SoundCoud doesn't allow offline play, and GrooveShark is gone. Battery lasts for about three workouts, as I turn it off after I'm done. I wish I could uninstall all the Google apps I don't use.
I'm quite confident that one day I'll crack the screen with a dumbbell.

I installed Headset Button Controller, which has settings for all manner of button press patterns. However, "disabled" or some other configuration for "long press" had no effect. The phone still screamed in my ears about how to turn on the goddamned thing I had intentionally turned off.
