Progression Workout Tracker is a really good weight lifting app that checks off most of those boxes - syncs with Google Fit, backs up to the cloud, estimates calories for different exercises.
The exercise database has all of the basics, and you can add your own too. The app also has a handy workout timer and weight calculator.
Comes with built in routines, or you can create your own. The only feature it doesn't have that I would want is the ability to create workout plans on the web...since I'd imagine being able to do that a lot faster.

if you're talking about raw data I don't know anything, I think perhaps you have to go directly to the Google Fit API
I have the same Google Fit version as well. I have a Pixel 3.
I used an Android emulator on Windows simulating Samsung Galaxy S20 Ultra — not exactly your model, but I see the "Get Started" options on it too.
I presumed you have also tried all the common fixes, like uninstalling and reinstalling. You have also enabled all the permissions — which the app really needs permissions for "Camera", and maybe "Physical activity".

It is unfortunate that while the Google Fit App has several 3rd party health app integrations, its core services have been only loosely constructed and implemented (besides maybe the heart-point system, step-counting, and the "journal" that shows things like exercises/meditation/sleep chronologically). I think Google and Android Development has too many projects going on to focus on perfecting each app. As a consistent Android user there have been more instances I felt disaffected. Yes, Android has many features implemented first, and Apple is often years late to the party — but Apple implements them with great precision and integration with, say, Mac, Apple Watch, iPad, etc. Ok, HomePod maybe not so much. xD

I am sorry to hear, and share, your frustration (in other Google apps/services at least). Perhaps you'd want to give the Google Fit Help Community a try by posting a question.
Alternatively, does Samsung Health offer the same set of features? I once had a Galaxy S8, which had a dedicated heart rate sensor (S22 Ultra does not) to measure both heart rate and SpO2. The app did not have breathing rate measurement when I used it.

Measurement for the respiratory rate will activate your front-facing camera, and the heart rate will activate the rear camera and flashlight.
It's unfortunate that it takes several steps to get to these measurement features.
If you do not see the options in Step 3 & 4, ensure you've updated it to the latest version.
Not with a typical smartwatch. You need R-R data (beat to beat time).

MyFitnessPal does. Just make sure you link it to your Google Fit account. It can also scan barcodes and track workouts. Not sure what you get with the subscription because I only use the free version.

Garmin make some great watches/bands but as far as I can tell, they do not directly integrate with Google Fit. Garmin Forums says you need an app like Health Sync to do it. Although for some reason it won't let me install to my Samsung.
Personally I just let Google fit run in the background now, but use Garmin Connect as my main fitness app for my watch.
If you want full on Google integration you will need to look at a watch based on r/WearOS/

Assuming Google's acquisition of Fitbit passes all the hurdles, we may see some integration between the two platforms in the future.

I found one called GymRun that I'm going to try out, seems to have the ability to program exercises and workouts that sync with a wear os app.
I'm not quite sure about rep count yet but I'm going to give it a go. Looks interesting.

I really like Google Fit as a platform for all my fitness data, but I got really frustrated with the app. It's difficult if not impossible to analyse the history of my fitness data to see trends or progress. Also I can't create my own fitness goals except only for steps and heart points (it used to be in the Google Fit app but they removed it).

I made an Android and Wear OS called NavFit to allow creating your own goals again. I'd be happy to partner with someone if they would like to port it to the web. The main feature I would like is to be able to view more details such as satellite view on maps. I tend to run away from any roads so just viewing the activity in fit doesn't give me much information. This was somewhat possible on the web app, but won't be any more.

Fit should take activity from the phone and watch and normalize the data, so it would only count one of them. I have a similar setup, and Fit acts normally. I have not ever seen duplicate steps/activities in Fit.
But...I had a lot of issues with MFP and ended up switching to Lifesum for food tracking. It has Fit integration and pulls in calories much more reliably:
