From what I can tell, the notification sound is a single one on the S3. But I have mine muted. If you want multiple notification sounds, this *is* possible on your phone using Megasound.
Not sure what you're asking about the multiple accounts. The watch is just an extension of the phone, with a few exceptions. There are watch-specific apps, but for the most part it's just a secondary screen.
As far as reading the messages, you'll get a few lines but I just use it to see when I get an email and open my phone anyway.

There are apps that try to do this but they work OK at best. Most good apps have options to set their own notification sound, which will work perfectly. For example I have a custom sound set in GMail and Outlook for my various email accounts and a custom SMS and Facebook sound set in Facebook Messenger. I've got notification sounds off in Pocket Weather but it supports custom sounds too. Not sure about WhatsApp as I uninstalled it years ago but I'd hope it would support it too.
There is no such option in the Settings app. You'll have to set it up in each individual app's settings. If there is no such setting, you can try this app:

I stopped using steam after my ten thousand dollar account was hacked a handful of years ago. Steam refused to return access to me even with credit card proof etc. Long gone now.

MegaSound. It has worked perfectly for me and does exactly what it says – you pick an app and a custom notification and that's it. According to comments it doesn't work everywhere as intended so YMMV.
Megasound Beta, lets you easily create different notification sounds for all different phone apps.
