No worries and I appreciate your concern and input! We’re keeping the pets separate, because honestly I’m not emotionally ready for a new dog yet since I had to put my Great Pyrenees (Prince) down in February. This dog is mostly my dads and he’s retired so he’s here most of the day.
The cats and the rats are mine, but the cats pretty much just stay in my room on the opposite side of the house to my dad’s room (where the dog stays.) I have a gate separating the small hallway into my part of the house (two bedrooms and a bathroom,) but I’m going to get one with a cat door soon. We’re also going to crate train the dog so he won’t just be loose when no one is here. My rats are in a Critter Nation in the living room so I’m not worried about them since I would never just put them near the dog outside of the cage.

Just google raised dog bed. They just have long metal bits at each end so if I buy a size small enough to fit in her crate then there’s not enough area for a dog her size to fit comfortably on.

Yea so my assumption is that if they have to compensate for a missing limb that arthritis in the existing legs could come along faster? I’m just generalizing because that can happen with humans too. I looked up specialized harnesses and they actually have some for dogs missing limbs.

Have you tried soaking her kibble in warm water for a while and mixing it with whatever meat your giving her now?
My boy is picky too. He doesn't like plain kibble. I soak his kibble in a little warm water and mix in some wet food, something like this, or some of the vegetables and meat I am eating. He gets his nutrition from the dog food but has some different flavours so it isn't like eating gruel.
I stick to u/katsock meal routine too. We have breakfast and dinner. If you give in and give them something else they learn pretty quickly that they can get something better if they just hold out.

Have you tried one of those "interactive feeders" that dispenses a few bites at a time. It might distract his attention away from the cupboards.

Try some seasonal marketing, maybe some reindeer antlers or photoshop his nose red? You can add a caption like "it is hard being a reindeer in the desert."
I don’t know if he will wear a full Santa costume, but you can try for a hat and scarf and caption his photos "take me ho ho home!"

Focus on the basics for now. Just get him to respond to his name, nothing else at first.
Don’t worry about following scent trails for now, that’s advanced nose work. There are skills to build before he gets there. For training, other than come when called, start with basic obedience like sit, stay, down, and leash walking (use a harness). Once he has those well you can build on that a lot.
R+ training is the only way to go with any dog, it’s the proven way that is effective long term at training the wanted behavior.
You can get him puzzles to engage him with mental stimulation (which is as important as physical exercise). Just Amazon search “dog puzzle toys” and you will see a lot of options that require finding treats. Snuffle mats are great for this.
For bedtime habits, work on crate training. Make it a comfortable place with a nice bed. Cover it on all sides except the door at all times with a dark blanket and when the door is closed and locked cover the door too. When he is inside, you can use a Snuggle Puppy, it’s a stuffed dog with a heating element and “heartbeat.” It helps the dog feel less alone.
You can also put a high value treat like a Bully Stick or Kong in the crate to build a positive association with the crate.
You have a bed you like, make sure the crate is a bed he likes.
Every dog adjust at an individual pace, but you want to start with good habits early. 3-3-3 is a good guideline, but it’s just a guideline.

I suggest covering the crate on all sides but the door (and covering the door overnight) and using a bed that covers the whole floor.
One thing you can do now is start on basic obedience, nothing really complicated. Start with name recognition and “come when called.” He just needs to be more confident and that will come with time and through positive reinforcement training, he needs both.
I’ve seen dogs go from extremely shy and hiding in their crate to super social, it just takes time and patience.
You should check this book... It really helped us with our American Bulldog...

It will give you some foundations for positive reinforcement behavior modification. It's not going to answer all of you questions but it's a great start. Just be patient and try and reward good behaviors and either ignore or lightly discourage unwanted behaviors.

It definitely keeps her from falling into the leg area of the car when we stop short. Poor thing got dumped into that area quite a few times when she was tiny (before we bought it) and she couldn’t jump back onto the seat yet 😭
Oh man, I don't really have great advice for this either, but I did come here to say that you can apply CLEAR aloe gel to your dog safely to help soothe the damaged skin while he tries to heal up, assuming there are no other issues. Check with your vet to ensure there's no conflict with his medications.
Also if you wanna try the booties route again, the only way I could get Sport Pawks to actually stay on my dog was to tie shoelaces over them just above the ankle, snug enough so that her foot wouldn't slip out, but loose enough that it wouldn't cut the circulation. I used flat nylon shoelaces since they have a little stretch and won't feel lumpy, and if you double-knot them, you'r dog may enjoy the challenge of trying to undo the knot. I also fold the top of the sock down over the laces to keep them from snagging on something and to help keep the laces in place.

Start calling breed rescues out of the area, everywhere. Let them know that he is in danger of being put down and why. You can't hide that. Also let them know his good qualities. Offer to pay for his care or as much as you can. Most rescues are full. Taking on a dog with a bite history is tough. If you can offer to offset the costs it will help.
Or you can try to get x-pens and have him segregated from anyone else except for times when you know he's safe. I have a reactive dog and can manage the situation with care and x-pens. It allows the dog to be in the room but keeps everyone safe. The pen is moved to the side when it's people he's safe with. One can be looped to form one pen, it can be opened to run like a zig zag fence, or you can get more than one to make a bigger area. A friend uses them to separate two dogs who fight. The x-pen divides her room in half. Her husband sits on the lazyboy with one dog and she's on the sofa with the other. Just a couple of feet apart.
I'd also ask the vet to recommend a behaviorist. Just because he's older doesn't mean his issues can't be addressed. You might want to seek more behavior advice at /r/reactivedogs.

Real answer: Get a DNA test - this one just requires a saliva sample that you mail off, and about 3-4 weeks later the company sends you a booklet or PDF with your dog's breed mix breakdown.
Ultimately, though, beyond being able to tell people what your dog is when they ask, knowing the breed mix doesn't really tell you anything about what to expect as your pup matures, behavior- and personality-wise, beyond a handful of normal puppy behaviors that just about all dogs exhibit at one time or another. Dogs are individuals in this respect; if you want a well-trained, friendly dog, then you have to train and socialize it, no matter what color it is or what its face looks like.
