I can relate with the struggle learning DAW's - I work in the IT field and it has been a journey for me getting around in Logic Pro X. However it is not impossible, and if you have a background in music (I didn't) you already have an advantage.
My suggestion is to get a online class for your favorite DAW (on Udemy.com they are all $9.99). This will give you practical examples and will be much easier than to hunt for different functionalities on youtube videos. After that just start using the DAW, and whenever you want to do something specific like "how do I select parts from different takes of a track", just Google, there is plenty of information around. Good luck! :-D
