What's wrong with Mail for Wear OS?
https://play.google.com/store/apps/details?id=com.appfour.wearmail
I can see my emails, reply (if I really need to during a meeting or something), delete, star, etc.
Note: Gmail is my go to email. I have two addresses synced to the Wear app, and get messages from both reliably.
I highly doubt you will be able to hide your smart watch (even Ticwatch) but assuming you can any wear os watch will do since nearly all of them has wifi. You just need to make sure you set the right mail app that works fully on the phone.
If I remember correctly the appsuite made by "appfour" (https://play.google.com/store/apps/details?id=com.appfour.wearmail&hl=en_US) contained standalone browser, mail app etc that would all work when watch is connected to wifi.
If you wanted to do this without the persistent notification, you could download this free email app, set the inbox fetch frequency for 5 minutes, and set up an IFTTT to automatically send an email to a throwaway account, which you will log in to on the watch, every 5 minutes.
It sounds complicated but it should work pretty seamlessly once you get it running, and should only take like 10 minutes to set up
There is an app called Mail for Android Wear & Gmail I bought it, but to tell the truth not really using it. The notifications are sufficient, if I want something more it's easier to take out my phone.
If I need to initiate a gmail conversation, I can do it from the contact cloud of my bubble clouds...
The Gmail app will not be in the app list. It's only function in wear is a card will pop up when you receive a new email and allows you to dismiss or reply (using voice). More info here. I had a quick look and found this app that allows you to view your inbox. I have never used the app so I am not sure how well it works.
Hope that helps
Maybe try this app as a workaround

WearOS never had a Gmail client EVER, so it's not just a lack of support on the PW. This is the first time google included google home here too. Gmail could just be an app in development or a future feature drop
I'm using this one Mail client for Wear OS watches on my TWP3, and it works pretty well for my needs.
It lets me view my gmail inbox and read full emails (no images unfortunately) and I'm pretty sure it can compose and send mail, but I haven't tried that.
I did initially need to use "Wear Installer" to get the watch app to install, but later after I reset my watch I was able to install it from the "apps on your phone" section in the watch play store.
I've never tried this app but it might do what you need.

Would this app give you stand alone email access?

Just use appfour's Gmail app for Wear. It has more actions (reply, reply all, forward, archive, star...) and you can check "mark mails as read when opened" in the settings of the companion app. So obviously it is possible to implement this feature. https://play.google.com/store/apps/details?id=com.appfour.wearmail
"Wear mail client for Gmail" was also just released. It has a lot more functionality than Gmail for example. https://play.google.com/store/apps/details?id=com.appfour.wearmail
