I've been playing Egg, Inc. lately, and it's quite fun. I also got back into Clicker Heroes recently with its 1.0 update. I have Time Clickers installed on steam still, but I haven't played in a pretty long time, but I still suggest it.
Egg Inc. It's actually genuinely funny at time and the group events are what I like the most. I've never really enjoyed and idle game other than this one

Trying to get my way through egg inc and feel like I'm at a wall. Getting past tachyon eggs seem impossible and I have 85k soul eggs so not really sure how to speed it up. Gonna try and check the wiki or something I guess and see what I'm doing wrong.

Having a progress bar wrap around a button is harder to understand than a straight line
In the old design, you used font-size to show importance, the new design doesn't do this as well.
Having the stat the button affects at the top is confusing, having the price at the bottom is also confusing.
The new design has a lot more visual clutter.
The margins on a lot of stuff is way to big, especially the popup window itself. it looks like up to 50% of the vertical space is not being used.
The circle for the ball color is too big, it shouldn't be touching the borders of its container. If you swapped margin for padding on the containers it would look better.
Having the button cost in it's own box adds to clutter, and doesn't really outweigh the other numbers being closer tot he top of the button & about the same font-size.
The coin icon is better as a prefix instead of a postfix, using '$' or another symbol might be better, the color of the coin clashes with the rest of the UI
Removing the rank label didn't help anything, even with a minimal/zen theme labels can often be worthwhile.
Here is a screenshot from the idle game Egg Inc (/r/egginc). IMO one of the best UIs I've seen for mobile idles.
They display a lot of the information that you are trying to, in a really easy to read way; and even fit flavor text.

For a clicker like game, Egg, Inc. has been pretty fun for me. There are times where it's actually advantageous for the app to be closed for faster farm growth. You just check in every two hours or so to "refill the silos" that let the game progress while it's closed. You make less money that way, but it depends on what your current goal is.

I don't see anyone recommending an idle game, try Egg? Pretty sure it works without internet and when the game is closed, and it's one of the better idle games on the play store

One of the best I've ever played on iOS or Android is Egg Inc.
The monetization has gotten worse over the years for sure but it's damn satisfying to prestige your farm and make 2 days progress in 15 minutes. IMO if you get the farm contract upgrade (for offline gains increases) as a one time purchase, you can play this one for years.
Egg Inc (https://play.google.com/store/apps/details?id=com.auxbrain.egginc ) seems to be one of the most popular on the Play Store (as of right now, it is I think the only game in the "Top Free Games" list that I'm certain is an incremental, and has ~1.1 million reviews).
In general, I suspect that mobile based games like Adventure Capitalist, Egg Inc, and their friends have a larger playerbase than most browser-based incrementals.

It looks really simple, like you said and actually reminds me of another game - Adventure Capitalist / Adventure Communist by Screenzilla, where you start by selling lemons or potatoes, making an astronomical fortune in the end, with a never ending supply of money.
They are idle games (Egg Inc / Adventure Capitalist/Communist), so you don't need to keep them running to get resources, they just work off the phone's date and time. I used to cheat by messing with the date and time settings to get huge amounts of resources, but that's only because I'm a hoodlum, who should not be trusted, and you should play the game like a normal upstanding citizen.

I'd recommend Egg, Inc. It's really nice that you can choose if you want to tap or just hold your finger and like in CH it's really easy to farm premium currency. Also, Candy Box 2.
Egg Inc is my current favorite. Pretty chill, lots of fun, plus I like watching the chickens run.
Has multiple prestige options (called Town Tier, takes a while to get there tho), also the game is very fun to play. My favourite game by far

I know this game also has a prestige behind a prestige, but I never got that far so I don't know how it exactly works.

Started about a week ago with Farm RPG6AF17D I'll send you some gifts :)
Also still playing Egg Inc for about 1,5 month. Before I installed it thought what can be fun just tapping a button but of course that's just a part of the game :).
Started recently with ExoMiner and played it for a bit but somehow it's a bit too boring for me. This is more an idle than active game. A lot of waiting involved. I expected to really like the game but meh.
Oh and I played some Kiwi Clicker and Industry Idle as well :)
Idle Pins (Steam): Still playing. After the Valentines event I'v skipped a part of normal progression so it feels like I've been idling with my T10 leaf forever, while doing nothing much. I believe my next goal is unlocking that tower.
Egg Inc (Android): Last week I was told to join the Discord. Haven't done that yet but I will, just waiting for the right time. Besides that, mostly daily logins.
Idle Dice (Android, PC): I built a few more casinos so I'm now progressing faster. I still don't dedicate too much time of the day to it so as not to burn from the grind, because it's grindy for sure.
Idle Slayer (Android): I've been hearing more about this game, and how the later progression is terrible through idling, although there has been a patch to fix this. Personally, I'm still just working on idling through the ascension tree.
Idling to Rule the Gods (Android, Steam): I discovered this had a mobile release so I'm trying it there. Don't really know what to say about it. I'm certainly progressing (it's hard not to with these kind of games) although goals are more obscure than in other similar games (NGU, WAMI). Of course the fact that I'm not using a guide isn't helping, but I want to try to playing it like this.
Anti Idle: I lost my savefile. Since this was running locally on a flash player and not on a browser I did not expect to lose local save data so I never backed it up, but it happened. It wasn't too much progress, but it's not something I want to repeat right now, since the early parts of the game need a lot of active effort. Anyway, this made me consider coming back to (or restarting) NGU, which I always thought of as a mix of ItRtG and Anti Idle, but I know that's a big time investment so I'm not sure I want to do that right now.
I rarely ever write here but I've played a bunch of different games recently so I thought I might as well share.
Endless Stairwell (PC Browser): Beat the game in an afternoon. Can get a bit grindy but I must say I had a lot of fun, it's been a while since I last played a "simple" broswer game that got me this addicted.
Pacifish (Steam): I've played the Kong version before and heard this one had some new stuff. I played a bunch, but at some point it started being extremely idle and extremely slow so I ended up dropping it. It's not uninstalled yet, but I'll see if I come back or not. A shame, because I really enjoyed the Kong version.
Idle Pins (Steam): Started playing recently, it's less complicated/chaotic than it seems from screenshots, although it's also unexpectedly slow, which is not necessarily bad, but I'm not 100% sure on how offline progression works (I know part of it is unlockable or upgradable). I'd say I'm enjoying it, and certainly looking forward to progressing the account.
Egg Inc(Android): A coworker made me download this one. I had played it before, although didn't get too far last time. Now I've reached much further into the game, up to Prodigy Egg and a bunch of Epic Researchers. I'm still playing but wondering what my next tangible goal is supposed to be, while wondering if I even want to keep going or not.
Idle Dice(Android, PC Browser): I remember saying that it was a terrible idea when the mobile version was announced because I would eventually download it and spend a lot of hours of my life playing it. Well, it has finally happened. Thankfully after my first casino I kinda slowed my speed to a crawl, with daily login rewards and sometimes a card or two for the new deck, so I'm still at only one casino, but hey I'm advancing!
Idle Slayer(Android): I have actually been playing this one for a long while, "grinding" some soul points with only a few daily logins. It's been an interesting surprise for sure, although the game seems to have a rare mix of idle and active that doesnt fully convince me.
Anti-Idle (Flash): I finally decided to return to the game after Flash died and decided to start from zero all over again. I've obviously had a lot of fun the days I've decided to play it, which is not every day because it sure loves to drain all of my free time. I must say I miss having the Kong chat right besides it, although the Discord is a very nice place.
Finally, I have Leaf Blower Revolution installed (on my phone, I think I have enough idle games on pc for now, although idk which version is better) for whenever I drop one of these games!
So yeah, busy week.
Scratches the itch that comes from finishing prestige tree (again). Seems a bit slower and a bit more idle - TPT is very active - but still fun. First time I've played one of the mods, hopefully this is fairly active.
Unquestionably the best designed idle game I have ever played, UI-wise. This has set a new high bar! The gameplay is fun, but the prestige mechanic is a bit too grindy for my liking. You don't really get too much of a bonus each time around, as you need to spend prestige points on extending the end-game (higher tier machines to pump out more resources). This is the 4th time round the early game and it's basically just as slow as the 1st time round, I've not checked in for a few days so I think it might be over for now.
Again, getting towards the end of the playlife for me now - problem with Egg Inc is that you need to spend boosts to make meaningful progress late game, and for boosts you need premium currency. Fun to begin but does get a bit greedy towards the end.

Is it Egg Inc?
I've gone through a few dozen of these incremental clickers or cow-clickers, depending on how much you like them. So answers here come from just my personal preferences.

I would probably try it. Almost any theme can be made interesting with the proper set of ideas and systems. And there doesn't need to be many systems to make the game work.
Chicken farming in Egg, Inc had cellshaded graphics style and a system where you held a button down to have your chickens run across the farmyard to their coops from the hatchery. Besides the upgrade and restart with multipliers system, that was literally it.
Tapp Games had a game about farming Cows in Cow Evolution, and the gameplay elements there were to click cow turds for currency, and combining two cows together to get a bigger cow that generated currency faster. I didn't bother with the upgrade system because it was Pay2Win with almost no free upgrades. So click on cowpats and cows, the two systems available.
Idle Miner Tycoon is a game that is polished graphically and is themed around building mines for various minerals. Gameplay consists of balancing out three different things: Speed of the miners, the speed of the mine elevator, and the loading/unloading speed of the workers on the surface.
From your description I imagine your basic 'hook' would be to let the player plant trees according to their schedule of when they have time to check in on the game: Trees that grow in 2 hours, 4 or 8, or something along these lines? This alone doesn't sound like it would be enough of a incentive to keep coming back. Once you've planted the biggest tree there is, you've essentially gone through everything the game has to offer.

Have the trees value be time-based: Sapplings, if harvested, are worth almost nothing. Then it hits a level of maturity where the value starts going up fast, and plateau (or significantly slow down) after certain height. If not harvested fast enough (the game is forgotten for a while) some trees could start to lose value. Others might be the type that just keep growing and increasing in value. So there's an optimal time to harvest everything, but you can do it sooner (and possibly later) than that, when the value is less.
Other features in trees: Fruit trees that can be kept around for harvest a few times before they're put down as lumber. Something like bamboo that could be cut down to small twigs and replanted really fast to have a ton of it in minutes (don't know what the timescale of your game is) but they're less valuable in general - this would be suitable for a more intensive session of active gameplay, farming a lot of bamboo for a while, then mowing it down and planting slower trees again.
An upgrade system. Better tools that create less waste and more lumber. Maybe completely different tools that have different priorities: Some create less saw dust, others are made to create wood chip (apple tree filings for smoking). Some create planks, some logs.
A restart system. It's quite common in all of these games, and it's hard to do right. Some games just give you a flat % bonus on profits with nothing else to gain from it(Bit City, aforementioned Egg, inc) and that's as boring as it gets. Others use this rebooting as a new form of currency you can use to buy something more interesting. My current addiction is Endless Frontier, which at first gives you a bit of boost on monetary gains, but after a while the restarting system becomes the main source of progression in the game. You level up your units with this currency, which in turn enables you to go further, faster. AdVenture Capitalist uses has the reboot system as both: If just stacked, you get a % boost to income. If used, you can pump your numbers for that run up, but the generic % boost goes down, as the number of angels(the currency you gain from restarting) is spent.
Ways to expand or customize. So we're acquiring lumber. Then what? I assume it's sold so what can we use the money on? Upgrades is the obvious system, but what about expanding the tree farm? Start out with a tiny plot of land you can grow two dozen of medium sized trees and expand to a plot with hundreds. This could be done by just expanding the initial growing grounds, or by buying a new plot from a new place, with graphical changes as well. Maybe every plot has their own climate and so different trees and growth statistics. Some trees like it hot and humid, others cold and dry.
