This is the only routine I've actually been able to stick to because I've just absolutely refused, my entire life, to spend more than 10 minutes a day on my hair, no matter how much I want it to look good. I know it's not quite as magnificent as the other curls I see on this site, but it works for me ¯\(ツ)/¯
So, when I am in the shower, the last thing I do is (softly) brush my hair with conditioner still in it to untangle. Then, I flip my head over so my head is upside down and is super wet. I gently brush through it again, squeeze out some of the excess water (but not all of it, should still be pretty wet). Make sure to keep a little bit of the conditioner in there; don't rinse all of it out. Then I run some Paul Mitchell Super Sculpt throughout all of it, making sure it's all coated. I end up using two quarter-sized amounts. Once I'm sure it's coated, I scrunch up from the bottom, squeezing some of the water out as I do, making sure all of the hair is now curled. There should be a satisfying squelchy sound. Then I flip my hair back over and don't touch it until it's completely dry (about 2-3 hours later), when I scrunch up a little bit from the bottom again the places where the gel has set a bit harder. Super easy & fast, every time I shower. If it's on a day I don't want to shower, I just wet my hair and do the same thing outside of the shower.

Dress for those interested. As I mentioned in another comment it's kind of funky, the torso part is completely loose cloth that you have to find a flattering way to wrap around yourself without having a nip slip. On the plus side there are many colors and fabric feels quality.
I have a ton of hair and a huge noggin and I’ve figured out how to deal with both.
First, make sure you have the right size bonnet. I have 3 thanks to trial and error, but the one that works best for me has a thicker band and plenty of space for my hair.

My routine:

In the shower, I flip my head over and thoroughly wet my hair, then co-wash with Tresemmé’s Botanique Nourish and Replenish conditioner, rinse, and then squish in plenty of Suave Essentials’ Ocean Breeze conditioner. After that I stand up straight again and clip all my hair back while I wash my face and body. When I’m ready to get out, I’ll unclip, flip my head back over and rinse my conditioner out while detangling with a wide-toothed comb. Immediately after turning the water off, I’ll apply a little bit of Shea Moisture’s Curl Enhancing Smoothie and a lot of Shea Moisture’s Jamaican Black Castor Oil Strengthen and Restore Smoothie, first raking through my hair with my fingers, then squishing in. Next I squish out some excess water with a towel, then squish in some LA Looks Extreme Sport gel, and finally plop in a cotton t-shirt.

Edit: For those asking what kind of hair tie I use, my stylist recommended something like this. I've noticed that they're a lot nicer to my hair than scrunchies or elastics.

See if you can get her to wear a kid's sleep cap like this one (you can see user photos in the reviews, there are toddlers wearing it). Satin bonnets can be kind of hit or miss - if you can get to a beauty supply they usually sell them for about two or three dollars apiece, makes it easier to buy multiples and find one that works.

I just cup my hair into it and sleep with it tucked behind my ears. Is the band a little tight at first? Yes. But it loosens up, and yet still doesn’t fall off (and I toss and turn!)
I cannot say enough good things about it. I don’t even have to refresh my hair! It’s amazing!
In my experience I’ve had bad results with scrunchies being too tight and leaving crease marks.
Get yourself a pack of spiral hair ties. They’re amazing. They stay in place and you really only need to wrap them around your hair once. One of my top curly hair purchases.
Frizz is:
1) a curl trying to happen 2) dryness
Best thing I ever did for my hair was the curly girl method. Get rid of sulfates (cleansing agents that break up disulfide bonds, aka. curls) and silicones (can only be washed out with sulfates) in your cleaning products. The side bar is a great resource, and so is the Curly Girl Handbook

I sleep with a humidifier too! I don’t know if that makes a difference, though!
Yes, just look for something that is 99% pure aloe vera. This is the one I use:
I have found that using aloe vera requires using more product than if using some sort of hair gel. It is very light compared to normal gels, and not sticky at all. It's also a humectant, which means it holds in the moisture! I absolutely love using it.
Try plopping right side up. Get your towel under your hair along your neck and pull it around towards your forehead and tie it up there. Make sure your curls are inside your towel, but not squished against your head or on top of your head. I was getting really tangled, kinky curls when I plopped. Now I just kind of tie my hair into the towel and let it sit in the towel instead.
Edit: For anybody curious... I use these towels . I fold them in half diagonally so they’re a triangle. It makes it really easy to tie up and adds an extra layer of towel to catch the moisture so your towel doesn’t get suuuuper soaked immediately.
I have long hair and a looser curl pattern and my curls get a bit wonky, so I’d recommend trying to pineapple the hair while wearing it, although I’m not sure if it matters if your hair is wavy. However, I’ve heard it most benefits tighter and shorter curl patterns, so I’d recommend getting one like these
I have seborrheic dermatitis and the zinc soap helps with that. Because I do the CG method, I can't use dandruff shampoos. I use this stuff just on my scalp and it doesn't seem to hurt my curls. It's a bit expensive, but I only use it once every week or two. Here's the one I buy:
May I suggest using Shea Moisture? They even have a line made especially for kids which includes shampoo, conditoner (both for dry hair) and a detangler.

I just recently invested in buffs and they’ve been helpful for me. I have long hair, but pineappling gives me a kink from the scrunchie. a buff might help you because you don’t have to stretch your hair to the top of your head.
At first, I cut an old pair a leggings, then I bought some form amazon.... just put it around your neck like a scarf, flip your head upside down, and pull one end to cover your hair. A tube sock for your head, if you will.

This one in an extra-large has been awesome for my long hair! It maybe feels a tiny bit big, but it doesn’t pull at my hairline and manages to stay on through the night 99% of the time (which is a huge feat, I move around A LOT).
How often are you washing/co-washing? Are you using any shampoos? Have you clarified your hair with a sulphate shampoo before you started using the Cantu conditioner?
For an idea, it looks over-conditioned and weighed down. I had a similar effect when I was using a keratin conditioner. It was just way too much for my hair.
Try a clarifying shampoo to start all over. Try a lighter conditioner like say Suave Naturals Clarifying Conditioner after your hair is stripped clean and stick with the same techniques (s2c and plopping) just to determine if too-heavy products are your problem.
What's nice about the Suave conditioner is that it works great as a co-wash (shampoo replacement) in between your clarifying shampoo washes.
Also, don't be afraid of a clarifying shampoo. I use head and shoulders once a week or every time I use a silicone gel or hairspray. There are a lot of others out there that work just fine. Some people need to clarify with shampoo once a month, or once a week, or once every few months. It depends on what works for you.

On dark hair, I think indigo powder can be used by itself...but for lighter hair, you'd have to do a henna base first and that's quite a bit more work.
No need for a professional yet. You guys can do this! You’ve bathed two little ones for years, you know what’s up; just put a bunch of toys in the tub, don’t be afraid to get wet and use ALL the conditioner you can find in a six block radius. Have patience and alcohol on hand. As far as the curly bit goes, pfft, I dunno; I’m 38 and still trying to figure it out. I do know a wet brush will be your friend here. Lather her noggin up with a ton of high slip conditioner, grab ahold of a chunk of curls (to prevent pulling) and start with small sections at the tips working your way up until you can run the wet brush through from root to tip without any pulling. These invisibobbie hair ties are MUCH easier to take out of crazy curls, and you can grab them at Walgreens or wherever.

You can pull the rubber base off the handle and remove rows to your liking. I bought a 7 row brush but have since modified it to 4 rows.

Routine:
I keep my products very minimum (because it's hard to find CG friendly products here, and because I'm lazy, lol)
▶ Wash once every 2 weeks with Allna Organic shampoo (co-wash with the conditioner once a week) ▶ Squish in the conditioner, rinse with bowl method ▶ Rake in some Lucido Argan oil (don't know this product is CG but it works for my hair) ▶ Finger coil and scrunch in some gel (I usually use homemade flaxseed gel but switch to Aubrey Organics chia seed gel when I travel) ▶ Scrunch with tshirt and then diffuse with low heat until half dry, and let the rest air dry
★I deep cleanse with ACV once a month with coconut oil mask left overnight the night before
★★ IDK if it's placebo, but I feel like my hair grows a lot quicker since I stopped flat ironing it :)

This is what I use BEFORE the shower, sorry! Sometimes i detangle in the shower with a wide-tooth comb, but my hair is so long and thick I dont have the patience for it lol. I shower every day too but I dont mess with shower caps because I don't like showers if i cant get my head wet lol . these days I just get my hair wet with water and air dry. It definitely doesn't look ~as good~ but I normally have my hair up in a bun or something 99% of the time :/

It has been life-changing at helping my psoriasis. I rarely even need my prescription shampoo anymore! I rub my scalp in small circles as I rinse out shampoo and conditioner. Gets rid of all the build-up.
I once watched a video of someone using a fine mesh strainer like this one and I've been meaning to give it a shot. I have a diffuser but it's not easy, I have little t-rex arms and shoulder injuries so attempting to blowdry my hair is just annoyingly difficult. But something with a handle like that might help, if it'd actually work.

This can defnitely cause issues! You'll need to start over again w/ the reset/transition sulfate wash and then use only CG products.
I couldn't find which noodle head serum you were talking about (none seemed to have that name) but I'd double check that one too.
Anyway, to answer your questions:

I think you need to do 2 things:
Get a more flattering haircut. All of your hair is cut at roughly the same length, causing your hair to poof out at the ends. Different layers will give you a better shape.
Consider following the CG routine. Keep in mind, you don't have to throw tons of money at new hair products - Suave and VO5 make inexpensive conditioners that are CG friendly; refer to the products list.
Changing your hair care routine can help fight a lot of the common hair problems curly hair people have. It's going to seem weird, because it's contrary to what most of us have heard our whole lives, but so many people here have found joy in their curls by simply changing the routine.

I brush with a wide toothed comb when my hair's wet and covered in conditioner. Brushing starting at the ends and working tangles out until you get to the roots also helps. If she doesn't want to wash her hair every day there's a lot of overnight styles you can put your hair in to try and minimise tangles. Here is a video explaining how to clip your roots. I use a mix between what they call "classic" and "uproot" clipping. I use these clips from amazon. They are much less expensive than the deva clips and do the exact same thing. Plus you get a ton of them!

Oh man, there are so many curly hair products. It's really a bit trial and error as every persons curls are different and hers will change as she gets older. It looks like someone already posted the CG hair guide. I would save that for future use bc it can get complicated. I would suggest forgoing shampoo all together and co-washing, which is just applying conditioner to her roots and giving her scalp a good scrub. Then rinse and condition again focusing on the length. Comb while wet, brushing dry curly hair creates massive frizz, as others have pointed out. Co-wash, condition, comb while very wet (get a little spray bottle for water to refresh after naps or in the morning), apply some kind of leave-in conditioner while wet, then seal- mousse or gel, Dry (either air dry or diffuse, which is preferred- hair dryer with wide attachment) then scrunch out any crunchiness once completely dry. This product does wonders for my roots!
I flip my head and put a quarter size through my roots while in the shower before squeezing the water out of my hair. I kinda finger comb it down towards the ends but my other curl creams work better on the rest of my hair. The instructions say to rinse it like halfway out but I don’t. I rely on the water on my hair instead. I like this one for the roots because it isn’t crunchy at all. My hair is wavy, thick, low porosity and course, at least for a blonde chick.

Yeah, if you can! When you sleep on fabric, the fabric loves to soak up all the oils and sweat on our body, including our hair! Especially cotton. So you can add a lil extra to protect it overnight. You're also likely not sleeping dead still, so all the added friction can be damaging. The extra oil helps lubricate that motion to be less damaging and provides a bit of a moisture buffer before it all goes away again.
I personally have a silk beanie. Like this one! Not an affiliate link, not one I personally use, but it's the same idea. It can help with the price, especially considering you'll likely actually need 2-4 silk pillowcases, and then your sheets will also make contact with your hair, and your comforter, and... Yeah. Easier to put silk around your head than around your entire bed. You could also totally use a silk headwrap, like this one. I actually have used this one, and it worked amazing!! I just didn't like the extra long ties and didn't feel comfortable using it to protect my hair on the go, whereas the beanie looked less bed-time and more lazy day.

I would buy some microfiber towels if I were you! You don't need to buy the DevaTowel, any brand is okay. Amazon has a 3 pack for $7 and they work really well for hair.

I totally understand why you're mentioning the whole "80s" thing, but, imho, you're sooooo pretty, especially with your hair! I have similar hair and I really find a brush similar to this https://www.amazon.com/Detangler-Brush-Detangling-Curly-Natural/dp/B07Y61MZH5 to be the best to try and detangle with. It is amazing. Please try to save her hair if possible. I cut mine and growing it out is a process. Detangling spray to help create slip such a kinky curly might help. I hate dry shampoo but I saw online that Cantu makes one that might not be too drying. I wish I had experience to help but hopefully something I said helps!
Diffusing is my go to, if I air dry I tend to have a lot more frizz. I have a really weird hack for you. After putting all your product in, stick your hair in this grocery bag and tie the handles so that the bag stays on your head. Then diffuse while you have that on. I do this sometimes when I’m really lazy or my hair is feeling extra heavy and it helps get all the sections dry
I have a cheap Remington dryer that comes with three "heat settings": cold, warm, and hot? I use the warm (medium heat?) setting and the low speed. For the diffuser, I use the Black Orchid diffuser (I found that since a lot of hair fits into it I get less frizz from moving it around) .

I just bought a bunch of new products, as I'm still trying to figure out my best routine, but today I co-washed with As I Am Coconut Cleansing conditioner and conditioned with some Renpure junk that I don't like but am trying to use up (I only use cold/lukewarm water in the shower). I flip my head upside-down and scrunch as I wash the conditioner out, then scrunch out all the excess water. I then plop using whatever t-shirt I wore to bed (lol), leave that on for 30min to an hour, then I flip my head upside down again to put in product. I've only been using today's combo for maybe two days, but I noticed an immediate difference in my curly quality. Anyway, I scrunched in Cantu Repair Cream and this awesome gel that I got off Amazon (5 freakin' pounds of it!). Aaaaand then I let it air dry! I'm relatively new to CG and still searching for that perfect routine, but I think I'm on the right track!

No, I'm not shilling for WalMart/ConAir. Use ANY self-gripping rolls. It's extremely easy to do, and it's extremely effective. The bigger the rolls are, the straighter the hair will come out.

When I use the self-gripping rollers, I look much more styled and put together and ugh, just so much better. Note that the rollers don't make your hair flat straight -- they just make it overall straight with a cute little bouncy flip near the end.
I really encourage everyone to try it at least once and see how they like it! No heat = no damage.
curl type is less important that porosity and strand thickness. Check out the side bar "other Useful Links" there's a whole section of info about porosity and thickness to read through. Choose products and routines based on that will make a big difference. You'll get a better feel for what your hair is the more you do this. Occasionally recheck your porosity as it'll "heal" the longer you avoid heat and properly care for it. i think the strand and squeak tests are better than the float test.

Light defining gels were never good enough for me, I'd use literal handfuls and still have frizz after I dried. I switched brands and started climbing the numbers, turns out I need hard hold (number 10). And A LOT of it!
I have long hair (reaches the bra strap), but it's thin. This is about how much gel I use - I know that's mousse, but I can't find pictures of actual gel in someone's hand, LOL.
I use half that amount to smooth over my whole head and the curls (praying hands style), then the other half to scrunch just into my lengths.
It's basically an at home version of those dryer hoods that the salons use.

I've got roughly similar length hair and usually wash every 3-4 days, currently running about 65 mpw. Maybe you've tried something similar, but the best option I've found so far is to get a satin headband kind of like these (though I just got a cheap set at my local grocery store). I put them as far back on my head as possible to gather the curls back and then lightly bobby pin it in place. The band basically sits under my hair at the nape of my neck in the back and then goes vertically up just behind my ears on top of my head rather than sitting on my forehead, to give you an idea. It's still bouncy and gets a little windblown but since the curl clusters are gathered together in the back it holds up better than letting it go free and while not being perfect it's easily what works the best for me.
Another important thing is to make sure you take the headband off and let your hair air out as soon as possible after you finish running so the sweat doesn't "set" your hair in place in a weird way as it dries.
The type on dandruff you have influences the solution.

The oilier yellow dandruff is from not showering or shampooing enough or product buildup. What you have sounds like dry itchy scalp.
First thought is try using a pre poo treatment or a gentler shampoo for a bit (like giovanni 50:50 hydrating clarifying balanced shampoo) and see if the issue is you are stripping your scalp. If you notice oily roots and buildup on your hair happens really quickly and that is why you clarify all of the time, try lighter or less products.
I use shampoo at least once a week, but I have chosen very specific shampoos like the giovanni 50:50 one and nymn royal honey & kalahari desert melon shampoo because to me they both have gentler cleansers. My hair feels cleansed, but not stripped.
Another option is Am i Am dry itchy scalp cowash that ive heard is amazing for people with dry scalp issues (there are also shampoo and conditioner options). It has an active ingredient made for people with your type of dandruff and dry scalp.
The scalp is skin too, so if you are using a strong cleanser you want to moisturize properly after.
Lastly, invest in a shampoo brush like this one. Best thing I ever bought. Feels amazing on the scalp.

I have layered shoulder length hair, so many of my strands get loose when I pineapple and I don't tie the scrunchie too tight because that would put a kink into my waves.
I ordered a satin nightcap off of Amazon because I figured that would be cheaper than seven new silk pillowcases (acne prone skin, so I need to change mine daily) and it CHANGED EVERYTHING. Not only does it preserve my curls, but the humidity from my scalp gets trapped in the cap and absorbed into my curls, making them softer!
What I do is I flip my hair up side down, gather it in a scrunchie without twisting it, put my "pineapple" into the silk cap, flip right side up, and then carefully stuff any stands sticking out back in. The way you put it back in the cap matters because if you're not careful to "plop" the strand into the cap, it may come out wonky in the morning because of your weight when you sleep on it.
The only caveat to this method imo is that the cap gets rather hot and humid without AC in the summer (80F at nights where I live) so it might be a little harder for you to sleep. You also look frumpy and my boyfriend giggles everytime he sees it on, but the shed hair on our bed has significantly decreased. :P
Seriously though, this has made second day hair much more attainable for my 2B/2C hair!
This is the nightcap I use. It's pretty cheap, but after two months of use, the elastic has worn so it doesn't stay on as well as it used to. You probably would want to look into getting a better one if you can afford it.

All I use is Argan Magic Hair Cream. I’ve found with using different shampoos and conditioners, from the expensive Shea Moisture line to TRESemme and Head & Shoulders, the outcome is the same as long as I use the hair cream. Right after showering, I put my hair in a microfiber towel for a few mins to get some moisture out. Then I take that out and apply a generous amount of Argan Magic and put the microfiber towel on again for 5-10 mins then take it out and let it air dry. If I'm going to sleep right away, I just lift my hair above my head on my pillow. Found on amazon and occasionally at my local TJ Maxx.

I’m still new and just now getting my routine down but below is what I did and these are the products I used:

First off I washed like normal then let my hair get completely soaked and without squishing any water out I used twice the normal amount of conditioner and “combed” any tangles out with my fingers.
While still dripping I used a palm sized amount of both the gel as well as the butter cream leave in product.

I left it up in my T-shirt wrap thingie for 15 minutes and then let it down til it was completely dry and crunchy. Once it was crunchy, I scrunched it until the crunch was gone and that’s it!
It’s basically two slightly curved combs on a hinge or with elastic that you place on either side of your hair to gather it all in the middle and then you clip the combs together.

By the way I had a super short razor or buzz cut for 15 years. When I started growing my hair out I discovered that it was super thick and wavy 2B. I love it now but there is a learning curve. I also hit a point about your length were I had a weird girl mullet but a trip to the hair salon was able to dress it up for me.
Don't forget a wide tooth comb of you don't already have one.
I wouldn't comb it while dry, that just makes it frizzy generally. I put leave in conditioner in wet hair, detangle with fingers then use a Denman brush. It distributes the leave in and makes the hairs lay straight and smooth.

Consider these - somehow they actually tangle much less in curly hair! My hair is type 4 and I have no issues getting these out compared to regular ties. Other plus side is if your hair is thick enough you don’t have to wrap around as much (the more times you wrap, the harder to get out).

I would recommend a Wet Brush. Goes through tangles with ease. There are different sizes and designs/patterns.
The Deep Conditioner is my all time favorite conditioner.
And Spiralicious Styling Gel is good too. I'm going to be trying their shampoo next

You got some great volume! If curls are what you want I'd def suggest a gel. A lot of people with short hair like to use sea spray too for more volume and definition.

I dont let my hair get wet. I just wait until it falls back into place if that makes any sense. When I steam, i just move my head around until all pieces get attention. Then I start again on the first piece. Sometimes i move my hair with my finger. You definitely have to try it out to truly understand its benefits!
I'm not sure if I would use a clothes steamer just because the water pools and collects dirt in its compartment.

I use these. You can make it as loose or tight as you want and you don’t have to pull your hair through, which sometimes messes up my curls. You just hook a little hair at the base of the ponytail, wind it around as tight as you want and hook the other end in.
Honestly, you might want to think of asking your stylist or even your doctor. Neither of which I am, but although I don’t think it sounds serious you want to rule out any medical reasons before you follow suggestions from strangers on the internet.
For me, this scalp massager has done wonders for my scalp. The nubs are soft and cut through my thick hair to get the shampoo down to my scalp. Working in small circles, I make sure to pick up the brush off my scalp and place it in the next section of my head to avoid breaking up the curls and tangling my hair.
