Well I can't believe this but I bought a game at Goodwill about 2 weeks ago. I'd never heard of it but I like to collect old pc games so I picked it up. I noticed it's from 2002 so I just installed it on my old XP machine. I think this might be the one you're looking for.

I've done some sleuthing, and you were close! My recollection of the gameplay was a little off, but the entire bit about a guy getting cut up by a Dancing Blade spell revealing a skeletal lich is straight from the Might and Magic IV: Clouds of Xeen. This is doubly funny because I had purchased the Might & Magic collection second hand back in the early 2000's but never went through all of them, and I was convinced the game I saw my friend at the time playing some 10 years earlier was different.
If anyone is curious, I got the manual from Abandonia. My next step is to buy the collection from GOG and figure out how to go back and play some games that make Dark Souls seem forgiving by comparison :)

Ahriman's Prophecy by Aveyond Studios (formerly Amaranth Games)?
You start your journey in the small town of Elden. There is an early sidequest where you retrieve a bow for one of the village girls. The combat was not turn-based, but real-time. It has blue speech bubbles. The starting village has a well with some chickens near it. One of the first main-story quests has you going to a blacksmith which is on the other side of the river in the small town (the path you described matches, and there's actually a screenshot on the product page that shows part of this path).
The first major town, Devinshire (not sure on spelling, been a bit since I played), has stone walls and kids near the entrance playing tag. One of the other characters that joins you along the way, Frederick Le Mew, is an animal shape-shifter, who can change into multiple forms, including a chicken. There is a wolf-man in the game (actually two but one of them is very, very much later on in the game) near the entrance to the village where you meet Frederick.
The studio that made this game recently moved all of their forums to Discord so I'm not able to get any other screenshots for you, but if you're interested in checking to make sure it's the right game, the game is free to download and play, and you should know if it's the right one after a few minutes of gameplay, judging by your descriptions here.
It's available on GOG.com, along with its sequel, Ties That Bind, for a few bucks. Look into stability patches, too. I've played it and absolutely love it on the PC, even though I played the PS2 version originally.

You're looking for the game 7 Days to Die. It's open world survival zombie game with a similar crafting system to minecraft in an apocalyptic world. Unfortunately it's still in development, but if you don't mind a few bugs, it's good.

I'm not sure whether it's still any good at this point, but Fractured Space was nice when I played it a couple years ago. It's more of a space MOBA than an MMO, though. For more conventional MMO experiences, I can't think of anything beyond the already-mentioned EVE Online and Elite Dangerous.

Woah, I hadn't thought about this game since it first came out! This sounds like Marvel Super Heroes: Amazing Math (sorry for terrible screenshots - but it seems to be so rare I can't find much else!). I remember playing the Wolverine in the Danger Room segment over and over :)

The first version was on the Apple ][. Nice design. You could shoot the parachutes only and have them drop down on already landed guys below and you could use the debris falling from a shot helicopter to take out guys.

This is going to get a little weird, but I couldn't sleep last night and what started as a casual search for the game out of bored curiosity, turned into a 3am trip down the rabbit hole.
Here's the most useful link that I could find. There isn't a single game in either the complete US or the JP listing that matches your description. City of Lost Children is sort of similar in that you play as a kid.
Even browsing full list of all the PAL demo discs that featured any Crash 2 content returned nothing.
I even did similar searches for Saturn, Dreamcast, PS2 (you also play as kids in Fatal Frame: Crimson Butterfly), and N64 titles from every region.
Do you remember anything else? Like where you got the demo disc (a publication, with another game, cereal box, etc)? What country were you living in at the time? Could the Crash 2 demo have actually been for another title in the series? Was there any gameplay footage of the game in question or was it just CG cutscenes? If there was gameplay, was it 1st person, 3rd person, sidescrolling, or possibly a graphic novel style interface? Finally, are you sure it was actually the version of "House of the Rising Sun" done by the Animals? It's a popular public domain song that's been covered a ton of times.
If I had to bet, you watched a trailer for a game that was never released. Or you're just confusing some details with something else.
Anyway, I told you that was going to get weird. Now I'm really curious to know the answer. It just better not be Resident Evil :)

I sadly don't actually have an answer for you, but I wanted to mention Flashpoint, which is a project trying to preserve as many Flash games and animations as possible before they're no longer viewable.
There are probably too many games in it to just browse the listings and find what you're looking for, but IMO it's worth keeping in mind for anyone who grew up in that era and wants to re-experience these things from time to time.
Don't know the game, but I can give you some (hopefully helpful) pointers... the game engine seems to be an old version of AGS (Adventure Game Studio), that is used in many indie/amateur games.
They try to categorize games made with AGS on their site, and there's a search engine, maybe you could try to look for horror games there?
AGS game called Apprentice fits the bill. Oregano is one of the three ingredients he needs to find. There's plenty of green in the environment.

I know in Darkened Skye the main character's abilities were based on different colors of skittles. Other guess off hand is Lost Kingdoms but those are more fantasy than sci-fi. Only real Sci-fi games here are Phantasy Star Universe and a couple others that don't sound right to me. Gamecube isn't my strongest system though so I could be wrong.
