If you don't want to be locked in to the Microsoft system and would rather self-host and own your own data, trilium is a powerful note-taking application with plenty of features. It does require some technical expertise to self-host applications but you can also run it on the desktop via downloading an executable (so it's just like a regular program).
I am a huge fan of Trilium, which is a Personal Knowledge Manager. It can be run stand alone, but the server is great for syncing across devices, or accessing from the web.

I use trilium notes. I really like how every note has an ID and can be placed at multiple locations within the note higharchy. It is also extremely extendable, you can write your own JavaScript inside the application itself if you want to generate visualizations of your notes. Also everything is stored in a sqlite database which makes querying your notes pretty easy.

I've been using Trilium specifically because I wanted a self-hosted option and Notion hasn't delivered one, though I don't know if you could actually call my setup "offline"-- it runs on my NAS in docker and I access it almost exclusively via the web front-end.
But if you run it directly on a windows machine, it's entirely offline. It's not as.... polished.... as Notion, but it certainly seems more powerful, especially if you have some coding background (or want to learn a little).
The dev is very responsive and active.

No. There are only the clients for Linux and Windows (there is also one for MacOS, but this is not officially supported) and the optionally usable server with which you can access the notes on the move, for example with a mobile phone. There is an extra frontend for this (https://github.com/zadam/trilium/wiki/Mobile-frontend).
Ok, alors j'essaye en français (Je vis en France depuis quelque temps mais en faisant tous en anglais ou italien mon Français écrit c'est pire que mon anglais...) : la seule solution que je connaisse est Emacs avec un peu de paquets dédié, c'est la solution que j'utilise pour tous, est en fait très semple par apport au services ZK à la page moderne, est sûr, efficace, confortable, fantastique en général. Mais n'est pas un logiciel moderne tous pointer et cliquer sans lire ni étudier rien que son interface graphique.
C'est à dire, je le conseil mais il faut prévoir quelques mois de tranquille étude, par exemple les séries de tutoriels vidéos sur youtube (Mike Zamansky, Rainer König, Uncle Dave etc), peut être lire "Mastering Emacs" et surtout bâtir peu à peu son propre Emacs, coupé sur ça propre taille, avec ce que tu as appris, ce que tu veux. Au début c'est difficile, après petit à petit tout commence à prendre forme et dans quelque temps tu peux vraiment commencer à travailler pas plus su Emacs pour Emacs, mais avec Emacs pour ce que tu a a faire.

Trilium (https://github.com/zadam/trilium) is my go-to solution. It's basically markdown plus a wysiwyg editor, it supports code snippets with syntax highlighting, a powerful search, nested notes in a tree, image paste, optional sync (to your own server), and you can even run Javascript snippets (due to its extensibility model) right out of the box.
I'm working on an app which is built to handle large number of notes. I currently have about 10 000 notes in my document, but I also test it with up to 100 000 notes. You can check it out here.

Those are the two I can think of at the moment. I had a friend embed her portfolio link in a QR code but that may cause screening software to throw a fit. I would show it in an interview when I got one but getting an employer to look before that is tough.

I pirated a couple dozen books (Libgen/B-OK) and got to reading (only 10ish finished, a few tossed, more keep getting added). Some have been garbage, some have been great, all were free. I look for the newest books and skip any books that seem like it's just a giant list of function definitions. I did have coding experience but I'm not much of a programmer (one job fixing bugs after university for a few years).
Many books start with the intro stuff (variables, loops, conditional statements, arrays, etc) and once you get those, you can skip the first few chapters of future books. After the intro stuff, look at object oriented books as the next step (IMO), and then modules like Pandas/Matplotlib/Plotly (there are probably newer/better ones too, I'm no expert).
Calibre is good for e-books, Trilium Notes is my preferred note taking program (beat out OneNote and EverNote) if you don't already have a preference.

Stel alle vragen over alles, vraag om documentatie en lees alles door wat je kunt vinden.
Voor je verslag: maak backups (op drive/dropbox of github als je er zo eentje bent). Hou je zooi op orde, anders ben je driekwart van de tijd bezig met zoeken naar dingen of raak je gewoon ook dingen kwijt.
Voor notities: gebruik een notitie-organizer zoals Trilium of Obsidian of Evernote oid. (ik gebruik die eerste). Daar kun je lekker makkelijk notities mee organiseren, afbeeldingen en complete websites mee opslaan, en vervolgens makkelijk terugzoeken zodat je altijd je bronnen beschikbaar hebt.

Fair warning I haven't had much time to try it out, but it seems very attractive in the fact that it is flexible, able to be self-hosted, seems to be very well featured, and have some good security features

I've also used OneNote before and like it, just don't feel like giving Microsoft money. I just use this to keep notes, links, and backups to things I find and things I lab and figure out mid-match. Pretty easy to organize it however you want. You can just download and run it, or you can host it on a server to access it on a network.
I can't believe Trilium is only mentioned once. It's by far the best open source self-hosted note-taking (and 2nd brain) app with such awesome features! It blew my mind and now I only use that... Trilium Github page

Me and my wife use it for shopping lists. Once logged in you never seem to get logged out so it's extremely fast in that sense. We cross things off the list as we go through the store on different isles.

I have been running this on a server then sync to the desktop app for a while. It seems to work pretty well and might be worth giving a try.

I personally love Trilium Notes. It's free and loaded with well designed features. Has the ability to code behind the scenes if you want to make custom tools as well. Markdown and Mermaid.js built in.

Bartering. I can trade 2 loaves of my bread ($5 value in store) for $4 worth of my neighbor's eggs (a dozen). He technically gets a higher price (he would spend more on bread), neither of us pay sales tax, and we're both pretty satisfied with the trade. If the pot is sweetened by perks of friendship (free drives, an extra set of hands to lift something, etc) the value is increased. I can also turn eggs into higher end items like hamburger buns, breakfast sandwiches, and mayonnaise.
Sharing food prep with friends and neighbors. Making food almost always gets cheaper in bulk. Spreading the work, storage, and having multiple meals prepped at once for variety is a great way to bring down food costs and time spent cooking. You mentioned garden sharing already, I'll add canning to that so the produce lasts longer.
Find a group with similar interests/mindsets and look for land to share. I would live in shared housing growing food and making products (wood working workshops aren't hard to build but are costly, 3d printing, CNC, plotting, and other options also exist for automated creation). I am fine with living in a tiny house and doing most of my interests in a nearby shed.
Less than legal, piracy. Books on every topic are free and can be easily downloaded. There are great tools for taking notes and learning that weren't available until fairly recently. University courses often cover one book and many of those books can be gotten through in a week (especially the intro programming ones). No prior generation (I'm 35+ and couldn't download books for most of my life) has had the opportunity to read an unlimited amount of textbooks for free. I prefer books for theory, YouTube to show techniques, and Trillium Notes for notetaking (its free).

The desktop app will sync with a server can be used in web browser with rich text editor, keeps history. Was the perfect note taking solution for me.
Closest I've found is trillium notes but it also does WYSIWYG like obsidian.

Otherwise I've been searching as well and it is really hard to find anything that checks all the boxes that I like in OneNote.
The OneNote canvas is nice but it’s also very unstructured, so difficult to export in any format but pdf or image.

I e tried most of the self hosted OneNote alternatives m, and it has been a joy switching to Trilium. It supports note cloning which OneNote never did, it supports interactive note visualization maps, revision history, scripting, quick fuzzy search, public note sharing with a simple toggle, password protected notes, extensive note tagging, multiple note tabs and zen mode, full wysiwyg editor (with markdown syntax completion and markdown export), unlimited note nesting, note syncing, many configuration options,full note export in various formats, active development, cross platform, easy docker deployment, and good documentation.
The main downsides are: it doesn’t have native mobile apps - you must use the mobile browser version (which works quite well). It also is single user, so only one login can be created (you would need to share an instance and use protected notes to if you want other users to be able to access it or you can spin up another instance since it’s so easy.
You can override it with custom theme CSS, and this would be better as it wouldn't get reverted on updates.

I've not used this in particular, but assuming it's the one at https://github.com/zadam/trilium/ then in its source control it has an images directory and that particular image seems to be icon-grey.png. Presumably if you replace that file it will use your version, so I'd look where it's installed and see if there's an images/ directory with that (and other) files in it.
I can create pages with all the information I need, and create hyperlinks to easily navigate between pages. It's all stored locally on my machine so searching is extremely quick.

As an example of this fact, org-edna defines new :BLOCKER: and :TRIGGER: properties that allow you to define dependencies between tasks and trigger todo changes in multiple tasks when you change the todo state of a given one, such as explained in Karl's post.
Another example of links being in property drawers is that, when using the org-roam backlink feature, these links inside property drawers from org-edna are not considered backlinks. The backlinks of a given org-mode node are all the nodes that link back to the former.

In my writings, I never say that something is good or bad. I just try to show how things work and I like to show how they are implemented using code snippets. Nothing beyond that. I don't share my opinion about the design nor the implementation.

org-edna links work this way and allow yo to define triggers and blockers for a task in this way that do not count as backlinks in org-roam since they are not proper org links.

I use Trilium for notekeeping and sharing. Very great app. Work with desktop app (Electron) and server app (web browser).
You can share somes part of your hierarchy notes.
Cannot be host on shared hosting but you can think about a VPS or using a paid service of Trilium : https://trilium.cc/pricing
Don't forget missing background sync, sometimes weird encryption key behaviour and weird themes.
But seriously, it's FOSS. And encryption itself is seldom. I would only consider trilium an alternative (it has even note sharing).
On mobile and happy to give more details later, but I recently discovered trilium after bouncing between various notes apps for years. I absolutely love it. It's got a couple of quirks to be aware of, but overall a pleasure to use and by far the best thing I've encountered.
Docker setup was super easy even for docker. Has bare bones mobile app for adding notes. Desktop app is flawless and featureful Server sync works well WebUI is full featured, but that's where the quirks mostly show up

I'm loving Trilium, it's a simple UI but still very powerful. Pretty easy to setup, can run either only on one device locally, or if you want to use the server version on your local network, that also works.
Used others before like Jopin, QOwnNotes, Nextcloud, but never felt right.
When it's something I want to share with many other people, I use a wiki software like Wiki.js
I am in the process of setting up outline ( https://getoutline.com ) as a knowledgebase but it has some pretty limited login options. Should be a good alternative to notion though.

Maybe try defining the env TRILIUM_DAT_DIR and mapping /data in the container to your NAS path /volume1/Docker/trilium ? Build with those properties set and see if it lets you go through the account creation process and if it persists your data after that.
I've been bumping into this same issue, it looks like the Trilium container isn't saving anything into it's trilium-data/ volume. The docker-compose.yml for HomeLabOS omits setting the TRILIUM_DATA_DIR environment variable to the data volume as in Trilium's docker-compose.yml.
I'll keep poking around a bit but I'm no docker expert and I can't seem to 'docker attach' to the Trilium container to really have a look at where the data goes.
Not all containers create volumes by themselves. If the container is not set up to create volume if not present it will no do so and just store data in the container itself. Which is not a good thing as the data will get destroyed every time you recreate the container.
The default docker compose file from the https://github.com/zadam/trilium repo will create "trilium" docker volume. Use it and then check in /var/lib/docker/volumes/trilium/_data (assuming default docker paths - you can check paths in Portainer -> Volumes )

Only OneNote 2016 lets you save locally. Be warned though, you cannot use it on mobile or macOS.
You might want to use Trilium instead if you want a truly disconnected experience that isn't actively hostile to you if you are not saving to the cloud.
I have the same issue. I started using Trilium to keep track of all the stuff I've learned and want to learn. I keep track of all the websites I learned from and copy/paste the relevant part of the page into note content that i can programmatically search through. Would recommend if you have the know-how to set it up.
If you don't mind being bound to Microsoft's proprietary software, OneNote is by far the best. It's free on the Windows App Store. Just be aware that it's difficult to move your notes off OneNote once you have more than 5 notes.
If you'd rather be open source, then I really like Trilium - it's lacking features OneNote has on one hand, but has many features OneNote doesn't have on the other, and since it's open source it's easier to move to a different note taking app.
I would try both, and see what you prefer.
A few weeks I stared using Trilium. It's a personal KB for a single user only. It actively developed and doesn't need much resources (I found wiki.js to be quite slow).
Trilium should meet all your requirements and has so far not caused any problems for me.

I only need one more thing but I think I can make that myself. My plan is to create simple forms in it, for example a little form to save some stuff about the books I read, it could put the data into localstorage maybe.
This tool will be unbelievably useful for me if I can make these forms, especially if we consider the possibility for example to connect this to the goodreads api.
This could easily replace Trillium and some other tools I use.
By the way, that screenshot animation thing is amazing, I will absolutely steal that idea if you don’t mind :)
Attributes (specifically labels) are what you're looking for.

For articles on the web, I use Pocket which can save and sync through all the platforms.

It's not quite as user friendly as notion (I'd switch back to notion if they self hosted right now, but the longer I use Trilium the less likely I'll be to switch back) but it gets the job done and once you get a handle on the philosophy (for lack of a better word) of the system, it works out pretty well. I have barely scratched the surface of the scripting part.
I was able to figure it out. I set up an apache reverse proxy to access my Trilium instance. If you do that, in the apache config, you have to enable web sockets. I used this guide here: https://github.com/zadam/trilium/wiki/Apache-proxy-setup

Trilium has a few key features for me: -self hosted server instance and/or desktop app with sync -feature rich tree structure -WYSIWIG -multi-tab interface -robust linking and link map -custom note attributes allowing scripting -future proof with markdown export -custom theming via css

I'm really glad there's been a recent explosion of products like Obsidian, Roam, and Trilium offering graph views. It's been frustrating me for years that The Brain was one of the few options for this sort of non-hierarchical visual "map" of connections, since it is well outside my budget.

Trilium has this concept of "day note" where I put everything which needs to be done on that day and all related info.
I typically don't have pen & paper with me. I was also never good with paper style organization because of missing "refactoring". I just need the possibility to keep updating/rewriting and for that paper is not good.
If you like CherryTree but want a self hosted one that is similar to it see Trilium. It has a server of its own (which serves the app and sync backend) if you want so you can sync multiple apps via the server. You can also reverse proxy it if you want to stick to the web app version instead of the desktop apps.

Trilium has relationship maps that displays the linked notes, it shows all the referenced notes ina graph. See the first image, you can maximize that view.

Wikidpad used to use external graph tools to do the same as well.
Recently discovered https://github.com/zadam/trilium that I've not used extensively but is well documented, could try it easily thanks the the docker image distribution, and looked really promising. It uses a wysiwyg that allows images. Not sure about formula, but I'm pretty sure posting an issue on the github tracker would reveal a few options for this (the tool include dynamic javascript execution capabilities so it can be hacked through or extended pretty easily).
This is one of the things I had to replace when moving my Surface Book over to Manjaro. So far, my personal preference for note taking is Trilium. It has more than enough feature to replace the notebook aspect of Onenote, while for the times I need to draw or specifically hand write a note, I do it in Krita and upload (import) it.
I believe Trilium Notes has some unique features, often as a result of the design goal to support large knowledge bases (up to around 100 000 notes).
