My tutor u/serhiy_b says that a tap/flap "r" is sufficient, in other words, the sound you make in the middle of the word "butter" (assuming you have a general American accent). Unlike (say) Spanish, there do not appear to be situations in Ukrainian where a lengthy trill forms a minimal pair with a tapped "r". Or at least, I haven't encountered it yet in the ~9 months of study I've done. You don't have to erase your accent, you just have to understand and be understood, and though Ukrainians will always give you a nice rolled "r" to emphasize it, you don't have to do it to be understood. Just try not to give the American "r". :) I have put a lot of work into this too and I think it will come eventually but I'm not there yet.
I think the bigger problems for English speakers are actually г/х, и/і and the variation in в.
In addition to what others have said, Read Ukrainian! is a free resource with some good grammar instruction, but as usual, the wiki has a lot of great resources too. There's also a book of Ukrainian: A Comprehensive Grammar which I have been enjoying, but it's pricy.
You should try these dictionaries, they are good enough. The only thing is they are paperback

The only book I have read is digital, but it's pretty good: Українська для Іноземців. I have not been able to find a paper copy apart from trying to order it directly from a Ukrainian bookstore, although I think someone else here linked to a new edition of it recently. (u/Same_0ld ?)

Beginner's Ukrainian is supposed to be good; the version on Amazon is the previous edition going for $120, which is odd because Hippocrene directly seems to have the new edition for $45.

As an English speaker, some of these are going to be hard, because they're allophones in English. For instance, л and ль are allophones in English—you already can produce both, but you can't necessarily hear the difference. For example, the кь is basically the K sound in "Mike," as contrasts the sound in "cat," which is Ukrainian's к sound.
I have been studying since March and I have some trouble differentiating з and зь, but с and сь are getting better.
The best thing to do is find a patient tutor. Once they can force you to make it properly a few times, it will (strangely) become much easier to hear the difference. u/serhiy_b, for instance, is both patient and exacting about getting it right.
Also the book Beginner's First Steps in Ukrainian comes with an access code to a website where you can hear every pair of sounds that exists in Ukrainian, which was useful for me.

It takes awhile to get used to them on the keys, but I don't notice that at all anymore. I mostly notice how much longer it takes me to type out posts, because I obviously haven't memorized the keyboard layout yet (getting there). A post like today's takes me anywhere between 30-40 minutes just between constructing the sentences and then typing it out. But ya gotta start somewhere!

Yuri Shevchuk's book is, imho, the best book out there by far.
It provides a solid starter's vocabulary in addition to laying out a VERY solid starter's grammar and pronunciation. To supplement the vocab, I use Anki and the shorthand that Shevchuk uses in the dictionary at the back of his book. Learning that shorthand for dictionary entries is critical, and it has not only made creating flashcards much quicker, but also greatly improved my understanding of the patterns that recur in the Ukrainian language.
