ScummVM. Full disclosure, depending on where you live and whether you own the original games etc, there may be copyright issues.
in that case, what about something like one of these LeChucks. I'd go with either the left or the one on the right.
I seem to recall that Escape had different box art for the PS2 version for the North American market? Amazon US seems to back up this memory

DOSBox can emulate PC Speaker so if you have an old copy of MI you should be able to play it there with all the scratchy bleeps and bloops of a system without a sound card https://www.dosbox.com/wiki/Sound#PC_Speaker
Since you own the discs, it's perfectly legitimate for you to use an emulator and ROM http://www.emuparadise.mobi/ScummVM_Games/The_Curse_Of_Monkey_Island_(CD_Windows)/96009. (full link for formatting conflicts)

Hi, guys. I'm a Sam & Max fan but never played Monkey Island. I'm planning to give it a go today, would any of you be kind of enough to tell me which one I should start with by providing GOG.com links? They seem to have a 40% discount right now but I don't understand this ordering like 1, 2 or 3... they don't usually have that on their titles.

Any help would be appreciated! if there's any version not included in GOG, that's fine too!
