I uninstalled the Zepp / MiFit app, because it automatically 'updates' the firmware, overwriting the custom firmware. I use the Notify & Fitness app without the Zepp app.
I had this once, using a corrupt file in the firmware (it was not the watch face in my case, it was an efl-file using BipOS). I thought the watch was bricked. But this solved it: I pressed the button, the screen backlight went on but still black screen. I touched the touch screen continously to drain the battery. After 4 to 6 hours, the battery was depleted. Then I put the Bip on the charger and the Bip rebooted. I flashed other non-corrupt firmware using Notify & Fitness (or Gadgetbridge).
It might not work for you, since the Bip will try to open the corrupt watch face agin after rebooting, so it bricks again. So: after depleting the battery, do not charge the watch too much, because you might have to deplete the battery again.
I use Notify & Fitness, paid version. Many many settings, could be overcomplicated for some. (My Bip runs BipOS, but the app is fine for standard OS too).
i have recurring reminders and my amazfit bip picks them up properly with what they are about. its all about how good the reminder app in your phone is in notifying. i use reMind from atdevsoft. it is very good in recurring reminders, very small footprint as well, offline, no ads and free.

If you are on Android then Gadgetbridge. Simple, does the job and doesn't send your data to any server. I think the Bip U needs some key from the chinese servers to pair for the first time. Check their wiki on how to get it under Special Pairing Procedures: https://gadgetbridge.org/#special-pairing-procedures
Good call at this day and age on your side. And also on Android: Android is doing the right thing and has been exposing the required permissions more and more. You can always not grant them and see what is not working. The reason why it shows the "make sure you grant..." warning is because for example one of the "android way" is Bluetooth scanning - in order to perform it, location permission is required. This is kind of important for a Bluetooth conduit style app and if people do not grant it, gadgets cannot be discovered over BLE.
When you look at the features, the permissions are self explanatory: notifications, contacts, sms, location (explained above)... as Gadgetbridge is touching many parts of the system, because these get either forwarded to the watch or are controlled from the watch.
Also, there is one, very crucial permission Gadgetbridge is not asking for - network access, which means that it cannot do anything malicious with your data even if it wanted to. That is very intentional and will stay this way for the very same reason you are raising - to have a very solid proof that it cannot send the data away.
You can always check the code, but i understand that this is not easy to do. But there are many users of Gadgetbridge, checking it constantly.

Gadgetbridge is a free and open source project which makes a point of never connecting to the internet (it has no permissions to do that) and of only using the permissions it actually needs, without tracking you. If you see more permissions than before, it's because 1) new features have been added and/or 2) newer Android versions require more permissions to do things that were doable with fewer permissions before.
Using a proprietary application as an "alternative" to Gadgetbridge because Gadgetbridge asks for too many permissions, which you presumably see as a privacy/security concern, is absolutely backwards, since with Gadgetbridge you or anyone else can read the source code and know exactly what the app is and is not doing, while the same cannot be said of any proprietary app.
I recommend you stick to Gadgetbridge and join their Matrix room and ask there if you have doubts about its privacy or security. I'm sure the developers and other users will be happy to confirm what I've said and elaborate on it if needed.
It could be that the firmware is still not considered stable and Huami isn't pushing it to all users yet.
I keep a list of firmware versions up to date here, but I'm not sure you could do a direct firmware update with the official Mi Fit app and the actual firmware files.

I already did and asked a few others to do it too.
I use the open-source app Gadgetbridge, which definitely has no ads. It doesn't have some fancy features other apps have, but it is able to upload custom watchfaces, and I prefer the peace of mind of knowing my data isn't going anywhere and that if something isn't working well enough I can potentially fix it myself or have a constructive chat with the developers.

From what I could find if you get that message it means that the firmware and resource file don't match. Here is a guide on how to update your watch and there is a table with what res file you need for your fw. If you search the md5 values on google you should be able to find them and flash the right one.
You do that on your own risk, but I haven't had issues following that guide. Though I am stil running 1.1.5.36 and I don't plan on updating since it works fine.
Yes, I use Gadgetbridge, since I'm not a fan of all my motions being uploaded to China (or anywhere outside my phone/computer, for that matter).
Firmware updates aren't a strict necessity, especially nowadays since they are infrequent and little changes... but anyway, Gadgetbridge can push firmware updates, you just need to open the Mi Fit APK as a zip file, and follow the instructions.
In case anyone else has the same issue, I contacted Amazfit. They said they don't sell chargers separately, but recommended this third party charger from Amazon. I just got it today, and it does fit and charge my Bip S Lite. They sell them in packs of 2 for some reason, but it's still much cheaper than buying a new watch.
As far as I know, the same charger is used for Bip/Bip S/Bip Lite.

I had this issue with some messages in Spanish too.
I solved it by disabling notifications via MiFit, and using Alert Bridge instead.
This way I can degroup the Whatsapp group messages so I can get individual notifications (instead of the "you have x new messages" wich are kinda useless IMO), remove unsupported characters (like ç, accentuated characters, etc), or replace unsupported emojis for simpler text emojis (or remove them entirely).

I've found a almost solution... I've uninstalled the app and installed "Tools & MI Band" https://play.google.com/store/apps/details?id=cz.zdenekhorak.mibandtools
than, I've installed Mi Fit again and was stuck as before... But... I can connect via "Tools & MI band" and control the device without any problem. I've heard the Mi Fit is crap anyway so using another app is good for me. But you need to have installed Mi Fit for "Tool s & Mi Band" to work.

The Amazfit and Mi Fit app is limited to checking every 1 minute, no matter which watch you got.
You can install a 3rd party app like Notify & Fitness and enable more frequent readouts, or have it continuously check your heart rate with your Bip.
Something that can theoretically detect sleep apnea, FWIW, is the well-known Sleep as Android app: it can turn your phone into a "sonar" (using mostly inaudible ultrasounds, between 18kHz and 20kHz, you might hear them if you're quite young) that is used to detect your motions and track your sleep, but it even has the ability to detect the periodic motions of your chest to measure breathing rate. You can probably imagine from this description of how it does it that it's a long shot, and that most of the time, for most people, in real sleep, it won't be detecting it... but it does work given the right conditions — a phone model where the sonar trick works decently, and you sleeping with your chest turned towards the phone, and without bedsheets or blankets on. Maybe next summer?

To sync Bip with Google Fit you only need Mi Fit app (it's the free app from Xiaomi Amazfit), or other third party app like Notify & Fitness (in paid version).
If you also wanna sync Google Fit with Samsung Health, you need this app, but this is a paid version with a week trial. Notify and Fitness is a well-regarded third party app for pairing with the Bip (and others). It replicates the functions of the Mi Fit app and adds many more (some of which require the paid Pro version).
I am new to Notify and Fitness but can confirm it has a 20 minute Power Nap function (vibration to wake).

If anyone ever looking for the answer: The Bip needs to be discoverable. And pretty important for Android 8: going in developer options and disable background checks for tue mi app. (That's what helped me finally.) I used the App "nrf Connect" (https://play.google.com/store/apps/details?id=no.nordicsemi.android.mcp) to forcefully bind the BIP. Then going to the mifit app and was using the normal way to set the Bip as smart lock device.
