Even if the VPN is audited there is never a guarantee. They could hide something from auditors or remove it for the time of the audit.
But even assuming the VPN itself does not log it still is a single point of failure. Their servers could be hacked and traffic could be monitored by someone else.
VPNs of course do have their pros and cons but they offer a lot less protection than a lot of people think and many providers advertise.

That's not true. Almost all vpns have had incidents but since NordVPN is one the top ones in the industry, there are lots of interest to put some dirt on them. Though if you would get deeper into all the situations, you'd see that it's nothing major and most of the fuzz is created by click baity titles. Besides, they have done couple of independent audits and it shows that they're definitely trust worthy with their no-log policy.
