For the recording: Get a watch with multiple buttons, the main button will not be programmable, but the others will be.
Get Wear Audio Recorder from the App store. Link one of the buttons to the Audio Recorder. You can select AutoStart on the phone, so when you press the button on your watch recording commences immediately. When you press the button, the mic will show on your screen, so it's not super subtle. However if you press the main (non programmable button) once the recording has started, your watch face will be shown while the recording is proceeding.
The app will sync to the phone at the end of the recording. From the phone you can sync to Google Drive or Dropbox with one tap in the app.
For selection of a watch I recommend that you check out this list where all current watches and their features are listed. You can sort by feature. New watches with better better battery life are being launched, starting in October so you may keep your eyes open for that.

Wear Audio Recoder is the audio recording app that should come with Android. It has a pretty good execution of material design and lots of features. While I have had an issue with accessing pro features offline, the dev is really nice and helpful and is supposed to be working on it.
I suppose you could record audio 24/7, but you'd come up against two problems:
It would kill your phone battery, so you'd probably need to be connected to a power bank
The storage overhead. You'd need enough storage space to hold as many recordings as you'd want to keep. Not so much a problem if you're deleting the previous day's recording on a daily basis.

I had the free version of Wear Audio Recorder for my Explorist HR 4th Gen (and my previous Ticwatch Pro) and ended up upgrading to the pro version for $3 with my accumulated goole survey credits. Well worth the purchase since I have it mapped to the top button and can have it start recording instantly (one of the Pro features I think). I wish it was more updated since the last one was in 2016, but it's super simple and works great. The app needs to be installed on your phone too.
My only guess is that the app has not been optimized for Android 2.0 so after install you'll get a notification if you want to install the companion app or when you open the store it will also tell you that there's a companion app available too. It does not. The microphone is only active when the screen is awake (except when you are using an app that records audio).
Care to post a link as the OP already stated he tried Audio Recorder (which I assume was Wear Audio Recorder) and the one I find it the Play store seems to be from Sony and doesn't have a wear application that I can see.
I don't know, it's weird .. sometimes it can hear me, other times not al all.

If you want to voice text without a connection, where would it text to?

Where would it send without a connection? How could it send?
If you just want to take voice notes to self, there is Wear Audio Recorder that records to the watch storage, so you won't need a data connection.
If you want to be able to always have access to the network so you can send at anytime, or do Assistant requests at anytime, without being near your phone, you need a watch with LTE/4G providing a connection to the cellular network rather than wifi or bluetooth. That watch will require its own SIM card subscription.
I've been using this Wear Audio Recorder. Other apps use the same name. When I started using it I must have had high resolution activated because the files sound so much better than they do today, or the subscription fee was introduced afterwards. I haven't used it much lately.
Without knowing which messaging app you're using, Reddit is going to give you a Really Big Shrug about missing your notifications. You gotta be clearer, lady.

Without a better description of your functional requirements, none of us will be able to give you good advice on how to rebuild your stack on your nee warch.

You'd be hard pressed to find watch reviews that actually test things like battery life and vibration strength, much less recording quality and off-axis performance for the mic.

Also, parrot records with your phone, but you can start and stop it with the watch.
btw maybe make sure you live in a single party consent state before you get in trouble.
I still prefer Wear Audio Recorder, it has more features like cloud sync and has a pretty decent implementation of material design (better than Sony's at least).
