That's the exact setup I have, with the two laptops at the 90 degree angle. I bought this and it works perfectly. I have a seperate mouse and keyboard for each J so I don't use the touchpads or keyboards on the computers themselves.
Most VPN providers change IP addresses regularly now. I do this all the time, fly to parents home country and work from there without telling anyone. I use NordVPN which even gets by my ISPs vpn blocker for remote cable over browser. I get all my home country channels with no issues.
I tried a few other vpn providers and they were all being blocked. NordVPN seems to tbe one of the better ones out there and they have a lot of servers with specific geographic cities in target countries.

Yeah I’m just thinking there are other ways for them to spy that would be easier than listening to your audio. But you could always get a bug detector and then report back.
I use this usb switch (the remote sucks so I have it mounted under the front of my desk so I can hit the physical buttons).
I swap a primary KB + mouse + macro pad between the computers when I need to do focused work, otherwise I just reach a bit & type on the laptop.

Each headset jack on my laptops is using a Y Splitter to split audio and mic. THe audio's get fed into an Audio Mixer, which feeds into a set of speakers.
The speakers have a headphone jack so I can wear the headphones and listen to multiple meetings, otherwise I don't use the headphones and just use the speakers.
The microphones I've switched my setup. My PC wasn't recognizing the microphone right away when switching between computers, so doing multiple meetings at once wouldn't work well since there would always be a noticeable delay when switching to another J.
Currently planning to have each PC have their own microphone and then also have this MuteMe using Push To Talk so that I must physically press a button to talk and once I let go, I'm muted.

Get VPN router (if you have decent upload speed, note I said upload speed. 300mbps+ upload/download). Setup OpenVPN on the router. Get a travel router for when you’re overseas for all of your devices to connect to. Configure travel router to only connect with OpenVPN connection to home VPN router. Plug in the travel router to the overseas Ethernet port/local router or rebroadcast the wifi with the travel router (if no Ethernet port available. Never connect the work laptop/devices to anything but the travel router via travel router’s wifi.
Do not use any VPN services like ExpressVPN or NordVPN - all of these VPN services have public IPs that have been flagged by the most basic of enterprise IT systems.
Do not do this if you do not have the upload speed necessary, you’ll just lag.
Do not use any other protocol other than OpenVPN or Wireshark as overseas ISPs will likely drop your connection often.
Lastly, disable location services on work devices.
This is from my own experience and I basically no longer live in the US. I just travel and come back every now and then for less than 24h to renew my US passport travel visas.
As already suggested a mobile phone works great as long as you have signal.
To address the ethernet cable part, they do have portable routers you could use like this but it's not a good idea because once you get on J1's internet all bets are off. They might not notice but it's still opening yourself up to unnecessary risk.

Take a polaroid of yourself like a selfie. Then, using gum and paperclip(s), mount the photo facing the camera. Voila, they can see you.
If you are creative, you can create some sort of polaroid carousel - or buy this from Amazon and put a little motor on it to make it move on it's own every few minutes.

I use MS Teams & Zoom for my meetings.

Where's the mouse jigglers?! Nice set up! I just added some LED light strips to mine. (full nerd mode). I also got a switch that allows me to choose which computer shows on my screen. This gives one job primary. The other laptop is still on and in site, but it helps me focus.

It doesn't plug into my work computer or anything, you just set your mouse physically on it and the disk spins randomly to keep the cursor moving around. I plug it into a USB port on my personal computer to keep it powered, but you could just plug it into a wall USB or something if you only have work computers nearby.
I wouldn't reccomend the ones that you plug into your work computer because that might be detectable and a lot of tech companies are very paranoid about random USB devices being plugged into work devices.
You deserved to be caught. You were lazy and careless. Should have used the one that plugs into the wall. I believe the best way to OE is to start out hot and impress your new employers and build up credibility so that when the excuses come out, they have no reason to doubt you or your ability.

For the mic solution, I actually just linked this splitter in another comment. It creates the mic solution you want, but it does not accept USB mics (I use a Rode shotgun mic with a phantom power supply with the aforementioned splitter.)
The mixer doesn't handle mics, so you'd need to either use the onboard mics on your laptops or, if you have a single mic you wanna use, create a similar setup with a single mic and a splitter.

Mouse jigglers. These are the ones I use. This one has multiple modes - slow (hardly noticeable) and fast (very crazy and all over the place). I turn them on when I start my day - I keep them on slow mode so even when I’m sharing my screen in a meeting, you can hardly tell. I bought these because I can leave them plugged in day to day and just hit the button to turn it on/off. (If I don’t turn them off, then my screens never go to sleep and my teams says green all through the night).

You should be able to configure any router that aren't locked by a provider to use your favourite VPN provider.
ExpressVPN has served me well for many years in Europe and they have configuration guides for a lot of routers as well. You can also set this up on your phone and use that as a router when you're on the beach
I currently use the GL-MT300N-V2 / Mango - router with a Mullvad VPN account running on it. I connect my work laptop directly to the router either via wifi or ethernet. It always shows my location as in the US. If you go that route, make sure to update all drivers on the Mango.

You'd need 2, one for each monitor. You can then connect up to 3 inputs on each. Laptop1 would have 1 output to switch1 attached to mon1, and 1 output to switch2 attached to mon2. Same for laptop2. You have 1 remote for each monitor to control the input and you can use them any way you want - both M1 and M2 on laptop1, 1 each ... . It works petty good. For keyboard, Barrier - software solution, pretty good. Or smth like a Logitech multi device kboard+mouse combo for a hardware solution.

I had this 55" OLED before I started OE. I use my personal PC to ssh into J1/J3. I keep the laptops open for slack/email. and J2 I have to hit the remote control to change the input. Sometimes I can almost multitask with two SSH terminals side by side with tmux on each. Usually the blocker is just getting in the zone / figuring out what the code changes are.
It was really disappointing because I bought this HDMI splitter/capture device that claimed to do side-by-side display, but the video quality and latency lag was just pathetic.
Alternatively, there are keyboards and mice that can connect to multiple computers at once. Example: Logitech MK850 Keyboard/Mouse combo. Can connect to up to 3 computers at once.

They can definitely see you’ve installed a jiggler. I recommend one of these. Don’t plug it into your work computer and no one will be the wiser.
Sounds like a plan, Stan. I've seen mentions of a script to enable space bar control over the mic, not sure whether this might work with multiple VM parsing audio through it's host. Another option is a mic with an on/off tannoy style button.
