By default the iPod file system makes it so you can't use iTunes to transfer the music off it.
You could either use a third party tool like: Sharepod
Or you could physically move the files by going to your iPod in My Computer, then allowing you to see hidden folders by pressing Organise > Folder and Search Options > press the tab View > under Hidden files and folders, press "Show Hidden files, folders and drives" > then press apply > then close.
A hidden file should appear in your ipod drive, you can open this, inside that will be a folder called Music, back that up, all though the file names will be different, when you play them in iTunes or any other program they will revert back to normal.
Download Sharepod, connect your iPod and copy all your music over to the computer you're using now. Reformat/wipe your iPod, resync music back from your computer to your iPod. Done.
I'm not sure about foobar, but you should be able to use Sharepod to at least back up the music/videos you have on there, and then resync it. As far as your photos, you should be able to just access you iPhone from My Computer and copy them off. Apps you've purchased should be associated with your iTunes account.
Edit: I feel like there should be a better way to do this, am I right? Is there some way to tell iTunes "Hey, I want my device in its current state to be backed up, don't wipe everything."?

If you use Windows, SharePod is free and will give you full access to your IOS device. I walked my niece through it over the phone after she had a hard disk crash to restore her library.

iTunes seems to have an orgasm every time it deletes your media. because it really likes to do that. At this point, if you plug in your iphone/ipod on your computer and try to sync ringtones, it will first erase EVERYTHING. it really sucks.
try Sharepod if you are trying to add new media from another computer and don't feel like losing your entire library.
So my instructions are the same. Your music should move to C:\Users\Music\iTunes or something... It will tell you in iTunes Preferences > Advanced and the location of your music.

I haven't had to do this since my first iPhone years ago, but back then I used SharePod and it always worked for me. I'm assuming this is one of the paid applications you're talking about, but you can use the discontinued version at the bottom of the download page for free, I believe.
You could try these steps here, or a program like SharePod (I believe the old version 3 at the bottom of the page is freeware.)
On windows there is a free app called SharePod

and run that on Windows to remove the music from the device prior to a wipe.

If your music came from...other...sources, download SharePod (Windows only). This nifty program will allow you to copy all the tracks from your iPod to your PC for free, without any additional bullshit.
I use sharepod. It is just an executable, without install. I drag in music et voila, done.
You can also put the executable on the iPod itself and share the music on it with other peoples pc's without them needing any special software it then puts the files in neat folders Artist/Album/Song.mp3.
It doesn't "sync" though so you need to manually copy music onto your iPod, which personally I like because I keep my music on an external HDD which isn't always connected.
I've had good luck with SharePod for copying music off my iPhone, although it can be somewhat finicky with detecting the phone and may require some fiddling-with.
I was the hero of the day once when someone's laptop died and they wanted to save their music collection from an iPod though. When it works it's heroic! :)
When it erases because it's syncing to a new library, it should not erase everything, just stuff that is a copyright issue. Photos, contacts and the like can be synced from phone to computer.

Whenever we got new computers, or new iPods, I was always in charge of doing this for everyone in the family. It was really annoying, until I found this program. I don't know to what extent that can help you, but it's worth a shot. Good luck!
Dropbox is a wonderful service and direct copying (via USB drive) is easier, but I think you're probably looking for something like Sharepod. I've used it several times on friends' PCs, and, thus far, it's worked great (and is free and a self-contained .EXE, though it does seem to generate some temporary/catalog files).

Its actually the id3 tags that are coded. I came across http://www.getsharepod.com you could give it a shot or dragging the files into itunes and see if it re ids them. I cant test since im not at home :p
PC? Sharepod before version 4 was free and worked well. The current version isn't that expensive at $20 for either PC or Mac.
You can likely find the 3.9.9 version out there is you look.

I haven't used it in a looong time, but Sharepod used to do exactly that.
If you can't get that to work, what's the possibility of pulling the hard drive out of your old laptop? Depending on the make/model, sometimes you just have to remove 2 screws and it'll pop out. From there you could use something like these or this to transfer files off your old HD.
Well, you can backup everything but the music. See this screenshot for a full list of what you can back up.
If you can borrow a friend's computer for a few minutes, you could use SharePod to backup your music, then restore it after.
There's a free program called Sharepod that can do the music for you, but it requires an undertaking of the Reddit Code of Honor. Repeat after me:

If you have access to the old hard disk from the original computer that you used to sync to, there are a few folders other than just the iTunes folder you need to copy. If you get all these folders, the iPod will sync to the new computer like it was the original one.

Before you sync it with iTunes, get the music off with SharePod if you're using Windows or DeTune if you're using a Mac. When either is finished, add the music to iTunes on the computer she'll be using and then sync it. It should keep the music that's on it if you follow the instructions here, but now you can be positive she won't lose anything.
Fuck every single thing about iTunes. It's a horrible piece of bloatware that almost never does what you want it to.
I found this program called SharePod that I use instead. It's super minimalistic, taking up only 5 megabytes of space, and you don't even need to install it. Better still, it actually does the things you'd expect from a program like this, including playlist, photo and video management, in addition to drag and drop functionality for any mp3 files on your computer.

Try running sharepod and see if it can read it. That's the app I use for backing up my iPod.
Sharepod. I've used sharepod for years and never had a problem with it.
All you need to do is make sure itunes isn't on when you start it up. Then it'll open up and show you the contents of your ipod (much like how itunes does) and from there you can just drag and drop the music/videos/or pictures from your device onto your computer.
