Recently many optimizations were merged in OpenMW. I've been playing with it and I am very satisfied with the performance. Even with shadows and distant land active it runs smoothly.
So I suggest you to download and test the nightlies offered in the official page. I think you'll be satisfied.
Caverns Overhaul is still available on ModDB, but I'm not sure if it's the most current version.

Well, Better Bodies is pretty much the only character model mod I'm aware of, so if you don't like that one you might be out of luck. There are a few retextures for BB you could try, though. I use Westly's Fit Body Textures for Better Bodies myself. He also has a Higher Resolution retexture mod for BB, but it's only for the female character models unfortunately. (I actually use the Bosmer texture files out of that, since I play a Bosmer. I skipped the rest as they're almost unnecessarily high res.)
For faces you've got a lot more options, though. I don't know what mod you tried, but...there's Races Redone, Better Heads, Westly has a head pack or two, etc., etc. I know STEP recommends Races Redone. I don't remember what MGSO includes. Google brought up this page, which should be useful in comparing some of the older head mods. It doesn't include newer mods like Races Redone.
Also, tbh, there's pretty much always going to be some amount of awkwardness and uncanny valley in effect with Morrowind's character models, even with mods to improve on them. It's just the nature and age of the beast.

There are some more infos on OpenMW-CS over there. I'm not in any way involved with OpenMW, so I can't really tell you anything useful about it.
OpenMW is a free/opensource reimplementation of the Morrowind engine (it doesn't mean the game is free, it only provides the engine and needs the original data files). The first, most obvious, interest in using it is to play Morrowind on platforms it was never released for (MacOS, Linux, Android...). It also has a few features that were not in vanilla Morrowind (controller support, widescreen/higher resolutions support...).
Another interest is that it handles mods differently as vanilla Morrowind, as it allows them to have their own directory rather than overwriting the original files. It's easy to enable/disable mods at will or choose in which order they are loaded.
On the downside, as it's still in development, perfs are not yet really optimized and it lacks some features (like shadows). Also, it has its own implementation of the scripting system (which makes some mods incompatible).
I think the best option would be to try out some more basic solutions then just check the 7-Zip forums to see if anyone's had a similar issue, or ask about it if there isn't. https://www.7-zip.org/support.html links to the forums
you could also try the native .7z archive manager, probably it is going to be the most up-to-date with the file format upgrades...
[EDIT] also some useful info about possible bug/incompatibility fix (the gist of it is: in case of errors in Windows 10, it's recommended to switch off the option "Use large memory pages" in 7-Zip / Tools / Options / Settings, if you switched it before)

Just to clarify this post, they are working on Lua support in engine, but are specifically not supporting mwse-lua, as stated in there above announcement.

No, Morrowind has been made in 2002, 1024x768 resolution was top notch, dialog windows are not engineered for wider screens we have today.
in theory, you could use some resource hacking tool (like e.g. resource hacker) to patch the executable and enlarge windows controls layout, but it is always a hit/miss try in my experience, something works and something don't, you chanage 1 thing, try it, it works, change another, it doesn't work any more and so on...
