They are definitely worth trying. Try Nova, Apex, or if you don't have a Nexus already, the Google Now Launcher.
Nova is very near stock in it's theme. Many people install it so it's "more stock" than what comes with their phone (assuming it's not a Nexus).
Nova also lets you customize and change the icons. I personally don't like the stock icons (I like them to all be the same size/shape).
Well, what the edge basically does, is give you a little extra menu you can slide in from the side at all times, no matter what app you're using at the moment and the Edge features multiple panels, one is the task panel, it is like a shortcut to a task, for example you can put the "take a selfie" shortcut there and it will automatically open your front camera, another one is the shortcut which directly opens your "create an appointment" dialoge from the S Planner, or another one where you can create a contact immediately, open the numpad immediately and so on, you can customize what you want on there as well. The edge has multiple panels which you switch by swiping along, it also has a calendar view, an app panel (just shortcuts to apps), people edge (your fav. contacts), weather etc. you can also download more from the galaxy app store so it has like a CNN Newsfeed and stuff like that.
my favourite and by far most used is the task panel though, its just extremely convenient if you're cooking or something like that, you can just slide the edge menu out, open and start your timer within seconds, no more searching for the app clock or something like that, for me personally its extremely convenient, other people find it just annoying and deactivate all the edge features as soon as they get their phone, its really down to personal preference.
however the edge wasnt really why i bought it, it's nice to have but not essential, the reason i chose the s7 edge is the enormous 3600mAh battery. If you don't know what these terms mean, it's a really long lasting battery, which has yet to fail me. With WiFi and GPS on the entire time and Brightness on auto I got to 17h 15m of usage with a Screen on time of 6h 24m and had about 30% battery left.

I've been using Vopor icon pack for a while now. I really like the minimalistic yet colorful style of the icons.
Easy one paged theme. Quick access to apps I use every day.

To set the wallpaper, go to Globals and in "bg" you choose the image, the colors will adjust automatically. The events counter in the main page disappears when there are no events in the present day. No idea why the current weather condition stayed in spanish, but it should be in your own language.
Vopor would be great with this wallpaper, it's 99 cents though.
