To get Strava to display current speed instead of average, you need to get (buy) Strava premium. If you don't want to pay for Strava premium, you can use any number of other apps while Strava records in the background. What app you use depends on if you're using an Apple or Android phone.
I've used Wahoo's fitness tracking app and Cateye's app. They don't require any extra registration and can upload to Strava.
I just got my bike and am starting to research this. I don't want to pay for a subscription. It seems like Wahoo Fitness works. I was able to use it to sync both the bike and heart monitor. And it seems to track all information. You can then export it to Google Fit. Although I'm not sure how necessary that is. Wahoo seems to keep track of everything.
I used the Wahoo app on my phone before getting a dedicated bike computer. It's a free app without ads (at least none that I've ever seen). I had my Polar HR monitor and Wahoo speed sensor connected to it and never had any issues. If I couldn't use my computer, I'd absolutely use the app instead.

You can link various sensors through Ant+ compatible devices. The Samsung Galaxy S5 supports Ant+, not sure about the mini. If you're having issues detecting sensors then it might be due to this. You can check here:
The Strava app used to be able to do this as well but they pulled support because it caused app instability.
The Wahoo Fitness app ( https://play.google.com/store/apps/details?id=com.wahoofitness.fitness&hl=en_US ) can connect to ANT+ sensors (your watch acts like a sensor if you set it to broadcast heartrate).
But the app will use the phone's GPS for location and speed data, not the watch's, so it's going to drain battery.
As dogmom2010 said, it's best to get a bike computer or mount your watch on the handlebars.

You can connect Wahoo's cadence sensor to a smart phone, and use it like a bike computer with their app. Other bluetooth capable sensors may work, like Garmin's, but I'm not certain.

The app is free, but it will only record gps, distance, speed, time, and no calorie stats without its chest strap HRM. I use this one, the motion (cadance) part does nothing for skating, I guess it doesnt like the stride motion/rate. This one should work fine, and cost less. I'm wondering if the runner version would understand skating any better.
