I did 14 low% speedlunky runs in a row, so let's say ~90% winrate with two very hard restrictions, and the only reason I lost is because I didn't really want to continue anymore.
So... it seems fair to say that a very skilled player can win pretty much every single run (if you remove these very hard restrictions), except the occasional completely unavoidable death, but doesn't want to because it's not fun to just go for a win streak.
Binding of Isaac is getting a remake. It will look a lot better and will have tons of new content. All in all it will be a ton better in every aspect because it is not made in flash like the original. Here is the site if you want to check on the teases so far. Telling you this so maybe you'll give the new one a second chance, it's an awesome game IMO, comparable with Spelunky.
I've spent a ton of time working with Spelunky on Mac so I should be able to help you out.
First, you'll want to download the latest version of WineSkin Winery.
Then, press the button with a + sign on it. That'll prompt you to download an engine, I use WS9Wine1.7.14, it works for me.
Then, click on the button "Create New Blank Wrapper".
Name it windows steam or something like that, then click ok.
Some configuration will happen, then you'll get a message saying your wrapper is finished. You'll want to click "view wrapper in finder".
Double click on the new wrapper you've just created, it should open up a wineskin options application with the buttons "Install Software", "Screen Options", and "Advanced Settings".
Click on the button labeled "install software".
Now, you'll need to grab your steam setup executable. Find it here, grab the one labelled "windows". Once that's downloaded head back into wineskin, and hit "choose setup executable". Select the steamsetup.exe.
Go through the process of setting steam up. When it begins to download the steam update, shut it down.
You should be presented with a window asking you which executable to launch with. Select the link ending in "Steam.exe".
Now you should be good to go! Close down any remaining wineskin windows you have open, then re-open your steam wrapper. It should download the steam update and prompt you to login. Login, then navigate and download spelunky. Once it's downloaded you should be able to launch and play natively from the windows version of Steam.

You could try using x360ce. I think the 32-bit version should be correct for spelunky.
I was able to get my previous controller which was not being detected by various games working with it.
Oh right. No. I copy and pasted the strings into overrides and used notepad ++ on the copied strings and edited them that way. I’ll give you the link.

Go to System Preferences and set it so that you can open applications from anywhere, and that should do it. Your Mac is most likely entirely capable of running the program, and OSX is just being a bitch.
Alternatively, you can use Winebottler to run the original Windows version. This might be a better solution, because once you've installed it and learned how to use it, you can run any Windows program easily.
If you have an Nvidia card, Shadowplay / "Instant replay" isn't too hard to set up. I have mine set up to capture the last 2 minutes of gameplay, then I can hit Alt-F10 to save it out to a file if something silly happened.
If I feel like sharing it, I also edit it in avidemux which is a super simple piece of software to easily cut things and export.

If the Xbox controllers are bad but other controllers are OK you can just use any controller you like and use Xbox 360 controller emulator, like x360ce. http://www.x360ce.com/ There remapping the keys is quite easy.
For the keyboard users just go to Help&Options -> Controls.
Have you tried using OBS? It's a really good recording software, that doesn't lag the game, and produce pretty small files, if configured correctly. Give it a try, maybe you'll like it!

I don't think I had that specific problem but I had the same general feeling. The main problem I had was running off ledges I was trying to hang from.
