I like Pathos myself. There are also the ten billion Pixel Dungeons to consider too.

I like Pathos: Nethack Codex though it's only compatible with my phone and not my bigger-screened tablet. The interface is all touch-based, either by tapping or holding. There are a number of icons at the bottom of the screen, such as toggling the events history or opening your inventory or opening a small window that describes what items/objects you're standing on. Several races and classes, though you can do a quick-start with any class with the name, gender, race, and pet already set.
There's a second mode where you challenge a handcrafted map with the same combat and exploration system too.
Pathos Nethack Codex is a pretty touch-focused RL that even has a handbuilt campaign if you don't feel like doing the random dungeon.

Its based upon nethack, more simple but still pretty complex. 3 different tilesets, 2 game Modes (nethack-styled and openworld which I havent tried yet). Very well designed interface for mobile devices. Also no ads!!
The only downside I can think of is that the moving animation of characters can cause lag, however my phone isnt very gold so maybe you wohnt encounter any problems.
I'm not sure but I played Pathos: Nethack Codex a bit and think it might suit your needs.

Pathos kept popping up on the playstore for me but i kept ignoring it because nethack was like dwarf fortress(complicated and tidious) in my head. Gave it a shot last week and i am honestly blown away with what this game has to offer and how well they applied touch screen mechanics. Pathos is a rogue-like game that takes inspiration from the old hack/nethack universe. Gameplay is fun and refreshing and the fact that the game is %100 free, ad-free, IAP-free and open sourced makes it even better. You will find yourself reading unidentified scrolls hoping for something magical to happen while trapped in a corner with dragons from that trap you just stepped on a second ago try to burn you. The game also has a unique take on the hunger system with different races being able to eat certain items (Changelings are vegetarians, giants can eat glass or sand, cannibalism is frowned upon and will reduce your karma, but orcs can eat all flesh without consequences.)
I know this quickly became a wall of text but it probably is so because of all that this game has to offer! Give it a shot if you haven't already :)

From what I can tell, it's the best classical roguelike experience built without a requirement to memorize the keyboard commands, it's all menu driven.
I'd love to see something similar for Angband, DCSS, and more!

I think recommendation-wise you might need to mention more what you're interested in in terms of gameplay and theme to get good responses, otherwise people often just list what they themselves enjoy, which doesn't really help because all roguelikes have fans, and anything from the sidebar is going to be pretty good.
Since you're focused on input: For low keyboard requirements (but still using the keyboard) I would recommend The Ground Gives Way. Or if you want to use a mouse a lot, Cogmind and I believe Brogue have good support for that.

Traditional roguelikes are generally not very mobile friendly since they're usually ports that still require a bunch of keyboard use, which is clearly bad on mobile and you might as well play on PC :P. A good exception to that rule would be Pathos, essentially NetHack being rebuilt from the ground up for mobile devices, so if you're into NetHack-style play you can try that. It's pretty smooth to operate compared to most TRLs on a phone.
Pathos is a modernized version of Nethack for mobile phones. There is no real story elements other than get to the bottom of the dungeon, get the thing, and get back out.
There are three graphical options available depending on your aesthetic preferences.

Pathos: Nethack Codex is entirely touch-based. I could've sworn the many Pixel Dungeon games were touch-based too without dpads, but it's been a long while since I played any of them.
Pathos is my go-to roguelike, though I've not gotten too far in it yet. I like it for the simplistic control scheme, even if it's not really fancy with animations for enemies or anything.
You didn't ask this question but thought you might be interested... Pathos is the essence of Nethack and you might find it a lot easier to play on your tablet. Google Play

Uh, I dipped my toe into Pathos Nethack Codex the other day. It seems to be a traditional rougelike with the different classes and grid movement and all. I admit that I barely played any of it, but it's there.
The Enchanted Cave is another one I touched on, but there didn't seem to be classes. I didn't really know what I was doing (find the wings on floor 4 to teleport back? Uh...) but that's another quasi-suggestion I can make.
I kinda like the genre too but it's weird not really having any games to suggest.
Why didn't you even mention the android version? Am I missing something? Is it not an official android version? Did you drop support for android? That'd make me sad because your game is one of the best mobile roguelikes I've tried. The UI is THE best, it's basically perfect. I thought complex roguelikes were impossible on mobile due to interface limitations before I tried your game.

Well, Pathos is basically a 'clone' of NetHack with an interface and control scheme made from the ground up specifically for mobile. DCSS has both an online-only webtiles version and an offline ascii version. Ananias isn't exactly 'deep' but it's less shallow than Pixel Dungeon. POWDER is on about the same level as Pixel Dungeon, but seems to have more kinds of enemies and items, so it feels less repetitive to me (the Android version isn't on the download page for some reason; scroll down in the news page to find it. it says it's a beta, but works perfectly). Other than that, I don't really have much else. Brogue used to have an Android version (for tablets only) but I can't find it any more (EDIT: Managed to find the APK on my other computer, here you go). I've heard its browser version works fine in Android's Chrome browser, though (and probably others, ymmv); you can use either the London server or the New York one, whichever one is closer...
You could also get a good Android port of DosBox and play some of the old MS-DOS ASCII roguelikes like ToME2 and earlier versions of NetHack and Angband (in fact, ADOM still maintains a current* MS-DOS version). Fighting with a virtual keyboard might get annoying though. If going that route, I recommend Magic DosBox since it can create custom virtual buttons that act like the needed keys but can be individually moved around to whatever place feels the most comfortable...

You didn't ask for Android, but I find myself sticking with Pathos: Nethack Codex because of the UI. You have a number of buttons along the bottom of the screen, one of which is a toggleable "what am I standing on?" display, and most of the actions are controlled by taps and long taps.
One thing that immediately turned me off of the ports of NetHack and UnNetHack was a similar interface, but with way many more buttons only labeled by letters. I admit that I'm pretty new to the genre so being faced with an old-school set of 'just letters' commands like '^d' was a bit off-putting. But at the same time, that probably works out pretty well for people who already know the keys and all.
