Console versions are not supported. Isn't that what you're asking, since Skyrim has never been released on PC without Steam integration?
Congratulations to the whole team on the work completed thus far. Impressive to see the progress. I watched the streaming for the container synch and had a familiar itch to start learning C++ again. (Never really started, just enough to get through the Engineering intro computer programming course) Really looking forward to trying out the mod.
Any reccomendations for a good place to start self-teaching myself? It's a handy skill to have should I find my ChemE degree lacking job options. More importantly I'd love to get involved in a project like this and actually contribute at some point.

Possibly, If they uploaded the Teams Code as open source under the GNU GPL. Bethesda Couldn't Do "too" much to stop it as long as the source is public domain. If this takeoff is to go successful familiarize yourself the mistakes others had made in previous lawsuits.
There still is a chance that we will be able to play co-op in the Landscapes of Skyrim, if the openMW an open source Morrowind engine, which is currently in the works and has the potential to run Skyrims gamefiles comes along. Because there is already an multiplayer framework in the works. Yes it might take some time and also most mods probably won't work in the early stages. But I would take sacrifice to play multiplayer, and that said because it is open source some one could work on it so it becomes compatible with some of the larger and greater mods. https://openmw.org/en/
I'm currently using this to play with 4 friends, since none of us can be bothered to setup port forwarding. Its 2mins to download, 2mins to setup and then you all just connect to one person's ivp4. Ez pz
There is a limit of 4 people per hamachi room/server, but it's free and easy to setup.
Try it out, worth it imo.
Try connecting using alternative tools like on premise R-HUB remote support http://www.rhubcom.com and check if it works. If it works, that means there is some problem with logmein hamachi. If it dosent, then your machines are facing technical issues which needs to be troubleshooted or resolved at the earliest.

You could possibly go down the route of buying a Refurbished Dell Optiplex or something similar from Amazon or Newegg; an i5 processor, 4-8GB ram and 500GB harddrive usually go for around $150-200~
Pair that with a low profile card something like the [GTX 1650](https://www.amazon.com/dp/B07QF1H9YR) that uses max 75W power and doesn't require a 6pin connector for power (the PSU might not enough watts to power a full size card, or have a 6pin cable for power) a low profile GTX 1650 is usually around $150~

but always double check the PSU has enough watts to power the card, that there is a free 16x pci-e slot, and that there is enough room in the case to fit the card.
It's not going to be the greatest performance or have much upgrade ability in the future apart from an ssd or ram, but for less cost than a console for games like skyrim its not a bad choice.
