The latest system update enables you to uninstall Zello. As for the customization, only the right button has customization options on the settings. You can install a button mapper as mentioned by u/3SidedDie. I am apparently using this.
Additionally, there are two update streams you need to check. One is from Umidigi, and one is from Google. The former can be accessed via About Phone > System Update, and the other one can be accessed via System > Advanced > System Update. You can check the interfaces here.
I found a version that works, with very limited features. It crashes everytime I try to access video or night sight so it's pretty much useless, for me. I use Proshot instead, although it doesn't support the UW Sensor.
UmiDigi make GLOBAL versions of their phones meaning all channels of all countries are covered. What the guy is talking about is actually how clueless he is about Amazon and nothing to do with UmiDigi.
Unless the seller is Amazon, chances are the person listing the listing on Amazon only has those models or limited shipping options available to them. Has nothing to do with UmiDigi.
Incidentally I recently purchased my new UmiDigi Bison GT2 Pro 5G from Amazon Canadian site then I turned around and bought the UmiDigi Bison X10G as a birthday gift for a friend. Previously I owned the UmiDigi Bison 2021 and 2019 models as well as the A9Pro. My previous 2019 version, the friend whose birthday it was got my old 2019 phone because he loved how durable the Bison line is.

I think those are bugs. Umidigi is probably not going to fix them so your best hope is installing apps.
There is a button mapper app that you can use to remap the power button double press, however it will take a bit of time to set up as you need to use a PC. Also when I used it (on my S10+) the volume buttons would stop working when the screen is off, but I don't know how it'll work on umidigi phones.
I don't know why your using Firefox for YouTube but if it's only for the background play feature than you can consider switching to YouTube vanced, it's a modded YouTube app that allows you to play videos with the screen off.
Enable developer options and select the show touches option. Use the phone for a bit to get an idea of where the software thinks these unintentional touches are happening.
It's likely that there are only a few small areas where these so called "ghost touches" occur.

It's not a perfect solution but as good as you can do without taking the phone apart to change our the digitizer.
This doesn't answer your question, but if you're worried about how waterproof it is I've used my Bison GT underwater in pools and such for extended periods taking pictures and video without issue.
I don't know if any Bison specific cases that would be waterproof, but if you're looking for something for just occasional use I've used these pouches with good success(hopefully this link works) :

I use an app, Screen Recorder on my A9 Pro and it records sounds on the right settings... Just set "Sound source" to "Internal Sound"... It's completely free to use and has non-intrusive ads...
I have the same problem on my umidigi one max. Does the headphone icon show up in the notif area?? I think your headphone jack has become faulty due too much dust build up or they made some shite ones. Ever since I had that problem I switched to wireless headphones. There's a fix.

What you can do is download that app with the link above and select the headphone option which will force the audio output through the headphone. Make sure the headphone is connected beforehand or else you won't hear anything. After you unplug the headphone and select the speaker option which will force output through speakers. But everytime you turn on the phone you have to select the speaker option. This app can do that automatically but that feature is behind a pay wall. Same case with the wireless headphones/speakers.
Someone else made a similar post, and it seems to fix the problem.
Download WebView Beta when installed open the app and hit change web view provider and select the beta. Close youtube and reopen,should work better.

Update: I've continued to try to troubleshoot this to no avail.
I've further checked that all the APN settings match T-Mobile's BYOD specs.
I've also tried 3rd party hotspot apps, such as PdaNet+.
.. basically I've tried every tweak/suggestion I've come across to no avail.
To further aggravate the issue, I also can't get Internet sharing via Bluetooth option to work. (Device connects, but again no data.)
I've posted my issue on the UMIDIGI forums, maybe someone there will notice.
It's definitely related to the Umidigi F2 somehow, because I can get hotspot easily when I put my sim card back into the iPhone...
Some posts I've come across, suggest rooting the device might help(?) ... I don't want to void the warranty, and sadly, if I can't get this working, I will probably be returning this phone for a refund.
