First off, there's zero probability that's a 20Ah battery. Second, never trust chinabrand lithium in critical applications. Third, never EVER trust china brand lithium around WATER.
I work IT for a large corporation and as such I'm always decommissioning UPS battery trays where usually 1 battery is faulty and the rest are fine, so I've got batteries in all kinds of sizes from 1.2Ah to 12Ah and for me, personally, 7Ah is the sweet spot for weight/capacity. I've ordered several of the 7Ah MightyMax batteries from Amazon as well and been very happy with them.
Check the book for your fishfinder and see what the draw is. It should be 350-700mA, from there you/we can do the math to figure out your lifespan.
I run very large decklights, a mark-4 chirp w/ chartplotter on, and some other stuff too...and it's ALL 5Ah or 7Ah batteries for me and they always last the whole day or more.

I also wear a pair of neoprene dive boots. I found a gently used pair on eBay a few years ago and have never had wet/cold feet since. Order a size up so you can layer some socks underneath.
I use Real Time GPS Tracker 2. It sends pings to a server. It's also a good tool for loved ones to watch your progress. I always tell them to send help if I'm stuck in one place for longer than a day, but I usually have data throughout all of my trips so they can always contact me regardless. Either way though, it's a good way to log data and go over it after the trip.
Gotcha. I got this paddle on Amazon. I know it’s not a $300 carbon fiber, but it worked well to get me out on the water for now. This is the kayak I’m pushing around with it. It’s goes both solo and tandem, you just have to change the seat mount location. I’m sorry to say this is probably the worst time, both price and supply wise, to get into kayaking. I wear a UPF 50 long sleeve shirt every time I go out, and when I do yard work. I don’t find it too warm, and it’s better than skin cancer. I have a bunch of brands including Columbia, Hanes, Willit (Amazon), and a couple from Sam’s Club that were $5 each. Honestly none of them seem any different. They all feel the same to me. Take that however you will.
I also wear these, a hat, a neck gaiter, and sun gloves. If you feel like you’re overheating you can always jump in.

How many do you need for your Tamarack? I used to have a Tamarack and only kept the two scuppers under the seat plugged up. I sold that kayak (with the 2 scupper plugs in it), but have 2 scupper plugs left over that I don't use. I can mail them to you if you want, I have no use for them anymore.
They have umbrellas you can clip on the seat btw. It might not look 'cool' but it will keep you cooler for sure. It can easily come on/off.
In US they have one that has thousands of reviews, same exact thing if thats where you're at. Just make sure to get large if you do.. Nice thing is it cools your upper body down by keeping it out of the sun but it also allows for a place to clip a cheap USB style fan and if the fan takes a dunk, it'll get ruined but they are very cheap and most people dont flip their sit-on-tops routinely.

Yeah, the more perks and the bigger the transducer will be. A regular garmin striker 4, there’s a video on installation, it’s just a matter of buying a specific aluminum bracket which is very cheap. For the GT20-TM transducer (seen here) which comes with the 4cv, you don’t use the top hinge piece. For the plate that screws to the transducer, you screw it in, and cut off the excess square plastic around the transducer first. The lowrance plate is relatively cheap so no worries if you mess up. But you have to make a cut half of the front two plastic pieces halfway that stick out on the plate on the inside (there’s two in front and two in back). Your goal is to add two 12-hole mending plates (1.5 inch or 2 inch) to connect the transducer to the thimble. So it’s basically washers, mending plate, transducer plus thimble, mending plate, washers. Then you finish with nyloc nuts. It’s hard to visualize and I did not find a video for help but it’s a matter of making it fit.
Difficulty? It’s a pain but it’s relatively straightforward when you have the pieces. If you go with lowrance then it’s a painless installation. I should probably take a picture of it.

In my application, it just keeps things decently aligned and I use two bungees to “lock” each rod in its own slot. For you, I think it’ll allow rod butts through and prevent them from sliding about.
I bought this same kayak and liked it, but I ended up upgrading to another model. But what I almost did and would suggest to you, is order some rubber edge trim like in the link below and put around the edges of the console compartment hatch. It would likely make it less wobbly and could help with water leaking into the compartment, which I read was an issue.

Started out with this 7ah battery which would keep the Garmin powered all day. Now it's powered off the trolling motor battery, Dakota Lithium 54ah (weighs almost nothing). Still gives me a full day out on the water. The biggest hassle is cable management, I wish they had shorter setups specific to kayaks.
Check out NRS cam straps, they're high quality. I've used cheap straps and they end up fraying and the buckles wear out. My NRS straps are still going strong after two years. Never use ratchet straps, as you can tighten them too tight and damage your kayak. Always use cam straps.

I think my best purchase so far was a brush anchor. It's a small clamp that you can grip onto limbs, rocks, posts,etc. You have to visualize where you want to be facing when the line is tight and then clamp onto a corresponding anchor point. Lifetime makes good stuff. I have their Tamarack, and the Teton is pretty similar. I have two of these roof racks and they work great, they even come with cam straps to tie down. Bringing a dog onboard might be a bit of a stretch though, I’ve never tried that but I don’t think I’d have room in my tamarack
Is there a dagger in the middle? Are you fishing open water? I’d say no as you’ll lose all sorts of gear and might flip yourself if you’re on a cooler that isn’t mounted. Also sitting to paddle is extremely awkward, where would your rod(s) go while you stand to paddle ? If you’re willing to install tethers for everything you use and secure the cooler to the SUP maybe there’s a chance! I’d suggest looking at an inflatable pontoon for the price. The Yakima Sweet Roll setup works well on my factory cross bars (Subaru Outback). I also use the Seattle Sports Sherpak Suction Boat Roller Load Assist to avoid marking up the car. This setup allows me to load and unload by myself.

Here is the one I bought, I guess it was 89.99 originally, I did have a $10 off coupon. I honestly think it would be worth it for you, they can be a PITA to hoist up there. I bought it specifically for how much I can adjust it... the picture from Amazon does a good job at showing it off.
I would definitely consider used, there isn't a whole lot that can go wrong with these boats so 99% of the used ones will be perfectly seaworthy. I'd also definitely recommend a sit on top for stability while fishing, the Cobra brand kayaks seem to be much more stable than other brands due to their width and hull design. I bought my Cobra Fish n Dive on Craigslist for $350.
Roof racks can be pricey, my car is smaller than yours and I've been getting by fine using a foam block kit off amazon without a rack, however that can wear paint or damage door seals over time.
I wouldn't get a roof rack that requires modification to the roof of your car. That potentially could cause more damage than just strapping it to your roof.

Have you tried sealing the holes/screws with strong waterproof glue? That could make the yak usable. I drilled some holes for anchor mounts and that has let a tiny bit of water seep in every trip, about a quarter cup after maybe 4-5 hours on the water. I use gorilla glue that's waterproof and took a whole 24 hours to dry.

Guys have started posting about trying these on some groups I follow. Using double sided gorilla tape or weatherproof tape to secure them. Unsure of longevity or battery life but description says the batteries are replaceable.

I used mine with a clamp on Scotty arm just fine early on, but went with a copper mount and custom bracket eventually. It carry’s the whole kit, plus battery. I’ve also used it ice fishing, on flyins etc and it gets it done, just a bit clunky.

It's a Seastream Angler 120PD, kinda bottom line from a "company" owned by Feelfree. It's pretty damn heavy even with the pedal drive. I'm loading it on a Cherokee with a slight lift.
Basically I put one of those hitch extensions in my hitch, put the front of the kayak on the extension and slide it up on top. Gives me a 3rd tie down point for a stern line but I can't open the trunk, so all my gear has to come out through the doors. It makes it a lot easier with no real chance of damaging my car, but at 12.5 feet it's still a lot to deal with. I love doing it, it's just a lot and it's hard to convince myself to do that rather than go wading or walk the creek.

Pretty simple to add fuses, switches, chargers etc. to them too.
Running with the gate up and the yak resting on it is a poor idea for the stress it will put strain on the yak at that point.
I use one of these to carry a 12 foot yak in my truck, then just secure the lose bits in the back of the cab or in bags in the bed. I actually am able to keep my hard bed cover down. This extender works VERY well.

Yes, some splicing may be involved. If you have multiple splices to make in the same wire, soldered connections will typically perform better than crimped.
Thing I don't like about power poles is wha if your in a heavly branched area? I like to keep out of the sun when I kayak fish so that pole would be a constant worry for me. I'd install a few small tracks on one side at least(yakattack) . mount this hanging over the side of the boat and slap waterproof boxes in it, and bungee it closed.
You'd need to come up with what accessories to mount it to the rails, depending on your fab skills.

The trays are trash sonid replace them, and I only keep 3 to keep the weight down. Works great, comfortable, plenty of attachment points etc.
Regarding your cleat question. I got this on Amazon. Have not used it yet. But it mounts perfectly on my gear track.

It's a copy of the Wilderness Systems cart but has a big design improvement in that the front and rear bunk pieces come off so it breaks down much smaller and can fit inside larger hatches. It's also cheaper. I've never seen the Wilderness cart in person but this one seems just as well made. The wheels are big and the hubs are just round bars so it seems sand wheels would fit if you need them.

Mine is a Jackson bite angler. NIce because this is adjustable and I can use it on my wifes kayak as well.
I recall reading there was a stadium style seat that was elevated and a great replacement for those older crappy style seats. I did a quick search but couldn't find it. Maybe take the measurements and compare on Amazon for elevated stadium style seats. An example of what I vaguely remember it looked like is below. Sorry I couldn't find the specific one. Good luck
So I also have a CX-5 and it doesn't have a roof rack so I got on amazon and ordered this, I have 2 10' fishing kayaks that I can haul on it and it does ok. I did have to modify it slightly in order for it to function better, it comes with pre-drilled holes for you to put a bolt through to lock in the length you need, but I just drilled my own holes and stuck a bolt through it.

Usually when I'm set in position, I can use the drift sock and just stand to fish.
It kind of sounds like you fish shallow, so maybe a brush gripper would work depending on what cover is around you.
Pedal kayaks also have paddles you carry if you need them and/or your pedal breaks. In shallow water I stand and use a pin anchor to push myself around, so I don't have to sit back down.

I bought this and have been using it since April on my 3 waters big fish 105. Been working great, no complaints. Most of the time.im using for 100 yards or less but I've used it for longer treks as well as over pretty tough stuff with roots and rocks and it's held up fine. I don't see it causing any damage to my boat, don't think it will hurt anything but idk
