I have a Pixel 3, not exactly a slow phone (at least >95% of the apps on my phone runs smoothly). The latest versions of Evernote are incredibly slow, especially with camera captures. Evernote Version 8.x was significantly better.

The latest version is 10.19, updated on 2021/10/11. I remember a while ago, sort review by "Most recent" would return a trail of one -star reviews. I personally do not feel much improvement on speed for version 10.19... Yet many are giving 5 stars with ample praises. Did this version produce a fix? 10/13 - a lot of 5 stars... then there is, by just skimming, a plurality of 1 star reviews around 10/14~10/26, followed by a plurality of 5 stars reviews.

It seems people either LOVE it or HATE it. I can empathize with the latter sentiment based on recent updates. As for the former, however... maybe they just constitute the 'background'?

What I mean by 'Background' - for popular apps such as Evernote, there will inevitably be numerous reviews happening each and every day based on the sheer number of downloads and user base, and usually, people are 'positive' in their reviews. They also tend to be more general.
e.g. "Excellent app.... best for.... love it...."

What 'Background' is NOT (in my humble opinion) - specific appreciation or complaints toward specific version, nascent features; describing bugs.
e.g. "the x feature in the latest update did y, would be better if z happen instead"
"x function no longer works on my y device."

Whether the recent ratings are driven by 'background' or 'specific' positive comments, I don't know. Maybe we just tend to look for flaws than strengths... but the speed of Evernote 10.... is really quite something...
For the longest time, I've been using Evernote to keep a track of all my notes and documents. It has those folders and sub folders that you need.
Well, there's Evernote which is supposed to be the best app for writing.
The description says which features are paid (and it's suscription based). I only link it because, like I mentioned, it's apparently THE writing app.
If what you're going to write are just thoughts, you could try a diary/Journal.
Or perhaps an app like Joplin is enough for you, it is essentially a free (and open source) alternative to Evernote.
Try them out and see which one suits you.
Have you tried Evernote? I believe it does everything you ask for. I mean, I know it has cross-platform (I think unlimited platforms is premium), syncs, has folders. Not sure about encryption though.
I only used it for a while and never liked it because it lagged too much (crappy phone). But it may fill your needs.
Also, if you're storing personal and/or sensitive info like you mentioned, I'd recommend using a safer app for that, like Bitwarden. It's mostly used to store and secure login credentials, but it has options to add credit cards info, etc.

Stories is traditionally a dairy but has "books" creation, you can usually put different subject like personal dairy, school section, travel log.
These are two I use the most, if you want a transcript maker try google recording. It transcribe audio while recording (internet connection required).

The first and main suggestion - change screenshots and make them "more realistic". Don't publish just empty screens which shows nothing - user anyway will see them after installing the app. Be creative - prepare some fun notes, stories and more. Also try to place screens into phone template and make a quick description of the main feature (like Evernote do, for example:https://play.google.com/store/apps/details?id=com.evernote).

Have you thought about using Evernote or Google Keep. With either one you should be able to create and share something that will work well enough for what you are trying to do.

The built in keyboard is pretty lackluster but thankfully you can customize just about anything on android. SwiftKey is a good place to start for keyboards.

If you want more customizable options checkout launcher apps like Nova Launcher. Combine that with the power of Kustom Live Wallpaper and you're golden. This has everything to do with how your home screen looks and behaves, nothing necessary but just getting Nova alone is handy.

The problem with recipe apps is that you're beholden to whatever limited selection of recipes they offer. My advice is to skip them altogether and download Evernote.
Create a "Recipes" notebook in the app (or on your computer), then add whatever recipes you come across in daily life from whatever multitude of sources you use (websites, cookbooks, family recipes, tv cooking shows, etc).
The key is this: add a variety of useful tags to each recipe you put in your notebook, such as breakfast, lunch, dinner, dessert, grilled, slow cooker, baked, grilled, chicken, vegetarian, side dish, entree, soup, and on and on (several per recipe). Then when you want to make something, you can peruse your options as specifically or as generally as you like.

I would probably use a text editor to take notes in plain text (I personally love Sublime Text) and sync those files using a cloud service (Google Drive in your case, it sounds like). But I don't know of any software off the top of my head that meets your requirements. I'll leave some links that might be relevant for you.
Evernote will do it, too. Tap the (i) icon to see both creation and modified dates.

Transno (also avail on Apple App Store & web-app) - I mostly replaced this with Notion & wouldn't trust with sensitive data, however, it is a cross-platform cloud-based notes app & mindmapping, that's primarily nested headers & toggle lists (the biggest feature missing from Evernote).
Bitwarden (also avail on F-droid, Apple App Store, web-app, desktop, etc) - Not a notes app but worth including for it's secure notes, cards & ID saving features. Perfect for storing acct 2FA backup codes, WiFi passwords, license plate/VIN, DL, CC info for online payments, API keys, decryption key passwords, etc. MOST of these things should never be saved in a notes app.
2FA App rec: AndOTP (also on F-droid) — a FOSS app that offers tons of sorting & tagging features, optional passcode, fully encrypted backups (Google Auth doesn't save backups — its cost me accts), add new accts via QR scan from camera, photos, or manual.
What you’re asking will be hard to quantify, but I bet users have been leaving at a higher rate post v.10 than pre v.10.
I had been with Evernote for 10 years and recently left for 2 reasons. First off, v.10 removed a couple of features I cannot live without in a notetaking app, most notably, the ability to open notes in tabs. All signs indicated that the removed features important to me are unlikely to be re-introduced in the future. The second reason is out of principle. I felt that Evernote conducted themselves very poorly throughout the v.10 transition, and was pretty callous with the userbase. I just didn’t want to support a company I don’t respect any longer, even if it was at my own inconvenience.
I am one of the weird ones who have been documenting Evernote complaint posts since v.10 launched, mostly for selfish reasons, to help myself deal with my own frustrations with the v.10 transition. I noticed that many folks who threatened to leave or announced their departure here and on the Evernote forum, I no longer see their usernames posting here, most likely unsubscribed from this subreddit, so they won’t be seeing or responding to your posts. A few, like myself, have moved on too, but chose to remain on this subreddit for our own reasons. But even I have lost interest in the topics here mostly. Now and again I might feel compelled to respond to a post, and I’d stay active for a couple of days till I get distracted by other things again.
It is also true that users who have an axe to grind are more likely to post than users who are content with the app, so negative posts aren’t representative of the majority. That said however, the sheer amount of negative posts and reviews in the past year surely are substantial enough, in my opinion, to indicate something isn’t quite right with the organisation and the way they conduct themselves, even if there are still folks who are genuinely content with the app. We don't see the same disgruntled user outcries in stable, healthy apps with healthy customer relationships.

If any of you were there in the Evernote official forums around the Oct – Dec 2020 period, there are several long forum threads with something very glaring. You’d have observed an exceptionally high number of Plus/Premium users posting for the very first time in 10+ years, indicated by their post count, myself included. Many of us had been content with Evernote for years and saw no need to participate in the forum until the v.10 update broke our workflow and took away features crucial for our notetaking. Someone already mentioned above that this subreddit too, was pretty dead until v.10. Since then it has been inundated with a disproprotionate amount of negative posts. For me, that is saying something.
This is by no means an attempt to sway you away from Evernote, if indeed you're satisfied with the service. I do, however, see some red flags in their future. So use Evernote if it makes you happy, but make sure you export your notes often and have an escape plan if things don't work out.

Sr. Agente, recomendo o evernote. É melhor que o excel porque é mais prático para escrever e procurar e é melhor que as notas do telemóvel porque não ficas preso a um só dispositivo. Se o sistema do evernote for demasiado complexo ou limitado na sua versão grátis, o google keep faz a mesma coisa numa forma mais básica (e menos organizada).
