If you put an SSD in, you will need to enable TRIM support manually. I had to do the same on my Mid-2010 MBP (I've since upgraded to a Mid-2015 MBP).

Sounds like the issue is with the system time and date. At the installation environment, check the time and date. Change this to the correct details. You might even have to change it in Terminal and restart, here's a tutorial:

Why would you need a hub? The Thunderbolt/USB4 standard has USB Type-C to HDMI, mDP, DP, DVI, and VGA all built in, and there are cables to do that. The only need for a hub would be to add other devices to your computer while charging.

Well, finally I've managed to install Monterey with OCLP! I watched videos by various people on YouTube. I made a USB installer stick using OCLP V0.4.1. My first attempt failed when I was left staring at a white Apple logo and a white progress bar on a black background which was about halfway through for about 90 minutes. I had to end it by turning off using the power button! After watching a few more videos, or just some of the same videos again I'm not sure what I did differently, but I never got a progress which didn't indicate how long its would take to complete. Eventually, I think the installation took about an hour. I was making a video of it, but I stopped various times to keep the files small and cut out the boring parts. It wasn't completely over then, because I had to install patches for the Intel HD 4000 graphics chipset, as it didn't show the map on NordVPN, or a a game downloaded from Apple Arcade. I also had problems with Apple ID and my Mac user login password. Eventuality, almost everything has been sorted out, but I found that I still need the USB installer stick to be inserted to boot up, otherwise I get either a folder with a question mark or a stop sign. This looks like OCLP hasn't been installed onto the hard drive, so I need to look around in this new version or watch some more videos tyo find out where that option is.

I like the Crucial SSDs. For the back screws and disk drive screws you’ll need a 1.25mm Phillips screwdriver, for the battery you’ll need a trilobe (sp?) driver, but those usually come with the battery. Thermal paste replacements on those laptops require removing the entire logic board and flipping it over as the CPU and GPU are on the bottom of the board. Personally, if you think the thermals are fine enough it’s probably not worth the effort to replace it. Getting the battery replaced by Apple costs $129 (not sure if that includes the cost of shipping it to their service place—https://support.apple.com/mac/repair/service). iFixit batteries are a little under $100, so I personally would rather just pay the extra $20 or so dollars just to get Apple to do it. Amazon batteries aren’t the best quality, but usually run about $30. You’ve already got the max amount of RAM, so you’re good there. The Crucial MX500 has DRAM and is $10 cheaper than the equivalent Kingston SSD on Amazon at least. The MX500 tends to be the best price/performance for a SATA SSD. And it's cheaper than a Kingston.

I know that some cheaper adapters can be slow or finicky, but is this what you mean? I know there also exist other PCIe cards that people use to adapt the SSUA/X and SSUB/X drives to PCIe, but this adapts to NVMe so you could plug it directly into the motherboard. Well, it’s not as big as that hard drive, and it’s 2x the price, but here’s a 120GB SSD for $30 on Amazon.
The main issue with using such an old hard drive is longevity. That drive will very fail you within a few years, and completely become unusable. Totally get if it’s out of your price range, just a suggestion.
