Why not learn a new language via contributing? You don't have to maintain the whole codebase, you just need to fix a bug here and there. The most used FOSS projects have very complex codebases, yes, but they also have the most eyes on it, which means the most issues and bugs reported. For instance, just from googling in response to my question, one of my most used foss projects is Infinity for Reddit, which has 161 issues at the time of this post. Again, that was just from a quick contextual google search - no actual time looking for ways to contribute. I also just noticed, at first glance, that this project has no unit tests, so thats a stupid easy contribution or 100 right there.

It does not. For multiple reasons.
First, you can see Inifinity's implementation there - there's nothing specific to Android 12, everything used there works back to Android 8.1. Those APIs to fetch colours from the wallpaper have been around since then, and are not using the newly added colour constants. Instead, Infinity alters the colours from the wallpaper in its on way to try to get something usable. If you end up with something that matches the system's Material You settings, that's pure luck (and if you change the theme in your device's settings, it's not going to match anymore).
Second, even if such an API existed already (as far as I know it doesn't, it's just the list of colours), apps couldn't be published on the Play Store using them yet - apps targeting Android 12 APIs need to wait until beta 4 is released to be published.
Third, the dynamic colours are only part of the whole Material You thing. There are new UI components/differences in look and behaviour (the toolbar and switch are the first two that comes to my mind). As of today, there's nothing released by Google around that, not even specs for designers.
So, no, Infinity for Reddit does not "use the Material You API".

I made a Pull request. This is my first time doing such a thing, so I apologise if I made a mistake with this, hopefully you can still access the files.
Basically, it uses the system variables as colours in the vector file for the icon. It doesn't rely on the toggle in the android system, so you will need to put the toggle for the adaptive icon inside of the app. I hope this helps.
i was so pissed of by stock reddit bugs i started using infinity reddit its also foss and has an inbuilt option to stream imgur redgifs and gfycat vidoes like a regular reddit video and many other features note : keep original reddit for notifications , infinity notifications rearly work

I agree it would be helpful to be able to manually arrange the order of subreddits in Infinity, as in other apps (like Boost).
There is an open issue for this request on the Infinity Github site (see issue #14). So perhaps this will be prioritized and implemented.

I use Infinity for android. It has a very good interface and is open source. Source code is available here: https://github.com/Docile-Alligator/Infinity-For-Reddit . And it is available in f-droid and playstore.

For sure, and I too have trust issues with software like that. That's part of the reason why I chose infinity. It's FOSS.
Being open source isn't a 100% guarantee there is no malicious code in the app. It's not even really a 1% guarantee, from a purely logical standpoint. However, the same can be said for official closed source apps. Being open source allows for YOU to self audit the software as you choose, but also allows for anyone else to do so. Fdroid apps are not audited for security, but fdroid builds every binary from source and signs it, with minor tests for permissions (ie, making you aware that the app uses network, etc).
From most standpoints, FOSS software is much safer than closed source software.

You know, you can use unofficial apps that have more features, don't invade your privacy, AND have less bloat. You could try any one of those. I use Infinity for Reddit, which is FOSS.
Someone on github made a redesign of the app to declutter the interface and the dev seemed interested in implementing the changes. I agree that the app is very clutered.
