This is a book worth reading if you are travelling to South Africa and wañt to learn about the country and its people. It has a chapter on weather and climate and lots of great maps and diagrams throughout the book. Written by a tour guide with years of experience and a huge talent for storytelling.
AirBnB isn't limited to short stays. It's more expensive than other places but many hosts offer significant discounts if you stay longer than a month. Have you actually plugged in your dates and checked what's available?
You can try estate agencies or places like gumtree but airbnb is going to make things a lot easier.

I'd still be cautious putting "Sell" and "THC" into the same sentence.
Afaik there are some cannabis/growers clubs where a membership can give access to THC containing products.

There's a free app called Maps.me they get their data from open street maps which has a lot of trails put into it by users. I use it for hiking all the time.

This isn't accurate. There's no one rule that can be followed safely. Learn what the few deadly mushrooms look like first and go from there. Fortunately most poisonous mushrooms will only make you sick, not kill you.
I strongly recommend getting a book such as this one https://www.amazon.com/Mushrooms-Other-Fungi-South-Africa/dp/1775846547 and then go find pine forests around tokai, newlands, and the peninsula. Most common edibles in cape town grow around pine trees.
Note that any of the common areas around cape town will likely be foraged before you go if you go on a weekend. I recommend waiting for a rainy weekend then head out first thing the following Friday morning to beat the weekend foragers.

Also, if there is any chance that you'll do a "real" safari anytime in the next few years, I wouldn't bother with Inverdoorn. Unless you're happy to drive a long way in order to see a barren desert landscape that is slowly being restocked with wildlife. I think the area is pretty, went camping nearby 3 weeks ago, but it's not the "safari" experience that you see on TV.

I'm surprised nobody mentioned Uberzol. I think they have a great app you can find on play store. Whether you're a customer, vendor or driver. It's a solid platform that is as simple as ordering from uber eats. you can even track the driver. the only problem is in cape town hardly any vendors using it to sell their stock compared to JHB and Durban. I'm guessing there's a lack of awareness?

No local source I'm afraid, the plant is tropical, so it would only do well in a climate like Durban, even with the best of care.
If you have a source in SE Asia, you can ask them to bring fresh leaves in, then seal them in a ziplock and store them in the freezer.
You could also look at sourcing the extract from online retailers (like Amazon) which provides some of the flavour, but of course processed is always inferior to fresh.
Unfortunately the majority of Asian supermarkets in the Cape Town area are mostly Chinese, and not South East Asian, we have a deficit of most delicacies from that region, like durian and jackfruit.
