In this example “olduğumu” is in place of “i was” , the one you said “olduğunu” would be used in place of “it was/you were” now check this;
Annem tavuğun buzdolabında olduğunu söyledi. (My mother told that the chicken was in the fridge.)

The “İstanbul Yabancılar için Türkçe” textbook series is a pretty popular choice for textbooks/workbooks that goes from A1 to C1. Here’s a link to buy all of them, but you can of course buy them separately as well.
Check "storytell" for audiobooks. I use it and I LOVE it. You can make reader go faster or slower. I think it will serve you well. you should definitely check it out. I'm leaving the link and I hope its not against the rules.

They build up in complexity, but even so can be very difficult at first. However, with enough practice you develop the habits you need to be able to speak correctly. For someone who's had quite a lot of exposure to Turkish, they shouldn't be too bad.
