Do you fill your bowl as normal or about half full. From many of the reviews it seems that fitment may be an issue, have you noticed this and how hard is it to maintain a constant temperature and avoid flareups.

I've been on the BBQ train for some time now. As a New Orleans native living in Michigan, it's hard to find good smoked meats up here, so you end up having to do it for yourself. And every time we throw a shindig, that's really all that gets requested.
My suggestions are as follows:
Franklin Barbecue
I love this book. It's not a recipe book, although it has a few basic ones in the back. He tells the story of how he came to BBQ, and then breaks down each individual aspect of BBQ process. You'll learn a lot.
Herbs and Spices
This book is really more fun than anything else. It's essentially wikipedia for herbs and spices, but there's so much in it that you can always come back and find something new.
The best advice I can give you is to never stop trying something new. When I first got in to BBQ/Grilling, I went to Amazon and bought a mess-load of books for $1-2 a piece about the basics, recipes, processes, and ideologies. Bobby Flay was my first read. I've strayed away from him now that I have my own style. And that's a phrase you'll here a lot among people. "Style". I wouldn't worry too much about it. Just light a fire and put some meat on it. Worst case scenario. You've got cooked meat.
Try smoking a Turkey with a Cajun rub (that you make, don't use prepackaged Cajun rubs) over hickory or apple wood. Patience and eventually it'll all be second nature too you.

I use a CharGon (Amazon) for my classic Weber grill deck. No wire brushed to get mashed to bits and fall apart. It's quite sturdy and works great.
1) Weber Kettle - $165 on Amazon (The one without the ashcatcher is cheaper, but the ashcatcher is worth it...especially for a newbie)
2) Chimney Starter - $20 bucks or less
3) Box of weber starter cubes - $4
4) Inexpensive Digital Meat Thermometer - $20 bucks or so
This puts you just over your 200 dollar budget, but the Thermometer is a must especially for a grilling novice. Having a thermometer takes all the guesswork out of cooking. You can print out a temperature guide for meats...and then instead of trying to time things, all he has to do is check the temp and pull it off once he hits his target.
A kettle will survive in the elements a hell of a lot better than a cheap propane grill, and they are pretty simple to keep clean.

But to be honest though, I just had some really good luck with the store manager. I went to one Target and took a screen shot of the price of the 210 version (it was $100, but out of stock) on the Target app. Then I went to the other target in town that had that version in stock to see if they'd price match. They didn't have it in stock but had a floor model. The manager said she couldn't sell the floor model, but asked if there was anything else she could do for me. I asked her if she'd sell me the 310 at the price I saw online. Someone had been in that same store the day before and asked her the very same thing (same model/price/location), so in a bout of random kindness, she did it for me.
Stuff like this never works out for me, so I was really shocked! Either way, I'm the proud owner of a new Weber. Now... to break her in and grill some steaks for the family.

I switched to using a wooden grill scraper a couple of years ago for the same reason. They cost about the same price and there are plenty of options. This is a Cuisinart version for $15 on Amazon. They seem to work better if you preheat the grate pretty hot before cleaning.
Occasionally I will use the steel bristle brush for really stubborn bits, and then wipe the grate down afterwards with a paper town and water or oil.
For beef i use this. , salt, pepper and garlic with some jalapeño, it’s good on beef ribs, brisket, burgers, I’m going to try it on pork ribs soon.

I wanted a full on automatic slicer but I don’t really have anywhere to put it, too many gadgets already. This was a nice compromise for space, and works pretty well, even if it is a little work. Make sure the meat is totally frozen first as well, it won’t slice cooked or thawed meat.
If you have a Weber - IMHO, their covers suck, and the 3 I've had only last 2 years tops before they're so ratty and tatty that I've had to replace them.
I purchased this one made by Ravenna - it's a lot sturdier than the material used in the Weber covers.

Being genuinely curious about the product, found it on amazon. Seem to have mostly positive reviews. Just as a warning, he seems to buy a lot from that company judging by his post history.
One of the things the Webers have going for them is cast aluminum bodies instead of steel. The aluminum lasts forever since it doesn't rust. There are some (a) cheaper grills on Amazon with aluminum bodies in your price range. The reviews are kind of mixed, but it would be worth looking at them, or at least keep the aluminum thing in mind when looking at the store.

Yeah, you're right about the price. It's kind of a luxury item. It seems like it will be worth it to me for the convenience of it and also I think the repeatability and ease of learning. My time is limited (my dreams of having an offset, wood burning smoker I can tend to all day will have to wait until I'm retired and have a place outside the dense city), and I'm buying prime meat from Costco every so often that quickly adds up to the cost of the Slow n Sear so the initial expense will fade away.
But there's plenty of other options for the Weber kettle, such as using fire bricks to wall off the charcoal, and a pan for water. Look up the snake / fuse method. The Thermoworks thermometers are also a luxury item, and there are lots of thermometers on Amazon that are much cheaper and have high ratings, both meat/pit probes and instant read. For a lot less money you can get the Edenpure Joe Namath rapid cooker. Read the amazon reviews and find where people are replacing the cheap propane regulator with a bigger one that lets more gas through. I got mine direct from edenpure for $100, new.

I'm going off of Meathead Goldwyn's book. In a nutshell:
Cook on indirect heat, keep temp in the indirect zone around 225.
After 15 minutes check the temp, and then every few minutes after.
When the internal temp is 110 (about 30 minutes for this ribeye), take it off the grill.
Pat it dry (to prevent steam) and then put it on high direct heat (I used the searing burner), dry side down. Sear each side, aiming for internal temp of 130 (i did just over a minute each side).

The original wire grill that came with the Velocity Grill wouldn't retain enough heat to give a good sear.
fish like swordfish is very meaty and will not fall apart if you use a flipper on it.
salmon is softer, that is why i like to grill it on top of a cedar plank.
fish like halibut of cod....def leave the skin on and start cooking skin side down.
or use a fish cage, that lets you easily flip the fish on the grill, and sort it all out later in the kitchen while you are serving it.
i use something like this. i spray it with high temp grilling oil, and flip the fish at least four times during the grilling (so it is not totally stuck on the basket before i flip it the first time)
It's like $2-3 over, but these wide kebab skewers add a whole different dimension to grilling and not a whole lot of people have them already. If they're big into grilling/smoking already, they've likely got a decent thermometer and their own preference in rubs. Plus, unwrapping a bunch of "swords" in front of your coworkers would be... an experience.

Nice! I was going to go "different" this spring with the "Mountain Man Grill," and use it mostly over my fire pit (ad when I went camping). But the welds weren't done right, so nothing sat level. I thought it'd be fun as hell. Disappointing.
My guy really slapped raw unseasoned chicken on a grill in direct AND indirect heat.
Should've brined or at least put a simple salt based rub on these and smoked em using indirect heat in two separate batches. That's too much chicken on that goddamn grill at one time.

I've smoked a ton of briskets, pork butts, chicken thighs/legs and chuck roasts using the cheap ass baskets on my kettle. The more expensive slow n sear just makes it easier so you don't have to worry about fuckin around with an separate water pan.

Being an electric grill, you'll probably just want to make an aluminum foil packet with wood chips and put it directly on the heating element. It might not get hot enough if you put the box directly on the grates.
Another option is to use a pellet tube. They put out a very good amount of smoke

If you only want the infrared part of the heating and not the conduction or convection part of the heating, get an infrared grill like an Otto Wilde or a Beefer. That top-down grilling is the kind of grill high-end steakhouses use to sear steaks.
We use something like this for grilling veggies like asparagus over charcoal. Its perfect.

I like it because it lets me cheat for really nice looking grill marks and it lets me keep my grill a tiny bit more clean.
I throw it on the rack, wait until it is screaming hot, and then put whatever I want seared on it.

Yeah, that's a gas QDD quick disconnect. Hard to tell what size. Usually, a 1/2" pipe size wouldn't have a 3/4" insert, but then, you could always change the one on the pipe to match a new insert they can be purchased in matching pairs. The previous link was for a 1/2" connector, both male and female. If it uses the same 20.5"D grates as my Charbroil charcoal grill, this griddle for a Weber Genesis 300 will fit. I was looking around for one a few years back and this one seemed to be the closest fit I could find (although not cheap). Good luck with the search!

Also, make sure you have a good spatula with a beveled edge. Here's one example. The key to smashburgers is scraping the burger off the griddle while retaining all the crust you've created. When you smash, you want the burger to stick to the griddle for maximum surface area, then you need to scrape it off not just flip it like a normal burger. A sturdy spatula with a beveled edge is essential if you don't already have one.
Definitely do not add wood chunks. The only thing that would do is create smoke that will burn your eyes when you're trying to smash the burgers.
If you're doing it right, you are taking a 2oz patty and smashing it as flat as can be, letting it cook for about a minute or so, flipping then adding cheese and taking it off in about another minute when the cheese is melted. There is no time for any smoke to be absorbed and that is not what smash burgers are about - they are about the intense beefiness of the crust that is created due to all the surface area created by smashing.
Don't get a $150 accessory just for smash burgers. I use an older version of this Lodge griddle with my Weber and it works perfectly placed over the grill grate with a chimney's worth of charcoal under it. It's $35 and can be used for many other things in addition to the smash burgers.
Just get a standard oklahoma joe offset smoker, you can easily do both. I've used mine 4 or 5 times per week for over 10 years now. ( you might find a better price, link just for reference )

Another new homeowner here. I just got the Napoleon Rogue 425 XT from Lowe’s and also ordered Cast Iron Reversible Griddle from Napoleon. Will be trying the griddle insert this weekend, but I’m pretty sure it will meet and exceed expectations.
Personally, if I had your budget, I’d get either a Weber Summit series or the Napoleon Prestige series, and either get an insert or a GrillGrate fitted for it. GrillGrates have a griddle version too. Just be wary that some gas grills suggest not to completely cover the grill top to ensure airflow for the gas to burn properly.
Once you get some meals under your belt, I’d then look into getting built in stuff.

This is my favourite combo. It works for smokes, searing and burgers. Probably no more than a 4 person cook top. Maybe 6. And I keep it in my garage since the brand isn’t known for surviving the elements very well. Oh, and it’ll do a turkey as well—kind of forget about that!
It’s nice because you can get nice flavour with a hopper of pellets and it’s very efficient and compact.
Also, I work on small gas motors sometimes and jet cleaning brushes are pretty cool to have around. They’re fairly cheap, and a bit delicate, but I’ve used them on the grill, also to clean mineral deposits from sink aerators, various things.
Yes! There is something great about smaller grills. They are very efficient, super easy to clean, easy to store, easy to pack etc. I have the funds to upgrade by I am having so much fun with my 14" I really don't plan on "upgrading" any time soon. Hey check out the SmokeyJokey, this is what I use, it could offer a bit more safety and efficiency with the heat. You'll need a lidded machine to keep those delicious burgers from flaring up too! Great minds drink alike!

They are placed on the grill, with the food on top of them. They keep grease and other liquids from dripping on the deflectors, but the heat still comes right through them, so you still get a decent sear. I use them when cooking greasy foods, They are also handy when cooking small things like shrimp so they don't fall through. They are non stick, easy to clean, and good to around 550 degrees.
