Any credit card processing is going to cost you fees, though. Stripe's is 2.9% + $0.30/transaction. That's pretty standard.
This essentially allows for all European (EEA) bank customers to have Apple Pay. Curve is a “middle man” and differ to Revolut in the way that you don’t keep money on Curve. When you make a purchase, it automatically charges your “real” card. Think something similar to making purchases via PayPal.

Ignoring Apple Pay for the moment, Stripe's API does allow for you to separately authorize payment and then actually post the charge at a later date, but if this blog post is still current, then there's only a seven-day window.

I just read an article from Lifehacker from 2017 that basicly says "PSA: If You Delete Apple Pay Cash It's Complicated to Reinstall It"
I use a magnetic detachable wallet case (as in, the wallet portion of the case is detachable from the phone case so when not in use I have it stuck on the fridge) and I've never had this issue yet.
Though I usually just use my Watch 100% of the time since I try not to touch my phone grocery shopping in public due to the pandemic
Also, I recommend getting a wallet case that's detachable from the phone. I don't mind having the wallet portion on at all in public, but at home I'd rather not have to deal with it. Additionally, if you use wireless charging, having the folio detached allows wireless charging unlike most folios
