Crazy as it might sound, S Health. The app considered part of Samsung bloatware is one of their better apps. Recommended to me by another user.
Guess I'm the only one who uses Samsung Health... I've tried them all so far but the amount of data and functionality SH provides absolutely FREE with zero ads simply can't be beat. It also has free workout plans and I'm finally well on my way to 10k. I've been using Samsung Health for the last 9 months. It's pretty good.
The only problem I've found is when adding your own foods, it only goes to 1 decimal place. So if something is 2.75g carbs per portion/100g/whatever, you can to round to 2.7 or 2.8 (I always round up).

The data safety feature is quite useful, but I also like the analysis Exodus Privacy does to see what 3rd party trackers an app includes.
I have the same Google Fit version as well. I have a Pixel 3.
I used an Android emulator on Windows simulating Samsung Galaxy S20 Ultra — not exactly your model, but I see the "Get Started" options on it too.
I presumed you have also tried all the common fixes, like uninstalling and reinstalling. You have also enabled all the permissions — which the app really needs permissions for "Camera", and maybe "Physical activity".

It is unfortunate that while the Google Fit App has several 3rd party health app integrations, its core services have been only loosely constructed and implemented (besides maybe the heart-point system, step-counting, and the "journal" that shows things like exercises/meditation/sleep chronologically). I think Google and Android Development has too many projects going on to focus on perfecting each app. As a consistent Android user there have been more instances I felt disaffected. Yes, Android has many features implemented first, and Apple is often years late to the party — but Apple implements them with great precision and integration with, say, Mac, Apple Watch, iPad, etc. Ok, HomePod maybe not so much. xD

I am sorry to hear, and share, your frustration (in other Google apps/services at least). Perhaps you'd want to give the Google Fit Help Community a try by posting a question.
Alternatively, does Samsung Health offer the same set of features? I once had a Galaxy S8, which had a dedicated heart rate sensor (S22 Ultra does not) to measure both heart rate and SpO2. The app did not have breathing rate measurement when I used it.

You are right about those features not working without a modded version, though.
I have updated my software. My phone will not go to A9.
Where are you seeing that A9 is required? According to the Play Store A8 is the requirement.
S Health integration would be great too. That's the Samsung specific Health app.

Based on that question, it is currently not GLW.
Have found that changing to XAC with no SIM inside the device (so setting it up from "out of box" without a SIM) will usually force re-registration of the device with the update servers, which in turn starts pushing updates to the device again; these are going to be sequentially pushed, so if the device is really far back, it's going to take many updates & reboots to get it to the most current one, which should be G950WVLU8CUF3 based on their changelog site: https://doc.samsungmobile.com/SM-G950W/XAC/doc.html (Freedom Mobile's changelog is the same: https://doc.samsungmobile.com/SM-G950W/GLW/doc.html).

Are you trying to pair a recently released Samsung watch? That would be an actual reason for Android Pie to support certain features.
