I use NordVPN everyday on various Windows, Linux, iOS, and Android devices in my house with Starlink. No issues whatsoever. I have been very happy with NordVPN in general, but I'm thrilled it plays nice with Starlink.

This is likely because of StarLink's usage of CGNAT. I spoke with NordVPN before my StarLink system arrived and they said it was incompatible because of IPv6. It was something they were working on, but they didn't have a timeframe for a fix.
I believe this is due to CGNAT. I personally noticed issues with some of my online games a few weeks ago. Around 2 weeks ago another gamer made a post about their connection dropping. Shortly afterwards someone made a post about getting disconnected from their video conference for work. Having said all of that the issue started about a month ago and has been attributed to StarLink's use of CGNAT.
I'll try to explain this as simply and as quickly as possible. CGNAT clumps a bunch of users under one IP in an attempt to save the shortened supply of addresses. Great for receiving data, bad for sending and receiving at the same time (real-time). The downfall of IPv6 vs IPv4. I spoke with someone at NordVPN about a year ago in regards to this exact issue and they were aware and attempting to work with StarLink on a solution. The problem is that unfortunately the ball is in StarLink's court more than other companies like Nord. This is a StarLink issue and they are aware.
So far the gaming community and the workforce communities here have agreed that opening a ticket with StarLink support is our best option. It sucks, but we're just going to have to be patient. StarLink is aware and word is they're working on it (even if they haven't responded to you personally). If you haven't started a support ticket you should. Only open one because multiples will slow down the processing. Also, anyone else you've spoken with should open a ticket. The more attention we can bring to this issue the better. It's also not a localized problem. I'm located in NE NC and I have it. What I haven't heard is if it's global.
Use a waterproof Ethernet cable connector (like this ) and some rj45 ends and a crimping tool and you can fix it (just read up on which order to put the wires in the ends before crimping).
We fixed our external Ethernet cable feeding an AP on the other side of the house after the new dog chewed it and we’d never done it before - make sure it’s unplugged first obviously! Oh and check dimensions these waterproof connectors are huge!
THIS is what you want. You will also need the appropriate GBIC's and fiber with correct ends. Make sure you get ready to bury fiber unless you plan on running conduit. You may only need one of these and have a GBIC switch on the house end.. Not sure of your setup.
I'm fairly familiar with Speedify as I've used Connectify for several years and actually have a lifetime license. I had been using it on an older laptop with pdanet+. Unfortunately starting a couple of Android updates ago it started acting really spotty when using a USB connection. I thought about trying Speedify but I don't want to pay for something else right now. I'm sure there's a way to do it that doesn't cost more money.
Since you have two DSL lines, you can use Speedify to bond all three lines, when SL cuts out, it will immediately failover to the DSL lines. However with less than 2Mbps I don't know if that would be enough to keep you from losing frames.
It works great for an LTE line that has an upload comparable to SL (which is generally 5-10 for me).

I'm getting 90-100 MBps though it which is good enough for me. I get 130-180 MBps directly connected to the Starlink router.
I haven't had any issues with Hulu yet. Disney+ and ESPN+, Netflix, HBOmax, Peacock, IMdbTV... All work great for me. So I suggest testing it yourself. StarLink seems to work a little different depending on where you're at. NordVPN is the same. They'll even tell you their service isn't compatible, but some people use it without issue and some have gotten it to work with a few small adjustments (you can search the subreddit).
At this point, what have you got to lose? The metal is there for shielding, you can get tool free connectors on Amazon.
What are you using for the speed test? The router app on the phone? The dishy speed test from fast.com?
Both the phone and desktop should run the tests using speedtest.net, and using the speedtest app with each, not a browser.
Windows 10 has a Speeedtest app, and it gets better results by far than the browser sessions on speedtest.
I was next to the router on the only wifi available (it doesn't specify 2.4 GHz or 5GHz but I am pretty sure it is 5GHz); I used fast.com to speed test it wirelessly. There also appears to be no obstructions.
Ask your bank if there is a temp Alternative to get around it.
Or alternatively in the US we have https://privacy.com/ which is a prepaid VCC. I believe there are European Alternatives to them which allow you to load money into them to use for online purchases which should work out for you in this situation.

You could quit gmail, have your own email addresses and not let Google read all your emails. Get the new email, then send change notices to all that have your gmail address. Send notices again later.
My solution, that I started to use probably 20 years ago, is having my own emails & domain on a webhost server. Expect to pay $30 for a webhost, domain name & registration each year. Assuming your name is John Doe, you could have [email protected] or some such, plus 16 other emails [email protected]. Spam filtering is free. You will have empty web pages for any use you desire, included in the price. My webhost had a stroke, so now I use hostgator.com.
After the change is done, you can move contact & registration address from gmail. Contact@newDomainnam.US is suggested, so bot spam only goes there. Don't give your main address to register, the bots will have it.
I'll recommend Ubiquity networking equipment for outdoor WiFi. https://unifi-network.ui.com/wi-fi It's not cheep but certainly cheeper than $500+ for each dish and $100 a month for subscriptions. 3 dish installs is going to set you back about $1500 up front and $3000+ for subscriptsons every year.
As a side note, to my understanding Starlink is not for commercial use at this time. I suspect they will have a commercial version after we get out of the beta period. They may even offer a solution for your situation, it's worth asking them. So if you are renting out the cabins that might be a violation of the Starlink contract and you could get shutdown.
Well if they are blocking the PPTP port and you are trying to access that port from the outside then you probably need to find a different solution like OpenVPN.

Do you have an ethernet cable? Plug your computer right into the ethernet port on the Starlink router and see what kind of speed you are getting. Run a speed test like testmy.net or speedof.me to see what you are really getting.
DNS doesn't make a change, but I did notice that when connected through my work VPN, everything works perfectly.
I purchased ExpressVPN and tried to install it on my ASUS AX-11000, but it didn't work. :(

I had to add another 100' of shielded outdoor Cat 6 wire to get to my house with a little slack at the dish mounting pole. You will not have any problems with most of the VPN technologies in use these days for the purpose of internet use from your network.
You will have to jump through hoops if you want to provide content to the outside world. This is mitigated somewhat by IPv6.
If all you want is to use a VPN from home, then I use Speedify. It works ok. It has a very limited free mode so you can see if it works for you before you purchase. There is the same performance hit that you will get with ground networks. It is not terrible.
I use NordVPN. Easy install/ use, just point and click. Has different categories of server from general browsing, p2p, tor/onion. Also has an optional 'kill all connections if VPN drops' feature which gives me peace of mind if my connection is unattended for some time.
You need this. A load balancing router. Just make sure that the Starlink is the main link and VSat is the failover.

You (the OP) has a classic case for bonding two connections. Check out Speedify or, better yet, a router that supports bonding, such as most Peplink routers (along with SpeedFusion Cloud). I wrote a note in the Starlink forum entitled "if dropping calls with Starlink, do this" (or similar) that explains what I did. Feel free to check it out. If you have a stable DSL connection but need speed, you can have both stability and speed by bonding two connections.
I use Speedify to bond my slow DSL to Starlink. Cost me about $50.00 for three years. It saves Zoom sessions. I get unstable video warnings but I don’t lose the call. Not great needing to pay for 2 services though.
Sorry, no idea about how to get into your Linksys other than to do a full reset. Google for a copy of the manual and that should tell you how to put it back to factory specs. Then check out Speedify for the bonding.
Just discovered the problem. While I was away on my iPhone I switched my VPN from Jumbo to ProtonVPN. When I came home ProtonVPN was running and I didn’t disconnect ProtonVPN until just now. Sure enough, my app now connects to Starlink. Am I not going to be able to use ProtonVPN at all on my iPhone?
This is an excellent post. I have Speedify and use it to bond my slow DSL connection on my Mac. It works well for the prevalent Starlink issue - short dropouts that can cause real problems in use cases like online poker. If I happen to be using my iPad for a Zoom call, then I bond its LTE connection with Starlink. That increases call stability.

Does the Windows machine see the Starlink SSID at all? If it does change the SSID password to something simple like 123456789 and try to connect again. Then change the SSID password back and see if you can reconnect the Windows machine.
I'm using paid ProtonVPN now and I believe it also can do that so will look into it.
At 56N coverage will likely be spotty here for some time yet. I paid my deposit the end of Feb right after getting the invite email.

I’m seriously considering MoCa. It uses the existing cable TV wires in the house to broadcast Ethernet. Since I have cable outlets in nearly every room...haven’t pulled the trigger yet. I do have Ethernet over Powerline but I find it flakey, to a degree.

It would be beneficial in theory, but I highly doubt any cable company would agree to the plan. You'd just end up paying for 2 full connections which would be expensive.
If you really just want the fastest connection possible by combining the 2 then you'd need to use something like Speedify VPN which combines connections.
