I've never seen such a setting ... I didn't know it sent reminders for weight updates.
Our bodies are not mostly composed of fat, they're mostly composed of water. Therefore, most of the weight changes we see from day to day are water changes, not fat changes.
Use a weight-smoothing app called Libra (for Android) or Happy Scale (for iPhone).
One of these apps will help you see the trends better with less of the volatile influence of water.
You can use the time-averaged weight from these apps to keep MFP updated.
Update: I downloaded 6.20 version APK-file, installed it. After that I took auto-update off from Google Play and now I have to old layout back.
Others already identified why MFP is bad at weight predictions: it's basing the 5-week estimate on only today's weight and calories, ignoring past trends.
If you want more accurate predictions, try the Libra app for Android, or Happy Scale for iOS. They create weight trends based on past weigh-ins alone, not calories.

I have this scale and it’s great so far, syncs up to my Apple health and MFP automatically and gives some interesting trend graphs and figures. Also doesn’t break the bank cost wise.

I would figure out your BMR to see how many calories you take to just live.
Here is a calculator that uses the Harris-Benedict equation. If you hit “advanced mode” it lets you add in your activity level to determine your maintenance calories.

Don't know where you are, but scales are cheap (about $25US). You can sync these to the MFP app.
I use an Aria scale which is a little more expensive, but this Elekcity scale at Amazon is a best seller at amazon.com.

I also weigh all of my food, including spices and seasonings. My kitchen scale also does not measure under 1 gram, so I use my weed scale since it measures amounts under 1 gram. You can pick one up at any headshop or online if you don't have one. They're pocket sized and digital. This is the one I have.
Body weight fluctuates constantly- not just daily but as you've noticed over the course of a day too. For that reason consistency is all the really matters.
Personally I wake, pee, weigh, every day.
But again, because daily weight can fluctuate by as much as a few pounds I look at my 7 day/weekly average as a truer body weight and not what I weigh on any given particular day.
Tip: I keep a spreadsheet with my weigh ins and calculate a running 7 day average BUT there are apps that will do this for you. For iOS there's Happy Scale and for Android there is Libra.
I use a Fitbit not MS Band, but the option to enable negative calorie adjustments is still showing for me:

I currently have it disabled though, so can't speak for whether that functionality is actually working.
On the mobile app, if you click on the item in your diary, you'll see the breakdown that you're looking for.
On the website, you need to look up the item again anew to see the nutritional breakdown, or you can go to Food > Database and look it up there. Both methods are equally weird. I am also interested in that. I use Heatlh Sync to sync everything from Garmin to Google Fit.
I created a feature request to add exactly that case but got the response from the developer that they never get any answer or reaction from MFP when they asked for API access.

It's interesting that the latest version of the MyFitnessPal apk is "Calorie Counter - MyFitnessPal 18.9.1 by MyFitnessPal, Inc. dated September 13, 2018", about the time when my blue (I mean white) screen of death showed up.
I'll uninstall the update and try reinstalling the August 28 or earlier versions.

I know this is the MFP subreddit, but you may want to give Cronometer a try. I think it breaks things down in a way that's easier to understand when using a fitness tracker.
If you end up going that way, set your activity level to "none," connect your Apple Health data, and eat however much Cronometer tells you to. Cronometer does this based off your BMR rather than your TDEE, making it very accurate in my experience.

Thanks for your insightful reply, I guess I am having trouble understanding the math to weight loss.
through my research I read online that you have to actually burn 7,000 Calories to lose 1 lb, (idk if this is true or not) so my first week goal was to burn 3,500 Cal.
but the week I just finished I ended at a rough estimate of 7,238 burned calories for the week, it feels good to workout this much and I do it every morning for about 80-90 minutes, I know my cardio machines calorie calculations are probably not very accurate but I use them to have something to log, with the thought in mind that if they are not correct then it is hopefully not too far off from the actual numbers.
I always start with a warm up on low tension and switch to higher tensions and speed up back and forth for the entire 80-90 minutes for a HIIT type exercise.
The machine I have is a ADVENOR exercise bike I bought on amazon for about $180, the bike has 2 resistance bands that I am starting to use during my 80-90 minute exercise on and off in between the routine while also continuing to cycle.

I used to use this: Dymatize Iso-100 It tastes great and you can thicken it up or water it down. Either way, it worked out pretty well for me.
I just switched to this: Isopure Low Carb A serving is two scoops, but I just do one scoop, I add half a banana and a tablespoon of peanut butter, ice & water and it is perfect! Never thick, unless you beef it up to be, using water may help that out as well.
