My personal technique involves a large, light, metal bowl, then deposit wings in bowl. Pour in sauce, then toss.

Was going to say this as well. When I do wing parties, I'll thaw the wings, put them in the oven on a cooling rack over a cookie sheet (lined with foil for easier cleaning). Set oven at 400 and cook the wings for about 30 minutes depending on their sizes. Then put into the fryer for 3-5 minutes with the oil at 375. Check often for desired crispness.
The racks and sheets I have, I can get 35-40 wings per. so, for your 80~ wing party, it should save you a good amount of time!
And then, if you're doing a sauce gauntlet, I suggest these containers. They'll fit 5-6 wings at a time. Just put in the wings, add the sauce, replace the lid, and shake! Great sauce coverage, and you can label them with masking tape or food labels.
You could crack open a AA battery and pour the acid inside it on whatever you're eating. It'd certainly be cheaper, and it might taste better and be less poisonous too!

I'm going to talk a lot about Take Out Chinese Food. FrostBite is a very high recommend from me. Adds great balanced heat but no flavor. (this is a feature not a bug) Specifically this is my Jamm on Chinese Food. I love the taste of Chinese Food but wish it was spicier but without changing the balance of flavors i love in said Chinese Food. A lot of pepper sauces I love on western styles of food i find throws my favorite Take Out flavors off balance. My Number #1 favorite hot sauce of all time is Mad Dog 357 Ghost Pepper Hot Sauce LOVE THIS PLEASE TRY IT. I can put that shit on anything and it's now a smokey hot delight but if i put it some on my favorite Beef Lo Mein to be honest it no longer tastes like Lo Mein to me. But not with FrostBite. You can have all the heat you want but still have the Lo Mein taste i crave. I have only found two so far I really like for this specific job FrostBite and SEED RANCH UMAMI RESERVE This is also a sauce worth trying PS. SEED RANCH UMAMI RESERVE has a lot of flavor Chocolate Habanero's provide the heat but all the flavors melds with the flavors in Chinese food I love so much. God i need some noodles now.

I've seen Da Bomb Evolution in a couple of these lineup pics on this sub lately. I'm sure what's going on is they don't sell the original Da Bomb at Heatonist, but you can find Da Bomb Evolution. The simple truth is that you can find Da Bomb on Amazon. That said, don't buy Da Bomb. Just don't do that to yourself. I bought it to try it and now never open the bottle ever because it's so awful.
I bought some on Amazon a while ago. It sits in the cupboard, unused. I don't like it. It just tastes like muddy habanero to me.
I have reached the point where I don’t buy a lot of bottled hot sauces anymore because no matter how hot or delicious, I just go through it too fast.
I switched to using ground up Carolina reaper or scorpion pepper that I got on amazon for most of spicy needs.

I found the scorpion pepper one to be hotter than the reaper one, but that could be subjective, and both were PLENTY hot.
A couple shakes on top or mixed into whatever food I’m eating will bring the heat level up nicely. It will last a lot longer than most hot sauces that are mostly vinegar anyways.
Just another option to consider.

The bottle is about $10 and will last you quite a while. Since it is nothing but the pepper itself, you can add it to food to drastically raise the heat level without changing the flavors. Sometimes you want heat but maybe your hot sauce is made with something that may not pair well with the food you’re eating. This is where the powders come in handy. Hot sauces can be pretty pricey and it stinks that with a lot of the sauces what you’re paying for is usually a lot of vinegar or other cheaper ingredients.
We ordered the “trinity sampler” from Amazon and agree that the tequila and lime has great flavor mild taste, scotch bonnet is the hottest of the three and the red habanero our least favorite of the three. That being said, I actually like all of them, each has a unique flavor profile unlike anything I’ve tasted.
I think those are for the vegan wings. I'm guessing it's to make it closer to the look and feel of an actual wing section.
Otherwise, maybe try some cocktail picks.

I ordered a bag of those and can confirm they fit on all the bottles I've tried them on from heatonist so far. There are quite a few sauces that are very runny that should come with them but don't. Keeps friends/family from accidentally pouring out $3 worth of hot sauce onto their plate! Would be great if heatonist would start throwing extras of these in their boxes. I think you can order them for pennies each in bulk.
That said, my Last Dab Apollo has always been super thick. I'm going to try stirring it with a skewer next time I use it. Every time it's mentioned in this sub, everyone says theirs pours quickly. Mine most definitely does not.

Okay, so I've changed the filter for non-last dabbers to be only guests who ate the last wing without dabbing. That makes sense, right? Guests who straight up failed don't count. Eddie's also got his own filter now too, as does Babish.
Yeah, that one was out of stock for a long time. I finally tried it this last time they got it in stock, but I think I prefer the regular Classic. One thing you might try, I don't think the Garlic Classic came with an orifice reducer on it, but I put one on it.

They fit on almost all of the different bottles. I also pull them off of bottles when I finish one. They make the Garlic N Peperoncini sauce (and all the other thin sauces) last a lot longer. Especially if you have friends or family that don't know how fast some sauces come out of the bottle.

Then I pour it over rice and add my own meat. There's a thousand different ways to prepare it.
But that's it, I don't have a fancy "from scratch" recipe. Those boxes have everything needed for deliciousness.
I use basically just the simplest method possible.
Cap with fermentation lid, I bought these.
Place in a relatively cool dark place for a couple/few weeks. Every day or two I give the jar some tilts to see how much gas is being produced.
After I'm satisfied I just drain the peppers reserving a bit of brine, add some apple cider vinegar, and blitz everything in the nutribullet until as smooth as possible. Sometimes I add cilantro or some other flavor I may want to experiment with, but mostly I just love the way the peppers taste on their own.
I know this is a primitive recipe but if you have good peppers it doesn't need anything else IMO.

We buy this and put it in a clear plastic condiment squirt bottle.
For my money, green pepper cholula is the perfect blend of flavor and a hint of heat. And that bottle works out to $0.43/fl oz.
If you want something with a bit more heat, but still a great flavor on a budget, High River's "Tears of the Sun" is $6 a bottle.
I keep it simple. Prefrozen wings go in the fryer at 350 F for 12 minutes. Ain't nobody got time for brining, refrying, etc. When I want wings, I want them now. I recommend you double down on the lazy and get a proper fryer that filters and stores the oil for you to use next time. Plus, all the parts are stainless steel and go right in the dishwasher when it's done.

I dunno. Not much to say. In the early 2000s Dave’s Insanity Sauce was de facto hottest hot sauce out there. Apparently it put someone in the hospital when it was used in a chili competition (chili like with beans, not ‘hot chili’s’)
I’ve had it before and just a couple drops is enough to spice up a pot of spaghetti sauce. “Spice up” or “ruin,” depending on your taste/tolerance.

Those are the nice ones. There's another category of budget ones from like $20-60 all over Amazon from a hundred Chinese clone companies. They're hit or miss on quality as the reviews show, but I figured they're so cheap, why not give it a try. It has been great. The nicer ones offer better options, heated water, aerated water, air dryers, fancy remotes and all this, and that would be great but I don't want to pay for it and my hot water line is across the room from the toilet, so a cheapo is fine for me.
I got this one and it has been great. People in the reviews talked about it blasting your starfish skin off and wow they weren't kidding. The pressure twisty knob on this one is an illusion - realistically there's only Off or Peel Paint. So I got one of these twisty valves to go between the bidet hose and the main water pipe so I could fine tune the pressure to more reasonable levels and that has been great. You want some pressure to get that stuff off of you but not so much that your proctologist runs out of the room crying.
Wet butthole cleaning is the only way to go, the only way that makes sense, and sometimes it's nice to just let it run while you contemplate things and see if any more wants to come out. Toilet paper lasts forever now because you just need a couple squares to dab dry.

this is the best general hot sauce i have had. dirty dicks is definitely my favorite but the fruitiness of it limits what it would taste good on. queen majesty's scotch bonnet and ginger is also really good.
I began buying these varieties of ground up peppers on Amazon and have loved it. The link there is for a variety pack but they are available individually too.
With a lot of hot sauces made with super hot peppers you wind up paying a premium price for mostly vinegar. The sauce may be good but when you’re addicted to spicy food like I am it can get expensive. At about $10 a bottle I will get like 6 months of use out of one of these bottles and I am a very heavy user. Super hot liquid sauces just can’t compete.
The thing I like about these is that it’s nothing but the pepper ground up into a powder. You can add a few dashes to something and dramatically raise the heat level without covering everything in vinegar. They’re cost effective, too, so I keep a bottle at school, work, my parents house, my travel bag, etc.
Of the ones I have tried:
1) the red tail scorpion powder - my usual go-to. Really hot but once you can taste through the heat it has a good taste to it. Really good on cool ranch Doritos
2) Carolina reaper - similar heat to the scorpion pepper powder but doesn’t taste quite as good.
3 & 4) ghost pepper and smoked ghost pepper - open the cap and you can really smell the fruity floral notes (don’t smell too hard though! Use caution!). I really don’t notice too much of a difference between the smoked and regular version but I really like them nonetheless. The heat level is high but not as drastic as the scorpion or Carolina reaper variants. Might be a good stepping stone for most people.
5) habanero garlic powder - again, nowhere near as spicy as the others but I’ll be damned if it isn’t the best thing to put on pizza.

Mad Dog 357 Ghost Pepper is Amazing. its Very Hot and packed with a a wonderful sweet smokey flavor. I have hotter sauces i like but for both flavor AND heat i keep coming back to this one.
I picked up this one... works well enough and its rectangular which i think would hold more jerky then a circluar one, maybe? There are many options to choose from.
for the past 2 months I've been head over heels in love with Mad Dog 357 Ghost Pepper Hot Sauce I'm not sure if it's as hot as the Mad Dog they used on the show but i promise you it's a serious sauce and you wont be able to ignore it. I'll be honest I opened this bottle up this month because it had a cool shiny silver label with a bunch of Ghost's on it and it felt appropriate for Halloween but it now may be one of my favorite sauces now. Its got a wonderful surprisingly sweet deep smoky flavor with a back burn that builds and sticks around for a while. The burn flavor and after taste reminds me of slow cooked barbecue with a brown sugar dry rub
Nah, it's not hard. We fry wings and fries all the time. You just get a big jar and some cheesecloth and you can reuse the oil up to twice.
