Not implying this will be true of your mom,... but I hadnt worn a watch for 20+ years until I bought the LG G Watch (and now a Moto360) and I wear it everyday/allday and have found many uses for it. Really looking forward to see what Apple Watch unfolds/evolves.
EDIT... to answer the question:... "What do I use it for?"
getting real-time notifications of incoming calls is pretty handy. I work in an IT Dept and if i'm 3 or 4 cubes away from my desk.. and I get an incoming call.. I can just look at my wrist and tell whether it's worth responding to or not.
being able to read SMS and Emails on it is also pretty handy. If I'm in a position where I cannot use my phone (like pulling cables under a desk, or driving, or whatever).. and I get a SMS or Email that says something like "Lunch at Ramen Master! - 11:30am"... then i don't have to pull out my phone for that.
I found/downloaded the "Weather Watch Face" ( https://play.google.com/store/apps/details?id=com.pizzaentertainment.weatherwatchface&hl=en ) ... which gives me Time, Date, Weather, Battery-life.
I wasn't sure originally that I'd use it.. but the Steps-tracking and Heartbeat-tracking of the Moto360 has turned out to be something I'm now interested in and keeping an eye on.
getting Ingress notifications on the watch is pretty handy ;)
I found an app named "Look Behind"... that sends your smartphones Camera view live-feed to your Watch... so for example if you need to look behind a refrigerator or behind a desk to read the label on a wall-jack.. .you can just slide your smartphone back there (where you can't normally see).. and the camera sends to your watch on your wrist.... it's very "Dick Tracy" feeling...
Those are the big ones that come to mind...
Having never owned a watch before, I quickly realized that analog watch faces had a strange effect on my memory. I would glance at the watch, "see" the time, look away, and instantly forget what time it was.
Because of that, I decided digital was the way to go. On that front this is, in my opinion, the cleanest, best looking watchface that doesn't show off the flat tire.

Band is a bit warmer in color in person. My camera sucks. Band: https://www.bartonwatchbands.com/products/gingerbread-brown-leather-quick-release-watch-band-strap?variant=6838049636406

Although it's pretty different, I use Weather Watch Face on my Moto 360. It has a white on black mode and works seamlessly with ambient display and looks great even though I don't have an oled display.
I use this one:

But you're right, most of the really good looking watchfaces are only done for round watches.
I use Weather Watch ( https://play.google.com/store/apps/details?id=com.pizzaentertainment.weatherwatchface&hl=en ) as my watch face.. so I get Time/Date/Weather/Battery,etc with an easy glance
I obviously get all of my Notifications for things like SMS, Emails, incoming PhoneCalls and any App that's "Notification aware" (Facebook, Twitter, Ingress, etc)
I've installed a Calendar App.. that shows me a Month-view.. but I can tap to zoom in to Week-view, Day-view or Appointment-Details. Pretty handy.
I've installed "Wear Speaker"... which has a variety of settings.. but I use it to answer calls (from my Wrist) and it automatically puts my phone on speakerphone. So for example, If I'm driving and put the phone in the passenger-seat.. I can answer without to much trouble.
I use the "Look Behind" app as a view-finder for my Phone. So if I need to read a network-jack that's behind a heavy desk.. I can slide my phone back there and see the camera-view on my Watch. Very handy.
I've been using this one the longest. weather watch face
I like that it shows the same information on the always on screen as the active screen. Battery, time, date, sunrise, sunset.
If you want all the best options, it's best to pay the IAP and get the premium edition of it, it's not much if I remember correctly.
Weather watch face. I'm taking a dump at work or I'd grab you a link.
Only face I like at all really.
I had trouble finding it in the Play Store, it's made by a company called Pizza entertainment.
I operate turf machines (golf course maintenance) for the majority of my work days and my watch has become very useful for controlling music from my phone. I hate having to pull my phone out to switch tracks or trying to find the volume button through my work pants.
My watch face is a weather one, it looks nice and I'd like to say it's useful but it's really not. I know what the current weather is and if I need a long term forecast I'll just wait for a break and check it with Forecaster on my phone.
I leave til-to-wake on so I can still see the screen if it doesn't happen to turn on when I lift my wrist. Haven't had any battery issues. My LG G Watch will last all day and if I forget to charge it at night it will be at around 20% the next morning.
I use Weather Watch Face
Obviously I get all the standard notifications (which seems to be getting better all the time). The normal stuff like Emails, SMS, Calls, Google Fit, Ingress, Calendar reminders, etc.
I have a Calendar Applet.. that lets me see Month, Week, Day and individual appointment information.
I didn't think I would use it at first... but the Google Fit data for Steps, Heartrate, etc ... has been surprisingly effective at keeping me striving towards daily activity goals. (OK.. so a big part of that is probably Ingress... but hey... whatever works)
I have an app named "Look Behind".. that you control from the AndroidWear watch. and streams a real-time view of your phones camera. So if you need to "look behind" a desk or network-cabinet or whatever.. I can slide my phone back there and look at my watch to see whatever hidden thing i'm looking at. Really saved my ass a few times.
Custom watch faces can be awesome. Right now I'm using this one: https://play.google.com/store/apps/details?id=com.pizzaentertainment.weatherwatchface&hl=en
Wearable Widgets is pretty awesome: https://play.google.com/store/apps/details?id=com.wearablewidgets&hl=en
Wear Speaker ( https://play.google.com/store/apps/details?id=wearableloudspeaker.com.wearableloudspeaker&hl=en ) .... lets you configure so if you answer a call from the Watch... your phone picks up on speaker-phone. So myself.. if I'm driving and toss my android-phone in the passenger seat.. I can slide-answer on the Watch (never taking my eyes off the road) and the call picks up on Speakerphone in the passenger seat. That's pretty convenient.
Can't think of anything else at the moment.. but that's a good start. .
On the Fossil - https://play.google.com/store/apps/details?id=com.pizzaentertainment.weatherwatchface
On the ticwatch just a default one.
