Joplin is not an Evernote replacement ( I am a Joplin user) It is barely a notetaking app, Markdown is not a notetaking protocol, it is mainly good for documenting software and other basic stuff. It is a sucky format and very limited.
Have you looked at WizNote?
I spun it up, on my homeserver, in a docker container. It works really well, and is free for up to 5 persons. I like the simplicity in the system, and the fact that it supports pretty much everything. It also contains a small space, where you can store files etc.

You did not do a good job with testing those apps.
I do not get why people keep recommending markdown only note takers while this guy clearly looking for one that supports tablet/stylus type entry. Btw I use Joplin and Trilium myself.
You wont find a self hosted note taking app that also fully supports some kind of graphics stylus input. Mostly because most developers do not even know what a graphics tablet is, though they might know about Apple Pencil.
Anyway this is probably your best option. I myself tested it back then.
