Notion is also an Electron app like the new Evernote v.10 is, so it's gonna be more laggy than old Evernote Legacy no matter what, but it's still better implemented than Evernote. If you want a snappy app, look for native note apps rather than Electron-based ones, although UpNote and Notesnook are both Electron but both are snappy the last time I tried it. Are you Win or Mac? I'm more familiar with Mac apps.

I'd like to recommend UpNote - it is clean and works fast on Windows (you may also sync your notes with other devices). Typing and organizing functions work smoothly (however handwriting is only available on iOS).

UpNote is a really solid option for a OneNote alternative. They're super niche and nobody seems to talk about it, but I think it is top tier out of all the apps I've spent the past week researching..
Only thing Obsidian supports over UpNote right now is local storage access (hitting the files in the explorer) as UpNote seem to work with a proprietary system like Joplin, but they do offer a bounty of export options akin to Joplin and they claim the files are stored locally. We'll see if they can develop a way to get in there securely 💭
I, too, have a hard time with the block-based UI of Craft.
I really want to like Craft, and have tossed and turned trying to convince myself to plunk down for the full version and move my entire note-taking world into it, but I just can’t do it.
I’m all in on UpNote, a one-payment Bear/Evernote-style notes so that gets so much right.
You might check out UpNote. It has everything I liked about Evernote, without the bloat and convolution. No collaboration though, and there may be other featured of Evernote you used that aren't included. But then, that's true of Bear too. But if you want more flexibility than you can get from Markdown (e.g., colored text), UpNote is good stuff, and only $20 flat for premium (last time I checked). There's also Craft. Unfortunately, neither of these apps have #nested/tags# or #multi-word tags# like Bear, but both are currently developing their tags features, so...maybe? UpNote has Notebooks (like Evernote) and Craft has linkbacks, which can be square-peg-round-holed into behaving like tags.
I use Bear and have loved it for a while, but when Bear goes to pure Markdown in the upcoming v2.0, it's going to destroy the formatting of all my notes, so as long as I'm going to have to spend hundreds of hours reformatting hundreds of notes line-by-line, I'm shopping around, and UpNote and Craft are the only apps I've found that may fit my personal needs.

Since this thread has died down, I'm just making one more post to say that I've come across UpNote, which doesn't have #inline #tags, but if anyone is sick of Evernote and wants a *good* alternative, I'd recommend checking it out. It does everything *I* liked in Evernote (granted that may not be everything you need) without the bloat and over-engineered UI, and is only $20 flat for premium right now.
I'd like to recommend UpNote to take notes and organize them efficiently into different topics. You may also link notes with one another (more info) and clip any news article to the app for future reference. The app syncs well across Android, iOS, Mac and Windows and you can access it offline too.

UpNote might be suitable for you. The app syncs instantly across all platforms (iOS, Android, Mac and Windows). Also it has nested notebooks structure with pleasant and smooth UI. UpNote has a lifetime upgrade option. However it is not available on web browser.

Would recommend https://getupnote.com/ for something like the old Evernote but with more features and native mobile apps, and minimal cost (compared to everything else).
u/Maxmajava maybe you can take a look at UpNote, an app for note-taking and organizing. You may organize notes into notebooks & sub notebooks. You may also add quotes and various highlight/formatting to your notes. Your notes can be pinned or added to the quick access for quick reference.
It's synced fast and reliably on all devices (except for Android which is being developed). I hope it will benefit you in taking notes for your books.

Notability for handwritten notes, Upnote (similar to Bear) for most other writing.

maybe you can try UpNote (getupnote.com). They have unlimited devices syncing (though no Android yet) and offline access. Also the features are pretty comparable with EN (some more cool features like nested notebooks and ability to add codes). Their free plan is kept to 50 notes; however the premium is more reasonable I find ($1/mo or you can choose one-time payment).
I've used Evernote, Notes, Milanote, and many more so far. All of them had some missing features and ignored what their target customers needed and some of them had were not aesthetically good.
I've noticed the Upnote on the ProductHunt a week ago. After a brief usage, I fell in love with the app. They thought even the smallest details. The app is compatible with both Windows and Mac (iOS, macOS) and also Android (soon). They offer reasonable life-time offer at the moment and it definitely worths every dollar.
