Deluxe will just work. But you'll also need the RCT2 files, for this the Triple Thrill Pack works.
You can follow the instructions here to download RCT2 on Steam for macOS, but if you replace the numbers with 285310 285312
it will also download RCT1 Deluxe in the same way.
You need an install of Rollercoaster Tycoon 2 somewhere on your machine. It's available inexpensively on GOG, Steam, and elsewhere. Once it's there, you use the OpenRCT2 launcher to play. It auto-detects most of the default installation locations.

These options are only available when playing the reimplementation 'OpenRCT2'. You asked in the subreddit for this reimplementation, so we assume you play it. 😜 The RCT2 Triple Thrill pack on Steam does not support these options.
You can get OpenRCT2 for free though, it adds lots of new features and it only requires a copy of the Triple Thrill pack which you already have installed! See here, I recommend downloading the Launcher to keep the game easily updated.
So, first off, this isn't the sub for troubleshooting RCT2 or RCT3. This is a sub for OpenRCT2.
You've provided us with very little information to go off of. What version of the game are you running? What happens when you try to launch it? Are you using OpenRCT2 or the vanilla game?
We can't magically figure out what's wrong with your computer.
If you don't want to pay more money you can use the demo version. This is sufficient to run OpenRCT2. There might also be a way to extract the necessary files from the mobile app, but it probably requires root.
If you already own the game, just download the demo from https://openrct2.org/download-demo. The demo includes WW and TT, and the demo time limit is removed once openRCT2 is installed.

One thing that isn't mentioned often is that having an admission on your park reduces the prices you can charge on your rides by 75%.

The application should be the OpenRCT2 icon. You just download-click it to launch. You can move the entire file into your Applications folder to be cleaner.
To get a version of RCT2 for the assets, you can either get the full game or just the assets. Wiki is here: https://github.com/OpenRCT2/OpenRCT2/wiki/Required-RCT2-files
One way to do this is download and install Wineskin: http://wineskin.urgesoftware.com/tiki-index.php
Then install an engine, and Create a New Blank Wrapper. It will ask you to choose a setup executable, so choose the RCT2 one from the disk in your drive. Setup should proceed normally.
Once it's done, open your home folder, and then the Applications folder (NOT your top-level Applications folder with all the system apps), then Wineskin, then right-click the Roller Coaster Tycoon 2 one and click "Show Package Contents." Then navigate to drive_c, Program Files/Infogrames Entertainment etc or wherever the installed files are and move them out of that folder. Then you can delete the .app bundle in the Wineskin folder.
(hopefully these instructions are enough to get you going, if you need more detail let me know)

Use the program Everything. It's good for finding files you don't know the location of. It's much, much better than any operating system's built-in search because it indexes your system.
You're going to need to know info about it like the extension or part of the filename and also it will help a lot to understand old DOS-style wildcards.
For example, you can search things like:

The STEAM reviews are great. I only noticed it because I was looking for RCT2 to play openRCT2 & RollerCoaster Tycoon Classic was VERY, VERY cheap on GG.deals so I was thinking about getting it instead of RCT2
It was tested on OSX 10.11 and this is system we can consider "supported", it may work on 10.10 but not sure. The support may get added, depending on how things play out.
As OS X does some fancy things with the stack and requires modifications to quite a low-level code, it was a bit harder work than Linux. This is a change which affects all supported platforms. The approach is very similar to the one I used for Linux support, but done in a slightly different way. It may be slightly more reliable and does not require openrct2.exe
at runtime, but rather only at compile time. For these reasons I'm considering switching Linux to the same approach. It would make releases also somewhat easier, as we won't have to depend on hardcoded path to the other file, which would pollute your /usr/bin

You need to either purchase the original RCT2 (ideal, legal) or torrent/pirate it (not legal, but free).

You can Google around if you want to pirate it and don't know how. I won't suggest this since I believe in supporting the creators, plus it is really cheap to buy.

As for the version number appearing in the main menu, I really wouldn't worry about it. AFAIK that's a string that has to be manually updated. If an official source says it's 2.2, then it's 2.2.
I have it running on my mac, you do not (and don't want) to use wine. Download the demo .ZIP file from here here , unzip it and then run Openrct2 and tell it where that unzipped folder is (and don't delete or move it afterwards).

Often everything is automatic, otherwise it will prompt for the installation path of the game. It should be able to run on the Triple Thrill Pack version.
If installed you can add the path of the installed RCT1 game in the options menu (top right). In the same options you can also change the language. If I believe already installed with it.
There's a demo version of the game which should contain the required assets to play OpenRCT2 (not sure if it contains all the assets though). You will need to obtain the game assets somehow in order to play OpenRCT2.
Well, does a build from the downloads page work?
Openrct2 works fine on Linux (on which chromeos is based), and there are ways to get Linux apps working on chromeos IRC. I believe you could even use the Ubuntu app repositories in chromeos in which you can also find openrct. Maybe somebody add /r/Crostini can help if you show this?
For the files from the official rct2 you might be able to use something called "innoextract" (which can also be found in the Ubuntu app repos) to extract the files you need from the executable if downloaded from gog.com (because this one is DRM free).
It is probably not an easy process and you have to figure out a lot by yourself, but it is not impossible.
The servers usually run on the latest development build, which is updated everytime a commit is made. Most users use the launcher which will update the game automatically before launching: https://openrct2.org/downloads
If you bought rct2 on gog and don't want to deal with commands or wine you can download the files you need here: https://openrct2.org/download-demo . Simply download the ZIP file (532.28 MB), unzip it to a location of your choice, and open OpenRCT2 and direct it to the folder you unzipped.
I didn't realize that the website i found them on is the unofficial site. I was able to dig around, and found that there's a .com and also a .org version of the site.

Yeah, it's just Ubuntu being Ubuntu. Nothing I can do about it, but we're working on getting PPA set up… eventually. So at least you could have builds already done, so no need to install dev packages. What I can recommend (in case you still want to compile) is to either set up docker or manually install sdl2 dev and provide pkgconfig path or the best of them all switch to a better distro
i just went through the process of getting RTC2 on my mac two days ago.
I bought RCT2 triple thrill pack on GOG.com for 9.99. youll get an email but you will find the download on GOG under your downloads tab on the top of the homepage.
i downloaded wine and converted it to mac compatability.
I made a desktop folder with wine and the .exe file of RCT2
do not open RCT2 using wine or it will bug the fuck out.
I went to openRTC2 site and downloaded that, put it in the desktop folder
when it opened openrct2 it asked for a location of the file and I directed the .exe in the desktop folder to it and then it immediately worked and i got menu screen. make sure openRTC2 is full screen or the mac trackpad will sorta bug when you click. when you save your game when youre playing, save it to that same esktop folder so its easier to find if you ever cant access it using the game menu
