Settings are still there. Go to apps, tap the three lines at the top right, and then disable google at the toggle.
Do be aware that disabling the service does not stop it. After disabling you need to either reboot the device, or use an app like Hidden Settings to access the apps list and force stop Google Play Store and Google Play Services.
I don't know about changing the firmware, but the biggest thing that I've found saves battery life is disabling Google Play in the settings. I just enable it when I want to update apps and then disable it again.
Also try using an app like hidden settings to enable developer options and limit background tasks.
Other than that, the usual turn off wifi/bluetooth and/or turn down the lights.

ETA: the reason I ask is, the instructions for toggling mobile radio power differ based on the model number. That being said, path of least resistance is downloading this app, opening RadioInfo, and toggling "Mobile Radio Power" to on.
Have the same issue on a Reno 5G which is also exclusively 3500MHz (78). It's not the telecom in my case either.
Try accessing the RadioInfo panel at ##4636## or though an app like this one and see if NR is an option under preferred network there.
My next thing to try will be to visit the 5G-enabled tower again and see if that connection makes the option become available on the phone.
The "SIM not from Verizon" notification is just a nag notification and doesn't actually affect anything. Your phone is definitely unlocked, as Verizon was required to sell all 4G LTE phones unlocked at the time of purchase, even if you were still in contract (which you obviously aren't).
Normally the APN settings are the key, though you said you've already tried that. Just to confirm, are you able to actually edit the APN settings or is that ability blocked? Looking at XDA, it appears that the Android 4.4.3 update removed the ability to manually edit APNs on Verizon-unlocked LG G6 and HTC M7/M8 devices, though I'm assuming a lot has changed between 4.4.3 and your current 8.0.0. The only useful fix I could find was this one, may or may not help because again it's from 2015:

The only thing I have any personal experience with, that may or may not help, is with trying to use a Verizon-unlocked prepaid Moto E4 on T-Mobile. It took some combination of that hidden menu setting, the standard "Preferred Network Type" menu setting to toggle 2G/3G/LTE, and toggling Airplane Mode while switching between the main settings and hidden settings, to finally get it to connect.
Check APN (Access Point Names) settings. Some devices, especially mobile phones that are made for a different country, may not have the APN settings preinstalled.
Another thing is about your device's signal. If it is out of coverage area (it says "No service" or "Emergency calls only"), then data connection will definitely not work.
You can try dialing *#*#4636#*#* then selecting "Phone information" (or downloading and launching this app, selecting "TestingSettings" from the list, then "Phone information") to see if there are any information about the reason for or circumstances of data connection failure.
