If you don't want to buy a capture card, the TeamViewer Host app lets you cast your android screen to a PC wirelessly. On your PC you can then stream the TeamViewer window.
The TeamViewerer app isn't able to stream the android's sound, however you can easily use a 3.5mm cable to connect your android's headphone output to your computer's mic input and get the sound from that.

The first one I thought of is TeamViewer Host (https://play.google.com/store/apps/details?id=com.teamviewer.host.market - I hope it's ok to include links in response to such question). However, as far as I'm aware it's not as autonomous as desktop version is. Can't say for sure though.
Others not as user friendly solutions are I think remote control based on ADB protocol, there should be a program or two for that, though I can't say if ADB can even theoretically work over mobile network. And the other one would be some kind of a mobile RAT - heard of them awhile ago, those are the programmes scammers and blackmailers use to spy on people, once installed they are fully autonomous, have a full control over the device, can be connected to even from the browser and their presence on the device can be hidden. Although, a great caution needs to be exercised when searching for such program and using them - who knows what kind of backdoors and security holes are there.
I've had success with TeamViewer in the past. Needed to do the same with my grandmothers tablet. They have an Android Host app. I honestly don't use Teamviewer anymore though and haven't had to use this in a while so maybe there are newer options.

Yes and no. QuickSupport (one word) works, but is for devices you don't own. The proper TeamViewer app to install is Host, which allows you to assign each remote device to your existing TeamViewer account (which Quick Support doesn't allow, as it's designed for temporary, on-time-only connections.)
With QuickSupport you have to physically check the remote device 1st to get its login credentials, while with Host you simply have to fire up the desktop client and select your Android device.
QuickSupport and Host have the same supported device list. Some devices like the Shield K1 and some ROMs like LOS support screensharing only, even when rooted.

I just tried it out, on my device it only supports screen sharing, so you can't interact with the phone, but you can display a pointer on the phone's screen.
I know it isn't ideal, but TeamViewer let's you display and control devices remotely, so you could control your computer with your phone, and vise versa.

Since you're already using software like Parsec. What would you think about using TeamViewer? You would just need to set up an account and give everyone access but as long as they're logged in it's just a single button to launch a remote session

What you are looking for is a remote desktop server for Android. These servers use protocols like VNC and RDP.
Googling around, I haven't found any that receive positive remarks. Teamviewer has a host application, and there are some implementations of VNC that require root.
Remember, your phone is the host/server, and your tablet is the client.

Open the Host app and login to your Teamviewer Account (or create one).
You will get an email to confirm that the device is yours. Do that.
Open the Teamviewer app on your primary device from which you would like to control the secondary phone and try get access to the secondary phone (from the section 'My Devices' or something like that). You won't need to confirm the connection on the secondary phone from now on.
You could even uninstall the classic 'TeamViewer remote control' or 'QuckSupport' app on your secondary device since you only need access to it. It's only importat that the Host app is installed and logged in. It also starts by default when you turn on the phone. Also, you can get access to the secondary phone from any other device as soon as you login to your TeamViewer account. So make sure you have a strong password or even 2x authentication.

I've used vyzor remote connecting into laptop thats then connected to network of the shield with adp enabled direct ip .
I've also just used teamviewer and then guided the user though prompts (i can see but not control ) you could prob use a phone and teamviewer into their phone also and use the shield remote app on their phone to control (kinda crazy but would work )
I'm not aware of any modules that can hide ADB. But you might want to take a look at Teamviewer Host as an alternative to ADB based "remote" control apps. Hopefully this works for you!
Teamviewer has a host application for mobile on Android as well. It's on the Play store as Teamviewer Host.
I install that on my Nox instance and then use the Teamviewer client on my phone to connect directly to the emulator with full touchscreen support etc; it's exactly like playing the game on your phone, hardly noticeable in terms of lag on your home network, a bit laggy but usually tolerable over the internet.
