I know you mentioned you've played Kerbal Space Program, but if you're a real space / flight sim nerd, you really should try "Orbiter 2016":

There are websites with tons of mods for it too, including fictional and real spacecraft, space stations, missions, etc etc.
Whereas Kerbal is something like a 1/3 scale sim of Earth with thicker air, lower gravity etc, Orbiter is a 1:1 sim of all the planets in the solar system.
So the ISS really is at 300,000+ metres up, and you really do have to accelerate to 7.6+ kph to orbit at that altitude!
It has a steep learning curve, and is less intuitive than Kerbal, but if you're a proper nerd you'll love it. It's a great sense of achievement to launch the Delta Glider, refuel in orbit from the ISS, then take it to the moon and land.
EDIT: Did I mention it's free??
The general rule with X-Plane is: "point releases" (e.g. from 11.02 to 11.05) are free, however major releases (e.g. from X-Plane 10 to X-Plane 11) are paid.

You can see that the last two updates listed there ("VR" and "Metal/Vulkan") don't have a version number so... basically we don't know if they will be "point releases" or not.
My personal guess? Native VR will be a point release but Vulkan/Metal will probably be a major release. Of course I may be wrong.

For an inexpensive joystick, look at the Logitech Extreme 3D Pro. Currently $30 on Amazon. I've had one since 2017 and it works today just like it did when new. By now I have a lot more hardware, but I still use that joystick for certain planes.
There is an app called Duet and that is what I use on the iPad. It basically turns your device into a external monitor. I then pop out the screen on XP11 that I want which is either the map or ATC and drag it onto my iPad. It is priced at 9.99 which is a bit cheaper than Remote Flight but with Duet, you are not restricted to what you can use on that screen so you could use any instrument or ATC or anything really. There are two versions of the throttle quadrant
The one that comes with the yoke has a round connector that plugs into the yoke
The one on this Amazon link which is a stand alone USB version, this one works independently of the yoke
There's a small utility called JoyToKey that might be worth looking into. I've never used it, just found it on a quick Google search of your question.
If it can bind joystick axes to a keyboard binding then you could map those axes to the X-Plane key commands for throttle up/down and trim up/down. I doubt it would allow you any control as to rate but at least it would allow you to use those axes a little like what you want.
I've been dealing with the same kind of struggle for a while, and settled at this:
After all, it's a lot less scarier than it looks at the first time (especially coming from garmins navs of the smaller aircraft).
On the other hand, I haven't seen an airliner with garmin-style nav system. They might be there, but since my own options are limited due to VR support, I've settled with 747/737.
Also, FNC is not the only obstacle between you and airliners. Even if you skip the startup procedures, autopilot is still there and is much more complex too (mostly with vertical nav stuff, but still).
WinRAR isn't necessary and I'm surprised anyone would recommend it these days. Use 7zip, it can do everything WinRAR does and more. Plus with a simple Google search it looks like it has a portable version (meaning doesn't need to be installed) https://portableapps.com/apps/utilities/7-zip_portable.

A VPN will fix your IP blacklisting problems. I use PIA (Private Internet Access). Its fast, cheap and they have servers all over the globe. Just connect to one of the US servers and you'll have a US IP address.
