I was going to recommend a downloader like svtplay-dl, but it seems they haven't added support for NRK's latest changes, so that doesn't work...
You can of course always use a VPN to watch it straight off of NRK, I recommend NordVPN.
The third option is trying to find torrents of it with softcoded subs, if they're still active.

So the episodes are filmed two at a time over a few days, then the writer (Julie Andem) receives feedback and will change parts of the storyline to make it believable if the already written storyline could be changed based off the feedback. And within those two weeks (because one episode per week) changes are made to the story, rehearsals take place, and the the already filmed episodes are edited.
It it quite remarkable.

You can read it here 😊 I think you can read up till those pages without paying since it’s pretty early on the scripts. So it might be part of the preview pages. I think this text convo starts at like page 3 or 4. It’s in Danish though, so you might have to translate it yourself. I don’t know if the built-in translator of the site can be used for free. So you might have to google translate it. But if you don’t mind paying the extra bucks, you can read all the books in that site
The version I've been helping out with doesn't do .srt since it can't handle the messenger overlays, and I don't have the .ass files either.

As for the subtitles: I remember downloading them for another NRK show, Blank, with youtube-dl about two years ago. You’ll receive them as a .vtt file but they can be easily converted to .srt and read by any text editor.
As for the scripts: This goes beyond my knowledge but I know some people on a Discord server which will be able to help you with that. I’ll send you an invitation in about 12 hours.

If you have a VPN going, activate it to appear with a French IP, then use youtube-dl to download all episodes without quality loss directly from france.tv. Despite its name youtube-dl works for thousands of video and audio sites. If you dislike its command line usage, there’s a graphical user interface version available.
You can use a program like youtube-dl to download the french subtitle files for all the clips from the S3 playlist.

Now that’s strange because it should only check your geographical location once – before it starts. There also shouldn’t be any ways of your real IP leaking liek with WebRTC, that only works with browsers, not with youtube-dl. You could try testing with something like https://www.dnsleaktest.com/
Alternatively try downloading the episodes from the France TV slash channel on YouTube. They’re also georestricted but maybe YouTube is a little dumber than france.tv. ;) Here’s a playlist of the sixth season for example:

Dailymotion is posting clips. However, watching Dailymotion does not support Skam NL. downloading the vpn and watching it on YouTube does! I am actually downloading the vpn rn LOL. I'm using windscribe.com which is the one Skam NL recommends.
An American here. SurfEasy VPN has Norway connection points. BUT you have to pay for it. $2.99/month ($3.26 w/tax). At the time, I didn’t want to miss season 4 of SKAM so I got this. I still use it to watch Blank (oh but I don’t think that’s geo-blocked), Unge Lovende and of course re-watching SKAM clips. I have the NRK app. Like you, I like to read the closed captioning and reinforce the Norwegian I’ve learned.
Edit: P.S. Sometimes connecting the VPN to a different country also changes my Netflix library a little. So that’s also a plus. But (and maybe it’s just me) it doesn’t always work (the video sometimes won’t play).
Most free VPNs don't work, however I've found ExpressVPN works. On the iOS app you get a 7 day free trial and on a computer you can get 30 days refunded which would be more than enough time to watch or screen record with the subs on and you'll have them for eternity ;)
