Your videos will be capped at 1080p 60fps, but the ease of throwing together high quality videos that's auto generated is a huge perk that a lot of people don't know about. It will sync your videos to the music (it has a large selection of music preloaded, or you can import your own), put in all the transitions, and scale it to the length you want (instagram post lengths, ending on a good musical beat, or auto generated based off the raw footage you put in).
My biggest wish is that GoPro would update it to output 4k videos, then I would be in heaven.

In terms of trying to edit locally, it's pretty slim pickings but my favorite is the Quik app which is actually built and developed by GoPro so this may be worth looking into for you. It allows for importing and adding your own music, overlaying your text and make your own particular edits.
Apparently, cameras usually don't allow this, but there are apps where you can do that, e.g. this one here. Haven't tested it myself.
Google Photos can create photo/video montage. (free, iOS, Android).

Adobe Premiere Rush is probably the most powerful. It's been a while since I played with it, but I think you can export one video for free. Anything after that, you have to pay for subscription. (kinda free, iOS)
Have you ever tried Quik? It's from the GoPro team and has a nice selection of effects that you can apply. You can trim, split, and adjust the length of your video and change sounds.

Have you used QUIK by GoPro? I have used this and SPLICE quite fairly and they get the work done. Unfortunately splice is only available on iOS though.
You would need to change the output quality in settings of QUIK app to get 1080p60fps result.
Depends on what kind of editing you're looking for. Quik is a video editing app by GoPro. I don't remember if it asked for a lot of permissions but it's designed to edit videos quickly and "in style", in my opinion.
Nice ! Awesome pic ! I have to admit, the S8+(and probably S8 too) takes awesome quality pictures and videos. And the editing software is also great to work with. To edit videos some more, like, most importantly for me, crop slow motion videos.
My entry level recommendations are:
Quik (Android, iOS) There is a desktop version of Quik, but the phone version is actually a little better in my opinion. Two points - 4k footage can cause the app to crash, and the output is capped at 1080p 60fps (which you have to turn on in the settings). The biggest selling point here is that Quik automates 99% of the process. It will pick the transition points, match the video up to the music you pick, and automatically adjust the clips to recommended time lengths (automatic, or good points to end with the music).
iMovie (Mac): you can edit 4k in it and it is free.
HitFilms Express (PC or Mac) - Free, good quality editor.
Adobe Premiere Elements 2019 (PC or Mac) $99.99 - good middle point, it is a step up from iMovie and HitFilms, without breaking the bank.
Start with these to get a feel for editing before you spend a $300+ on some higher end software which requires some time investment to use it properly. Once you start to feel restricted by options listed here, then it is time to start considering upgrading to DaVinci, Vegas, Final Cut, or Premier.

Cool. That's about as best as you're going to find on mobile. GoPro Quik might be able to stitch up to 200 frames together, but that might not be enough for your timelapses. Higher power video production software really needs better hardware to render high quality video properly.
Good luck. Post some of your work. I got a cheap laptop (around $400) for light Web development work, and it handles (slowly for rendering) editing raw photos, exporting to JPEGs, and rendering as a timelapse video quite well. Here's a couple tests I ran: Video 1, Video 2

Try Quick I haven't tried on my p20 but it worked good on my other Android phones.
If you want to quickly edit on your phone try the gopro quick app. It's free, has no ads and also lets you export video without watermarks and in high resolution. I did some good fast results with it. They also have a desktop app but i didn't try it. For advanced editing i would recommend the (also free) Davinci resolve but this may be a bit complicated to begin with. If you stick with making videos it may be worth the effort. It is also used by many people here as the color grading tools it provides are one of the best in the industry. For something more simple try VSDC.
The microphone doesn't need to be too fancy, a budget microphone will do the job still better than you smartphone and good audio is always helpful for the quality of your videos. Maybe one of the audio guys in here can give you a better advice on what to buy.
As for the video itself i would use the manual video mode (if the s7 offers that) and manual focus. This prevents auto changing of white balance and gives you a uniformity of luminance. Maybe this helps a bit, good luck with you channel.

The Android apps are best bet. Since performing a resource intensive task with large files on a web app is not optimal.
