There's definitely an argument to be made for not keeping rarely-used apps permanently installed... but, like you, I'm tired of having to micromanage installed apps, their caches, and do without the convenience of keeping things installed just to compensate for miserable device capacity.

Please, do yourself a favor and install Google Photos. It will automatically backup every photo and video you take, and provides unlimited free storage. That way, even if you do another factory reset, you will always have your photos backed up.
Other apps do this as well, but Google Photos is probably the best photo application ever created.

Have a look at the LineageOS for microG that u/darcrayvin linked. I'm running it on my S5 and am very happy with it. Even from a purely technical/user-experience level, my phone is running much better/smoother than it did on a LineageOS-based ROM with gapps.

ES File Explorer was the king until recently when they added all the bloatware to the free version then after all the backlash about it added a Paid/Pro version. While it still works and is great (Pro), there's no reason not to try out Solid Explorer instead.
That's what the majority of other users have switched to now while reading through comments on XDA and other various Android sites.
Remove unnecessary storage (photos?--backup to Google Photos, Dropbox, etc) and remove unnecessary/unused games (especially) and apps. Check your downloads folder and other locations, I recommend using the app called Disk Usage & Storage Analyzer (Drives) to figure out where all your space is being used if you need help locating the big files/problems.
Make sure to clear the cache of any apps that are using a lot.
If you absolutely don't want to do any of that, then your only option of increasing storage space would be to buy an SD card. I'd recommend a 64GB SD card or even as high as 128GB (the max supported). You can usually find the good ones cheap at Amazon every other month for around $20-$40 depending on the size you want, they just recently had deals on these a few weeks back.
Insert your Micro SD card into the phone. You can do this while the phone is on and without taking the battery out. It should ask you to prepare the SD card or format it once inserted, click OK or accept to prepare it.
Download ES File Explorer and tap n hold the folder you want to "mark" it, you can then tap additional folders to mark them too. Do NOT select Android, media, Ringtones or any hidden folders if you enable that option. Then press Cut from the bottom of the screen.
Then, at the top, there will be either "sdcard" or "emulated > 0". Either way, tap near to the blue triangle mark on the right hand side and tap "sdcard1" or External SD". Once here, press paste. You can either watch the transfer, or press home and continue to use your phone and use the notification bar to check the progress.

You could search the play store for 'lockscreen'. There are a ton of them. Here is one i found for you.
You can also use apps like AppMgr III which are made for this purpose. Will list all the apps you can move and let you know the ones that moving them might break some functionality (widgets, bootup events and so on).
I use Google's Messenger app. Integrates really well and you can custom color your contacts too. I also think it works great for group messaging.
The person that's doing the KLTE builds does a new one every few weeks so it's pretty stable. Just like all Linage based ROMs you can go in and change Apps permissions about what can StartUp when the phone turns on. That should help you knock down any apps that are sucking down the batt. Not sure about custom kernals on it though.
This is two years old, but still holds true. You've got a running app that's actively polling for your location, and it's trying to get you to turn location services on. You'll get something similar when trying to use maps for directions and it'll request high accuracy location be enabled. My first guess would be whatever that weather widget is that you've got on your homescreen is trying to check your location before polling for the weather. From that amazon thread it looks like there were a number of suspects though.
I've got my location set on power saving and I didn't really notice a huge battery consumption difference between that and having it completely disabled (possibly/probably because I'm on WiFi often.) Any reason you want this disabled completely?
It's a hostfile-based ad blocker. Like most such tools, it offers a menu of common blocklists, which it will automatically manage, causing unwanted URLs to resolve to ... your device, which immediately tells itself it isn't a webserver offering the blocked content.
It can't kill ads in some apps that uses google's services (like Youtube) because they directly resolve instead of using the DNS system, but it de-craps any web browser and most apps.
I usually install from the F-Droid repository because downloading then not updating random APKs from the internet is dangerous.

I recommend trying out reddit sync if you don't like reddit is fun. There's also BaconReader that is very popular as well and I've tried it on my tablet. I moved from reddit is fun to reddit sync over a year ago.

Make sure to install a custom recovery first, I use TWRP (2.8.7.0). There's really no big advantage between the ones available to choose from them. The other being CWM. You can't do anything with stock recovery other than have root, and there's no advantage or reason to keep the stock recovery if you even could either since these custom recovery's bring some nice features to have handy if ever necessary too (especially to create a full backup, etc).
You'll probably end up needing to install them via ODIN. Since you are probably not rooted. Either one will probably come with or have a download location for ODIN as well. Then you'll simply plugin your phone to your computer and follow the instructions step-by-step and making sure everything is correct before proceeding.
It's a very simple easy process to install a custom recovery and rom on most the Galaxy S5's. But if it's your first time ever doing this or even if not, I always recommend everyone be extra careful and make sure everything is in order just to be safe. Make all the proper backups necessary before going ahead with it, make sure everything is sync'd too, all that type of stuff.
I imagine you were in the Settings > Backup and Reset menu and selected Factory data reset from there? That sucks and sorry to hear but it is your own fault (to be blunt), not sure why you were randomly pressing things without looking at your phone while in the Settings screen either or however it ended up working out.
Anyways, I doubt Google failed you either but it is certainly possible.... But at the same time there are settings that prevent backups from happening while connected to mobile data, and only will backup while on WiFi, do you happen to remember which setting you had? I know Photos apps had some changes lately to the Auto Backups that had permissions that needed to be approved again of some sort (cannot remember specifically).
It might be possible to recover some of your photos too. There are some recovery apps available out there as well as you should be able to connect the phone to your PC and use TestDisk. TestDisk should pick up the file system.

But if you are still stuck with wanting to use this method then it's going to take a little bit of practice. While a little hard to describe, just take your hand and lay your pinky side as flat as possible on the screen touching as much as possible all at the same exact time. Sort of as if you were going to shake someones hand. Then swipe to the right (if using your right hand, this hand may be easier or more natural).
Then copy them all to Google Keep via the website and get the app. Notes finally made it into the 21st century in a non-obnoxious way.

I use and abuse my S5 and one of these actually saved my screen big time. I dropped my phone from about waist high with a little forward velocity. My phone went screen first onto the stainless steel floor, even bounced around a little. I cringed having to pick it up and look at the screen, being certain it would have cracked through this cheap screen cover. But it hadn't. At first it looked F-ed but after I peeled up a corner and got some seperation, I could see it was totally fine underneath.

Use app lock so only you can change it, you can change whether or not it applies to the phone speaker, or when a phone call comes in. You can also let the user know the volume is being limited or not. Change Max Volume Limit to whatever you deem fit.
Whenever he tries raising the volume, it will automatically put it back down to the limit you defined.

Is there anyway you can login to your access point and try changing the channel? Sometimes WiFi issues can be caused by interference from other access points. You can use this to look at the WiFi spectrum of your area and find the least occupied channel.

There are a couple different ways to back stuff up. Super Backup is pretty solid, but either way, you're gonna want to get an SD card of some sort, and move everything you can to that.
I have an S5 as well and for me, as well as many others on this sub, have noticed an occasional stutter / lag in the phone the longer we have it - so from that point of view, your issue isn't "unusual".
That said, I know the Samsung Keyboard has a higher tendency to lag than other keyboards. Personally I use the SwiftKey keyboard (see link below) which I think is miles more advanced (performance and stylistic wise) than the default Samsung one. Another good one is the Google Keyboard. Definitely switch your keyboard, and I think you'll see less of this stutter.

You should be able to use IFTTT to do this but as far as a simple setting and no 3rd party app goes as to where it saves the file to, no I don't think so.
I had similar troubles and the space obviously wasn't being accounted for when sorting all apps by size.
I installed DiskUsage and this showed me Skype was using something like 4 GB. Sure enough, it had 4 GB cache.
Clearing the entire cache works too, but this is a way I can clear only the offending cache and not have to clear everything.
I searched for ages for an Android music player that would stop this. Finally found it in GoneMAD music player, which has given me absolutely spot-on gapless playback with no fuss on at least three different phones now. I'd highly recommend the paid version - since getting it, this is something I've just not worried about for years.
Many Android player apps suffer from gapless playback bugs, including Samsung's default app. This is not one of them.

It gives you the option to set numbers to either go straight to VM or to answer and hang-up immediately. As an added bonus it will show which numbers have a high spam rating saving the effort having to research the number on the internet.

Instead of picking a music player go to the bottom of the list and select 'STOP music from playing'
a) The second screenshot shows that something is keeping your phone awake ~90% of the time. This is not normal. This is what's annihilating your battery.
b) Your network signal is consistently awful, which drains additional battery as the phone searches for a better signal.
(b) is not great for your battery, but (a) is the main culprit. Unless you were deliberately playing music through the entire day, you need to figure out what's constantly waking the phone and kill it.
If your phone is rooted, there are plenty of ways of going about this. (Wakelock analysis, disabling services, freezing or hibernating apps, reducing alarm/wake timers, etc., either with standalone apps or Xposed plugins.)
If you're not rooted... I'm not honestly sure what options there are. (My phones are always rooted, plus I think changes in KitKat made a lot of handy system tools require root that previously didn't.) Greenify might help but I'd start by looking at obvious suspects like Location, which can be a huge battery drain, especially if a rogue app is constantly asking for a location check. If location services are on, toggle them off for the day via options and monitor what happens.
Edit: What makes me suspect that something like location services is the culprit is that Android System, Android OS, and Google Play Services are your top 3 drains for 60% battery total. Android System and Android OS are notoriously (and, so far, inexplicably) bad on the S5 and often feature high on the battery list, but not this bad. Something else is constantly waking your phone and pinging System, OS, and GP Services for some low-level system function like location.
Ok it looks like the stock players aren't very good for just copying a file or backing up like that as they store playlists in a database..
Luckily there's a nice free app that seems to work perfectly in my 2 minutes testing for backing up and restoring your playlists. So that would be my suggestion.
I'd also suggest switching to something like Shuttle+ (or some free alternative) as the stock player while it's ok isn't really the best.
In my post I said I installed "Rec. Screen Recorder" from Google play, and used it to simply record the gif playing on my device. The only catch is for the app to work, you either have to have 5.0 Lollipop installed or have a rooted device. That's also why I added "Sort of..." to my title. It's more of a work around than actually solved, I guess.
Xposed doesn't work on TouchWiz Lollipop ROMs for now... if you want an app that does like DS Battery, you can try Leandroid? You need root but trust after I've downloaded it I've never used a single battery app again, maybe except GSAM but just to see batt usage

Try using Clean Master. I use it every couple of days and it gets rid of unnecessary files that are taking up space on your phone.
Swipe down from the top on the home screen. Hit the four squares in the top right to expand the drawer. There should be a star icon that changes from Priority" mode to "Always Interrupt". Then change the Interruptions setting in the Sound settings. The only problem I had with this was that due to a bug, my phone would still buzz once the battery reached 100% charging overnight and it would wake me. There are some listed here, I tried Open Camera and it worked well for me (you can change saved image quality) but I think it might be slower than the native app.
I am assuming you are using the official charging cable and wall charger? If so, have you checked to make sure that the cable is fine with either no cuts, terrible bends, the connection port itself or anything else?
If that all checks out fine, you could check and see if there might be something wrong with the USB port on your phone by using another cable.
You can also use this app called Ampere to check the charge rate of the cable plugged in.
Aside from my fingerprint scanner not recognizing me from time to time, there is one really big reason why I stopped using it. The police can make you unlock your phone so that they can rummage through it any way they want to, if you unlock your phone with the fingerprint scanner.
