You need to make sure all your drivers are up to date. Not just downloaded but also installed.
Motherboard is more firmware than driver, I wouldn't worry about that yet since it's new and presumably already has the latest firmware loaded.
None of your components are above the 5th percentile. The GPU and SSD might be able to be written off due to other benchmark users overclocking, but you definitely have a problem.
I think the CPU drivers are the most likely culprit. Try installing them again, run CPU-Z, and post the results.
You didn’t include your internet speed. It likely is your problem bc that router is too cheap to pull off what you’re asking of it likely. Probably bufferbloat where your upload speed gets used by one device and ping suffers on other devices. I had to get an ASUS ax88u to support true gigabit wireless and handle true serious loads from multiple devices without dropping

That's weird. Make sure all your drivers are up to date (you can use something like this (just use the free version by selecting the free softpedia option instead of the paid one after you hit the download button)). If that doesn't do it then it's almost certainly a hardware issue.
According to this page, you can use iTunes for some basic troubleshooting:
iPhone/iPod Connectivity. These diagnostics don't actually test the iPod's own hardware or software, but they do examine the way your PC connects to your iPod.
iPhone/iPod Touch Sync. These tests actually do test the iPod Touch's hardware and software to make sure it can transport the data you've chosen to sync.
Besides that - not really. VNC or any similar software does require configuration from the device screen.
Honestly, it should be just fine - if it plays music it probably wasn't internally damaged. Once you take it for screen replacement ask for a visual check of components.
